Been obsessed with cooking everything in grass fed butter lately... i haven’t baked in a while because life gets busy but these donuts are made in 20 mins and vegan, gluten free, and refined sugar free!! they’re so light & fluffy that my housemates were shocked that they were vegan.
vegan apple cider donuts:
1 cup of gluten free all purpose flour
1/2 tsp of baking soda
1/2 tbsp of baking powder
½ tbsp of cinnamon
1 tsp of nutmeg
¼ cup of coconut sugar
½ cup of unsweetened applesauce
½ cup of almond milk
2 tbsp of apple cider
topping: ¼ cup of coconut sugar & 1 tbsp of cinnamon
1. Preheat your oven to 350 degrees and spray your donut pan with a nonstick spray.
2. Combine your flour, baking soda, baking powder, sugar, cinnamon, and nutmeg in a bowl and mix.
3. Once your dry ingredients are mixed, pour in your almond milk, applesauce, and apple cider and combine.
4. Pour your batter in a large ziploc gallon bag and cut one corner. Evenly distribute the batter in your donut pan.
5. Bake for 10 mins. While the donuts are baking, combine your topping ingredients in a shallow bowl.
6. When the donuts have cooled for about 5-7 mins, coat each donut in the cinnamon sugar mixture and enjoy!
