Go boil a regular potato and try to eat the whole thing. You’ll probably feel full after you’re done. There have been some really cool studies done on the satiety levels of food. They compare different foods on a calorie for calorie basis and give it a score for how satiating it is compared to white bread. White bread has a satiety index of 100. I swear, the cat food-looking mash is red lentils and not cat food. If you read my post a few days ago, I mentioned how I have an upcoming medical journey, so I thought I’d give you a bit of insight today. In exactly a week(Nov. 27), I am going to have a pretty major surgery. Some of you know what it is, but I do not feel comfortable sharing publicly because I know it probably is a bit controversial and although I’ve never been judged by all you, I don’t want to set myself up for failure. For some reason, I have absolutely no fear in regards to this surgery. I really trust my surgeon and although I am anxious for the results, I am not scared to go under anesthesia, be in pain, or anything like that. I’ve been waiting to have this surgery for about 7 years and it feels so weird that it is just in a week. I feel absolutely grateful for all the support I’ve received for the people who know. And I just want to put this out there; just because you don’t know doesn’t mean I don’t like you or you’re not as good as a friend as the people who do know. The people who know know because they inquired or it was part of our conversation. I have a homeopathic pain plan of care and if it works, I’ll share it all with you. I will post a bit more about this, but for now, I’ll leave you just with this. RECIPE ! PESTO PASTA SALAD *vegan & oil free* Do you want to try an easy whole food plantbased receipt for yourself ? Try this pesto pasta salad ! There is a vegan pesto option in the store too just check the labels but if you want to keep it oil free follow this recipe : For the pesto : 3 garlic cloves 3 cups of arugula ( rucola ) ( have some extra for serving ) 30 gr fresh basil leaves 2 tablespoons of nut butter choose one that doesn’t have a too strong flavor ( AH eigenmerk amandelpasta ) 2 tablespoons white misopaste ( check your Toko ) 1 tablespoon white rice vinegar Throw all in a food processor and tadaah ! For the pasta : 1 package of 500 gr Fusilli pasta of choice ( for WFPB choose a whole wheat/brown rice-/lentil- or any type of pasta ) 1 zucchini Cherry tomato’s or little roma’s Jar of white beans Pine nuts Cook the pasta for the amount of people you are cooking. Slice the zucchini in small bits and the tomato’s in half. Mix the pasta with the pesto, when mixed well add the zucchini-tomatoes-white beans and hussle up ! Make sure you are not shy with the white beans they blend in the dish and will give you the extra boost of iron and protein that you need to make this a complete meal ! Esto está delicioso!! Es nidos de pasta de espinacas de @vegadona. Guisantes congelados y una salsita improvisada pero buenísima. Aunque en la ejecución ha habido dudas jaja porque quise usar tapioca para espesar pero son unas bolitas y se han quedado ahí.. si alguien me dice como se usa.. #Receta aprox: -medio vaso de leche vegetal, yo use de avena -una cucharada levadura nutricional -una cucharada levadura de cerveza -cucharadita de cebolla en polvo -pizca de sal -cucharadita de maicena disuelta en 1/3 de vaso de agua. Más o menos es lo que he usado al ver que con la tapioca no espesaba. Para terminar he espolvoreado un poco de parmesano vegano receta de @danzadefogones que tengo en un tarro desde hace casi un año y lo uso a pocos. Aguanto mucho y no se estropea! Vegan100% oil free dinner. left over spuds with crispie tofu and sweet cherry tomatoes and mushrooms. All dry fried on a non stick enamel pan. So easy, so cheap and yummy. TOFU BURGER!🍔So last week I made these amazing tofu burger/sandwiches and I haven't had the chance to post about it!😂They are soo good and flavourful yet super simple to make!