Happy First Day of Fall! 🍂 Here’s a fun #pumpkinspiced
lunch idea to celebrate my (new) favorite season.
My kids begged for more salad topped with pumpkin spice glazed walnuts. I don’t blame them either. This lunch felt like a big treat, and us mamas need treats too.

➕glazed walnuts: drop a bit of vegan butter or oil into a pan and add in some raw walnuts, a drizzle of maple syrup and a heavy dusting of pumpkin spice. sprinkle the nuts with some sea salt and sauté for a minute or two until they become sticky. lay them out on parchment paper and bake them slowly in the oven (300 for about 8-10 mins but watch for burning!). Let them cool completely before enjoying.
➕iced pumpkin spice chai: mix pumpkin spice with raw honey and allow it to drip into your glass to your liking. add ice to your cup. mix @bluelotuschai
with half almond milk and half water with a frother and pour it into the drippy glass.
➕pumpkin spice cracker cookies: will link original recipe in my stories. just add 1tsp of pumpkin spice and 1/2tsp of cinnamon to the mix before baking.
