One of the wines we’ll be featuring this Saturday from Champagne Étienne Calsac. The “Rosé de Craie” is a blend of 88% Chardonnay and 12% Pinot Noir, all from premier cru vineyards. A clean and nuanced expression of the terroir in the Grande Valle de la Marne and the Côte des Blancs, the chalk and limestone soils give this wine a wonderfully balanced and mineral driven finish. Less than 1500 bottles were produced and even less made it across the ocean. Grilled tachiuo (belt fish) with broad beans, takenoko (bamboo shoots) and Fuji-miso (butterbur miso) served with white vegetables stewed in dashi. I learnt from Chef Kimura-san that in spring most of the vegetables are bitter, it’s almost as if to detox the body which had consumed a lot of meat over the winter months. This course was really delicious!
