Thermo wars has begun in the Harding house🤣. In the blue corner we have me, layered in a hoodie, dressing gown and a beany hat whilst sweating it out in the red corner, Mr B, board shorts and t-shirt, thinking it’s still summer😂.⠀
I'm resorting to a comforting bowl of baked pears, naturally caramelised in the spices of Autumn - vanilla and cinnamon. Sugar and sweetener free. ⠀

is the lovely Joanne from @theoliveandmango
and since I do not often post desserts and sweets, I thought I would highlight one of my favourite recipes. This is her Roasted Grape Cake that is naturally sweetened and goes perfectly with a coffee ☕️ 😉 What I love about Joanne’s recipes is that most are easily converted to gluten free and /or vegan. But what I love even more is the wonderful team work between Joanne and her husband. Joanne is the cook and her husband is the photographer. They make an awesome team 💕 Head over and check them out!
This mornings breakfast - homemade cinnamon rolls and lemon curd. This is the first time I've made lemon curd and I will never buy it again. It was easy and delicious!!! ⠀
I found a recipe for it at tasteofhome.com You can just go there and type in lemon curd and it should pop up on a list. It's a pretty easy recipe.⠀
1 cup sugar (I only used 1/2 a cup because I didn't want it too sweet. And it wasn't. It was just about perfect. I might even put a little less in next time.)⠀
1/2 cup of lemon juice ⠀
1/4 cup of butter, cubed⠀
1 Tablespoon grated lemon zest⠀
I only had two small lemons in my fridge. I grated all the zest off and that gave me enough. I squeezed what juice I could out of them (about 1/4 cup) and then used bottled lemon juice for the rest. ⠀
So in a small saucepan whisk the eggs, sugar and lemon juice until they're blended. Add the butter and lemon zest. Cook, whisking constantly, until the mixture is thick and coats the back of a metal spoon. It's about 170 F on a candy thermometer. ⠀
From there I just poured it into a mason jar and let it cool on the counter for a bit before putting it in the fridge. ⠀
If you want it really smooth then strain out the zest before putting it in the jar. I left mine in though because I like things to be really lemony. ⠀
I sprinkled a little bit of extra cinnamon on top and ate it. Yummy!😊⠀

I once read “the difference between where you are now and where you will be this time next year, are the people you meet and the books you read.” If that’s true, I’m wildly changed in the past 12 months having met YOU!
It’s a true honor and privilege to do what I do and though I’ve never worked harder in my life, the work has never been more enjoyable and rewarding. .
I revel in your successes. I know you’ve got that fire in your gut to do something that scares you but makes you feel alive. I see the hard work. You’re doing better than you think.
I have been able to witness some of this firsthand with a food photographer here in Phoenix who I’ve done some coaching sessions with. To see her working hard, not letting up, running headlong at becoming a professional food photographer, reminded me of all of you who are doing the same. Blood, sweat and tears, my friends...the currency for anything worth doing.
This same student recently bought some new props that came in sets of four. I was all too happy to take the spares off her hands and promptly went home to my studio and created this quick image. And the stone camera, a gift, that makes me think of her, but also all of you. Knowing that I’ve been a part of you pursuing what you love, I can’t think of any greater reward for a teacher’s heart. .
