Rolled Oats with black beans, peppers & yummy spices. You can also forget the bun and make this into “meatballs” to pair with a zucchini noodle pasta or serve on skewers for an easy barbecue appetizer. Be sure to save this recipe and try it out!
Black Bean & Oat Vegan Burger or “Meatballs"
(Makes 4 burgers or 12 “meatballs")
-1/4 cup Quaker Steel Cut Oats
-1 cup water
-1 Tbsp Flaxseed meal
-3 Tbsp water
-1/2 cup @Quaker
Old Fashioned Rolled Oats
-1-15 oz can low sodium Black Beans
-1/4 cup Red & Yellow Peppers, finely chopped
-2 Tbsp Red Onion, finely chopped
-1 clove Garlic, minced
-1 Tbsp Nutritional Yeast -1/2 tsp salt
-1 tsp cumin
-1 tsp paprika
- 1 Tbsp Olive Oil
- 4 Hamburger Buns - Vegan Mayonaise, ketchup, and/or mustard to taste
Toppings such as Lettuce, tomato, onion, avocado to taste
1️⃣Boil 1 cup water in a small saucepan over high heat. Add steel cut oats and cook for 10 minutes, stirring occasionally. Transfer oats to a fine mesh strainer and rinse under cold water. Let stand to strain completely. .
2️⃣Combine flaxseed with 3 Tbsp water in a small bowl and stir to combine. .
3️⃣Pulse rolled oats in a food processor to almost a flour consistency. .
4️⃣Mash black beans in a large bowl, leaving some chunks of whole bean for texture. Add cooled steel cut oats, peppers, onions, garlic and spices. Add the out flour and flaxseed “egg" mixture and mix to combine with your hands. Refrigerate for 10-15 minutes. .
5️⃣Divide into 4 portions and form into patties. In a medium skillet heat olive oil over high heat. Cook 2 patties at a time, turning about 4 minutes per side, until they are browned on both sides. Repeat with other 2 patties. If making “meatballs” roll into 12 balls and cook in skillet until golden brown on all sides, turning every few minutes. .
6️⃣Place “burgers” on buns and top with all your favorite toppings or serve “meatballs" with your favorite pasta, zucchini noodles, or rice. Enjoy!
