Eating healthy doesn’t have to be complicated. As a matter of fact, the simpler the better works best for me 👍🏻 My go to meal is anything tacos 🌮 Usually it’s a salad 🥗 because I can get those veggies in too! Along with some sort of carb. Typically it’s a whole wheat wrap but on this program, I’m limited for a bit so sweet potato it is! Just a little peep at our grocery cart ✨ Usually we try to avoid plastic as much as possible- but sometimes it’s hard!! For instance, usually carrots can be purchased in bulk unpackaged. But not this week! The only bunch of carrots was packaged. For most of our bulk items (seeds, protein powder, dried herbs, etc) we purchase online through @thrivemkt because it’s sooo much more affordable! 🌱 . Also, with our recent move (we finally move into our place tomorrow-eeep!!) I’m really looking forward to finding my new favorite grocery store. Pretty sure it’s gonna be @wholefoods & the cutest little urban market we found within walking distance of our place. Pretty sure I cried when we discovered it. Salted Caramel Banana Breakfast Pizza 😍. Looking for an easy, decadent breakfast? Look no further! This delish recipe will get you through your Monday morning😉. Ingredients: for 2 mini breakfast pizzas 2 mini whole wheat nann rounds 1 container salted caramel smooth cottage cheese (I LOVE @gayleafoodscoop smooth cottage cheese, all of the flavours are delish and so high in protein!) 1/2 banana, sliced 2 tbsp shredded coconut 2 tbsp chocolate chips 2 tbsp pecans 2 tbsp melted peanut butter 1 tbsp hemp hearts Directions: 1. Toast mini nann rounds in toaster. Spread some salted caramel smooth cottage cheese on nann rounds. 2. Top with sliced banana, coconut, chocolate chips, pecans and hemp hearts. Drizzle with peanut butter and enjoy!

Peach, haloumi, prosciutto bites. This is probably my favorite snack (next to pickles) in the summer. It's the perfect blend of sweet, salty, creamy and crispy. They are great over an arugula salad or eaten as an appetizer. . 🍽 INGREDIENTS Peaches (peeled & sliced) Prosciutto Haloumi cheese Balsamic glaze 🍽 DIRECTIONS Slice and brown haloumi cheese (can sub queso fresco). Peel and slice peach. Slice prosciutto lengthwise to make 2 strips per slice. Wrap prosciutto around peach slice and haloumi. Place on parchment paper and bake at 350° for 5-10 minutes until prosciutto is crispy. I forgot to give my product review on the @traderjoes Spicy Thai Shrimp Fried Rice and Kung Pao Tempura Cauliflower... sooooo HERE IT IS!🤗 . . 🌟MY FAV = the tempura cauliflower 😍 It was crunchy, spicy, affordable, & easy to make... I rate it a 9/10 🎉. The only reason I docked it a point was because it doesn’t keep well as leftovers. ☹️The sauce turns the crunchy texture into mush over night. . 👎🏼DISAPPOINTED BY = the shrimp fried rice. 🤭I thought it had a funky taste and the shrimp was mediocre. Time for a cart highlight 🎉 COCONUT AMINOS. Lots of you ask what they are, why they’re in my cart, and what the heck I do with them; this is your post. Coconut aminos, are a sauce derived from coconut sap and have a light touch of sweet mixes salty. The taste resembles soy sauce, yet it tends to have ~ 500-600 mg less sodium per serving (this adds up quickly, especially since a serving is 1 TBSP, which no one ever uses) compared to most soy sauces. I probably wouldn’t have tried it if it wasn’t for having a soy intolerance (i was craving Asian inspired recipes using soy sauce and was in search for an alternative), but i recommend it to everyone because it rocks. ————————————————————- It’s a 1:1 sub for soy sauce, and it’s even 🚒 approved. Lately I’ve been loving making a peanut or almond butter sauce to use in stir fry or as a dipping sauce: almond or peanut butter (2 tbsp), coconut aminos (1/3 cup), garlic clove, ginger, salt, pepper, cayenne, and a touch of honey (1 tsp) if desired, made on stovetop. Tinkered with my own vegan parm recipe with ideas from @melissa_hanson and @medicalmedium : 1/4 c walnuts 1/4 c hemp seed hearts 6 tbsp nutritional yeast 1 tsp garlic powder 1 tsp salt Pulse in food processor. So I tried