Happy happy FRIDAY friends! Woke up this morning and worked out before class, which is the first time I’ve done that this year- AND it just so happened that my roommate @juliannemadeline

were working out too! 🤩 Whipped up a classic post-workout, pre-gym brekky (is anyone surprised w this one 😅) of an @udisglutenfree

Marissa recently joined the Karuna Team as our Office Assistant, managing all scheduling for new and existing clients. Her organizational skills are of no surprise given her background working as a digital marketing professional for some big name food and beverage brands like Green Giant, Yoplait and Keurig. Following her passion for nutrition, she left the corporate world and is now completing the Coordinated Program in Dietetics at Framingham State University and earning her Master's of Science in Nutrition Science and Informatics. Yup, she’s one busy woman!
Here are some fun facts about Marissa:
👶🏻 Born and raised in Queens, NY but she has lived in Massachusetts for 11+ years -- "At this point, I feel like a true New Englander."
🍜 Favorite food is Pad Thai and anything with tons of tomato sauce. •
🐱 Has two 1.5 year-old orange tabby cats adopted last summer as kittens and that are absolutely adored
🎥 Favorite movies are anything with Will Ferrell, and Breakfast at Tiffany's. My absolute favorite TV shows are The Office and Parks and Recreation
🥘 Favorite cuisine is North African after I visited Morocco three years ago
⛰ Most exciting travel adventure was hiking a glacier in Iceland
🥕 When not in class or helping with the amazing Karuna team, she is working on her backyard vegetable and flower garden. Her dream is to start a "giving garden" to grow vegetables to donate

**BAKED SPAGHETTI & MEATBALLS**
____No Regretti - Eat the Spaghetti!! This absolutely delicious dinner can be premade the night before, which is always one of my fav things to do - so I’m not running around after work trying to put everything together. I used corn and rice pasta but feel free to use whatever kind of pasta you desire. I’ve found I don’t get bloated from using gluten free pastas, especially those with minimal ingredients like this one. Comment below your thoughts ⬇️
INGREDIENTS: 1lb ground turkey, 1 egg, 1/4 C breadcrumbs of choice, 1 tbsp Italian seasoning, 1lb pasta of choice, 1 tbsp avocado oil, 1 C sauce of choice, 1/4 C fresh mozzarella
1️⃣Preheat the oven to 450 degrees and line a baking sheet with parchment paper
2️⃣Mix together the ground turkey, breadcrumbs, egg and Italian seasoning. Make little 1 inch balls, place on the baking sheet and cook for 15-17 minutes.
3️⃣Meanwhile, cook your pasta, drain and throw into a bowl with oil - this helps the pasta not stick together
4️⃣Add your sauce and cheese.
5️⃣Once the meatballs are done, toss them in too
6️⃣Pour the entire bowl into an oven safe pan and bake for 20 minutes (still at 450 degrees). Sprinkle some parmesan or parsley flakes on top and enjoy

I’m so ready to get this weekend started! Heading to Michigan with some of my best friends to celebrate my oldest friend. It’s going to be so fun! I love bachelorette parties. What could be more fun than getting together with a bunch of friends to celebrate another friend over lots of drinks and phallic-shaped things?
A bender bachelorette weekend used to be side effect-free for me, but given my old age, I have a feeling next week is going to be rough. Oh well...worth it 🤷🏽♀️ I’ll just make sure to fill myself with all of the good stuff, like this bowl of @traderjoes
cauliflower gnocchi. I tested out a new method this time, cooking the gnocchi for 5 min with nothing in the pan, then tossing with olive oil and cooking for 5 more min. It was perfect! Anyways, hope you have a great weekend!

If you live in South Australia, you’ve probably got strawberries on the mind right now!
And with everyone supporting the farmers and buying up strawberries 🍓 here’s a quick idea for what to do with the excess!
Step 1 - process strawberries in a food processor
Step 2 - press through a sieve to get rid of the seeds
Step 3 - sweeten slightly with a bit of honey or maple syrup
Step 4 - enjoy stirred through some yoghurt or on top of ice cream!

Doesn't get much easier then this! I have to admit that I'm a sucker for Sweet potato. Great source of Carbohydrates, super versatile, quick cooking, so can have it on your plate not long after training-and will help to replenish those depleted glycogen stores.
This Sweet Potato purée is the 💣!!!
Roast some Sweet Potato with a little oil, loads of garlic, thyme and rosemary until it starts to soften. Throw it in a blender with some seasoning and a splash of Soy milk and blitz. It is super creamy, can be used with a roast dinner, vegetable side with other mains, in a sandwich, with some salad, the list is endless.
Definitely one to try guys, it will be part of your life from this day forth 😉👍🏻
