I’m laughing at how crazy simple my meals are this week. I didn’t go overboard on my trip with rich food but my body is craving lots of veggies and fruits and lean protein. 🐟 🥦🍇🍌🍊🥑🍅🥒🍠 Plus, food is your first defense against getting sick so if you feel like you can’t kick a bug then take a look at your diet - chances are you can clean it up even a little and add a few more glasses of water a day to help your body stay hydrated and nourished! 💧
On my plate: spaghetti squash roasted during meal prep and reheated with EBTBS (@traderjoes
) and vegan butter (@miyokos_kitchen
). I also steamed multicolored carrots and cooked up tuna burgers and prechopped my peppers so I couldn’t skip them like I normally do! I also added cherry tomatoes that needed to be eaten. #teamnofoodwaste

Grilling in the fall, thankful for weather that’s warm enough for it! Roasted butternut squash - coconut palm sugar & cinnamon, just like grandma’s, sort of! lol The cauliflower rice is blended with steam kale, easy!
WHY EAT FOODS WITH A PURPLE HUE?

Vegetables and fruits with a purple colour contain an antioxidant called anthocyanin.
These powerful anthocyanins May play a role in reducing the risk of cardiovascular disease, cognitive decline and cancer. These anthocyanin compounds are found in berries (eg, black currants, elderberries, blueberries, strawberries) and their juices, and in red and purple grapes, red wine, sweet cherries, eggplants, black plums, blood oranges, red cabbage and purple cauliflower ( by the way, isn’t it pretty !!!!????). There is still research required to discover more about anthocyanins. What's in the smoothie?
Spirulina, Baby Spinach, 2 small chunks frozen Pineapple, Virgin Coconut oil, vitamin c, and a pinch of Himalayan Salt.
Stirred up a new soup recipe: Simmered to perfection Chicken ball Coconut Soup infused with green chilies, ginger, garlic, cilantro and mushrooms. And also made low-fat chicken meatballs in a jiffy. Making soup doesn’t have to be an all day task. With a few steps and (only one pot)IP, you can have a delicious, hearty soup to enjoy with your family.
Chicken ball coconut soup Recipe
Ingredients for chicken balls
1 lb ground chicken ( low fat)
Grind all of the below ingredients
1 inch ginger
4/5 cloves garlic
4/5 green chillies
Salt to taste
2/3 tbsp of chopped cilantro
Mix ground chicken and the green paste, shape into small balls and set aside.
Ingredients for the soup
1 can TJ Organic coconut milk
7/8 mushrooms sliced
1 red onion sliced
2/3 green chilies slit
2/3 slices ginger
4/5 cloves garlic chopped
1 tbsp olive oil
1/2 cup Cilantro
Salt to taste
1/2 lime juice
1/2 whit pepper powder
Set the IP on sauté mode, heat the oil, add garlic, ginger, chilies and half the cilantro, then add onions sauté till translucent stir in the mushrooms sauté the mixture for 2/3 minutes add 3 cups of hot water. Once the water starts boiling add salt and the shaped chicken balls cover the pot and cancel the sauté mode and pressure cook for 2 minutes. QR in 5 minutes add the coconut milk can and let the soup come to a simmer on sauté mode for 5 minutes adjust the salt and spice level by adding some white pepper powder if needed. Garnish with cilantro.
