Faux Tuna Salad 🙌❤🤤 It's such an amazing oil-free recipe. I added more dulse & celery, along with skipping the date & cutting back on the sauce since we don't need that much extra. I made a giant spinach wrap filled with lettuce, spinach & romaine. Try this recipe, seriously...it's delicious!
Recipe from website..... INGREDIENTS:
1 15 oz can of garbanzo beans, drained and rinsed
2 celery stalks, chopped
1/4 red onion, diced
Salt, pepper and dried dill, to taste
Briny Tahini Mayo
1/4 cup (60 g) tahini
1/4 cup plus 2 tbsp (90 ml) water
1 tbsp plum vinegar
1 tsp dulse flakes
1 large date, soaked in hot water for 10 minutes
1 garlic clove, grated
Place the garbanzo beans in a food processor and process just until there are no more whole beans. Don’t over process (alternatively, you can place them in a large bowl and mash them with a potato masher or a fork.) If you went the food processor route, transfer the beans to a large mixing bowl and add the celery and onion.
Make the “mayo” by adding all of the sauce ingredients to the blender and blending until creamy and smooth (make sure to take the pit out of the date before blending if it has one). Add 3 tablespoons of the “mayo” to the garbanzo mixture and mix until everything is incorporated.
Add salt, pepper and dried dill to taste.
Save the rest of the “mayo” for the bread.
Toast two pieces of sprouted bread, spread on some tahini mayo, generously add the faux tuna, and top with tomatoes and a mix of shredded kale and lettuce. Or, just use it to top a big green salad if you don’t eat bread. (The dressing recipe makes enough for the Faux Tuna Salad and two or three sandwiches.)

I tweaked the recipe to make it a little healthier but it nevertheless tastes amazing:
✅ maple syrup->date "syrup": just mix dates and water
✅whole wheat pastry flour-> whole grain spelt flour (there are no pastry flours in Germany)
✅cane sugar ->granulated date sugar: dried pulverized dates
✅chocolate chips-> xylitol chocolate chips: not oilfree because of the cacaobutter, but at least sugar free!
I can definitely recommend the book. It is not 100% oilfree or sugarfree, but most recipes are adaptable quite easy as you can see above.

Is it healthier than white refined sugar? Yes.
☝️The question you always have to ask yourself is: Is it healthy COMPARED TO...?
Maple syrup is often said to e.g. have decent amounts of minerals such as manganese and zink. While this is true, you have to calculate the traces of minerals per portion(!). Given the high sugar content, those traces of minerals are a very poor reason to consume it.
The bottom line is, that it is slightly less bad than refined white sugar, but this doesn't make it healthy.
It is still a very poor source of nutrients compared to "real" foods like whole fruits (dates). .
➡️I therefore recommend to either use self made date syrup (mix dates with water) or use pulverized dehydrated whole dates.

Happy Thursday and good evening everyone. Im uploading this super late today, since I was celebrating my grandma's birthday today. Now that that's over I'm super tired and feeling very sick. Had the worse runny noses and Im hoping that I feel much better tomorrow. Anyway for today I had 2 baby sweet potatoes, seasoned chickpeas, peas, bell peppers, Japanese eggplant, cucumber, and spinach with hummus and nooch on the side. So how was your day??

1 can no salt added black beans 1 can no salt added kidney beans 1 can no salt added canellini beans 1 yellow and 1 red bell pepper Green onions, fresh cilantro and 1 large avocado Dressing
1 whole lemon
1 1/4 cup apple cider vinegar
Fresh or garlic powder
Pink Himalayan sea salt to taste
1 Tbsp of pure maple syrup

I’ve recently been introduced to Japanese potatoes & can’t get over how good they are!
They’re dense, creamy, with a touch of sweetness. Not as sweet as a sweet potato tough! The Japanese potato looks the same as a sweet potato on the outside🍠, but white on the inside.
I usually cut them into wedges then bake them in the oven, but today I added it to my soup🍲 WoW👌🏼