🙌☺️Here is the recipe💞: A block of extra firm tofu (350g) 1/4 cup of tamari 3 tbsp of maple syrup hot sauce (as much as you want) sub for chilli flakes Marinate your sliced tofu at least 12-24 hours (the longer the better) Bake at 400F until crispy *optional put on a non-stick pan with the rest of the marinate to pan fry. Y’all so I haven’t shared lately because as the image shows it’s been rainy, cold, and darkening quickly in my hometown. But today I whipped up a wonderful lunch out of food scraps and it was delicious 🤤 Cilantro-Lime Rice, Pan Fried Zucchini, Tomato, Onion all drizzled with Lime Juice, Pink Himalayan Salt, and Spicy Lentil Sopes. I had Cashew Sour Cream with my Sopes and Homemade Salsa as well 💃🏻 A party in my mouth and tummy 🤤 Happy Monday All ☀️
Y’all, this may not look like much but this sauce is the best I have made to date 🤤 It included pureed tomatoes, a bay leaf, italian seasoning, basil, rosemary, black pepper, and salt. • I simmered the puréed tomatoes with precooked lentils and spices before adding one finely chopped zucchini, and one finely chopped (ground) homemade spicy seitan sausage. I served it with lentil pasta and cashew parmesan🍝 It was delicious 🤤 • Homemade Parmesan: 1/2 Cup Raw Cashews 1/2-3/4 Tsp Salt 1 Tbs Powdered Nutritional Yeast or 2 Tbs Nutritional Yeast Flakes 1/2-1 Tsp Garlic Powder Blend everything finely in a food processor and enjoy☀️
For some reason Cinnamon Apples atop of Turmeric-Maca-Gingerbread Oats were today’s breakfast of choice. Topped with walnuts, this bowl was uber delicious and very much enjoyed. Listen to your body, your soul, and what it needs. It knows best 😉
So I touched on this briefly last time but I want to reiterate, using fresh garlic to season veggies is a game changer! It is so so GOOD! I pan fried a bag of frozen green beans with minced garlic, plenty of salt, and a dash of freshly crushed black pepper. I placed a large ball of steamed brown rice on my plate and covered with soy sauce, the veggies, and crushed nori. It was like a deconstructed sushi bowl and it was Yummy 😋 If you struggle to eat your veggies, I highly recommend spicing them up with herbs and spices. It really only makes the experience of eating veg so much better!
It was cold out today and all I wanted was a warm filling savory breakfast, so that is what I made. I made my beloved Chickpea Frittata, Herb Roasted Potatoes, and Garlic Broccoli. I topped with Tomato Salsa, Salted Avocado and enjoyed🤤 Surprisingly, I really enjoyed the broccoli and I think that was because I haven’t had broccoli in ages! • Tip: Garlic gives great taste to veggies, so if you haven’t tried it I highly recommend!
This dish is what I call ‘making do with what you have in the kitchen.’ Low on time to make the filling of what I initially planned for my Enchiladas Rojas, I grabbed what I had on the fridge and made an unconventional filling for my enchiladas. • I quickly cooked some cubed zucchini with onion and salt and heated my pre-made spicy soy curls. I filled one tortilla with the zucchini and the other with the soy curls and topped with cashew sour cream and the smallest amount of shredded lettuce because I’m not a fan of iceberg 😅 • Although this meal does not represent the traditional red enchiladas I planned to recreate, the end result was satisfying and just what I needed to satisfy my craving 🤤
This “throw-everything-in-your-fridge” stew was much more tasty than its appearance gives off. I put precooked lentils in a bowl with previously prepared chipotle sauce, freshly crushed black pepper, lime juice, pink himalayan salt and some capers. I added it to chopped collard greens and yellow peppers and called it a meal. Was it delicious? Yes!, and the best part is that it took very minimal effort. I will often not eat a proper meal because “I don’t have time,” but what I found with this meal was that you don’t need a lot of time to prepare a complete meal that is satisfying and nourishing. • Let’s start saying no to bland, unsatisfying, or unhealthy meals for a lack of time and start saying yes to flavor, enjoyment, and our health.