this great new recipe last night and had to share it with everyone - Roasted Garlic Cauliflower Hummus! It’s a super clean low carb recipe that’s great if you need a snacky type of food. I even modified the recipe a bit and removed the pepper, paprika, and tahini so that it was Autoimmune Protocol compliant, and it turned out amazing! Served it with baby carrots, sooo delicious 😋. . —- Ingredients: • 1 head cauliflower, roughly chopped • 2 Tbsp olive oil • ½ tsp salt • ¼ tsp pepper • 2 cloves garlic (roasted) • ⅓ cup tahini • ¼ cup lemon juice • ¾ cup olive oil • 1.5 tsp sea salt • ½ tsp smoked paprika • ¼ cup water Instructions: 1 Preheat oven to 375. 2 Combine oil (2Tbsp), cauliflower and salt and pepper. Spread over a baking sheet and roast for 40 min or until cauliflower is cooked through and slightly browned. 3 Throw cauliflower and remaining ingredients in a high-speed blender. CINNAMON, APPLE ROSE MUFFINS (gf, df)🍎• We all get them. Grey clouds. Grey hair. Grey emotions. Little shades of grey everywhere. I’ve experienced some dark greys this past week when I got the call that my mom fell and broke her hip. It’s hard because I am sitting on the other side of the world and can’t see her right now. She’s 73, but strong and healthy. She is the strongest person I know and one thing I’ve learned from her is that our greatest weapon against any grey in our life is gratitude. So this morning I am pushing trough the grey to grab hold of gratitude. She loves roses so these muffins are for you mom! CINNAMON, APPLE ROSE MUFFINS (gf, df) Ingredients: 1 gf Muffin mix. (Use your favorite vanilla muffin mix. I love the gf muffin mix by @kingarthurflour 1 teaspoon Cinnamon 2-3 Apples (I used gala) Instructions: Muffin: •Turn on oven to temperature instruction on your muffin mix container. •Follow the instruction on the mix. •Add 1 teaspoon of Cinnamon to mixture while mixing. •Place cupcake or muffin liners in pan. •Fill each liner 3/4 to top. Apple Rose: •Cut apples in half and remove the seeds with a spoon. •slice each half into very thin slices. •place them in a glass bowl and pour boiling water over them. Let them sit for 5 min to soften up a little. •pour out hot water. •take a slice of apple and roll it up the form the center of the rose. Press it into the middle of the raw muffin dough. •start building your rose by bending each slice to form a half circle and pressing it into the dough around the center rolled up apple piece. •start from the inside out building from the center. •keep doing it until you have a rose. •follow instructions for baking. Remembering that time we made 15 liters of kimchi with @tomasreyesvarela in this beautiful black clay pot from La Chamba that @sighlab gave me for my birthday. 〰️〰️〰️ The word kimchi comes from the pre-modern Chinese word chimchae, which just means soaked vegetables. Kimchi has been an essential component of Korean gastronomy for millennia. There is still debate about the exact dates of its origin. It was developed as a means of preserving food in winter. Vegetables were salted, stored in clay pots like this one, and buried for a thorough, slow fermentation harnessing the natural interactions between bacteria and their environment. Lactobacillus, a strain of bacteria that thrives in saltwater, converts carbohydrates and sugars into lactic acid and carbon dioxide, giving kimchi its signature effervescence and tang. This transformation also makes minerals, amino acids, and vitamins already present in the vegetables more readily available for human digestion. 〰️〰️〰️ This nutritional feast was therefore ready to nourish people in spring, at the peak of food scarcity. It complimented a rice-based diet, keeping people healthy and properly nourished. It has been cherished in Korea ever since and is now craved the world over for its spicy punch which it owes to the introduction of the chilli pepper to East Asia in the sixteenth century. The most popular version of this Korean staple is made with napa cabbage, daikon, scallion, garlic, ginger, fish sauce, and chilli peppers, but there are many varieties.
