Hello everyone and happy Sunday!🙋🏽‍♀️ I thought I’d share with you my one-pan go-to breakfast recipe that I make almost daily! I posted a picture of it on my feed last week. Honestly, it’s so easy that I don’t even know if it should be considered a recipe! If you don’t like an ingredient, you can totally sub it out for something else. If you want to sub bacon for sausage, go for it! If you want to sub the plantain for some potatoes, go for it! If you want to make it eggless, go for it! I shared the step-by-step of how I make this breakfast on my Instagram stories a couple of days ago, but decided I’d share it on my feed today since I got some questions about it.🍳🥑 This is enough for me alone, but portions can also be customized to your needs so feel free to add more or less of any ingredient. 🎶 It’s my birthday and I’ll cry (happy tears b/c @eatingevolved ) if I want to 🎶 Twenty-two was challenging, messy, and, if I’m being completely honest, extremely difficult. But throughout this past year, I also got to experience many joys and learn a countless number of life lessons. I learned the importance of self care. I developed discipline and I got better at following through. I met some truly great friends and spent many nights laughing hysterically. I learned that I love kombucha and hate playing Catan past 5pm (vital things to know, people). I failed at many things. I was shown grace. I gave myself grace. I experienced the joy that comes from saying “no” and being in bed by 9pm. I spent time with myself. I danced a lot and I studied hard. I challenged myself both mentally and physically. And, most importantly, I learned how to love myself, how to stand up for myself, how to better advocate for others, and how to ask for help. I would be lying if I said this past year was easy, but it brought me so much growth and so much self awareness. So, cheers to twenty-three. May it be filled with a little more laughter, way more paleo chocolate, and many more self-discoveries. 💕 P.S. Is 9am too early to be eating chocolate? Asking for a friend..

This weekend I achieved SEVENTY FIVE POUNDS of weight loss! I started at 278 in November of 2016 and clocked in yesterday at 203. . . . I never would have imagined I’d make it this far, I always assumed “big” was just part of who I was. I was very skeptical when I started the #paleodiet , but I stuck with it, the results speak for themselves. . . . When I started, my original goal weight was 200 pounds, 78 pounds in total weight loss. It’s incredible to think that I’m just 3 pounds shy of that goal. I’ve learned a lot lately about how cutting out snacks, drinking more water, and training with weights can help further my weight loss. I’m thinking, after 200, I’ll shoot for something in the 185-190 range. But that’s a decision for another day. . . . Thanks to everyone that has supported me thus far. Quedan súper esponjosos. Los acompañe con huevo frito a la plancha, syrop sugar free y cacao nibs de @cacaonibsve. We had such a great day yesterday. We got up early and climbed on our motorcycles and rode to breakfast with another group of riders. Later we met some friends we hadn't seen in awhile at the local Brewery and had some cold beer followed up with lunch at the marina. It's called life. Deciding to start a fitness journey does not mean that you check out of everything else that you enjoy doing. People that use cheat days as a form of reward for hard work are in all actuality using Fitness as a punishment for their body. Just take it easy. Rest day - but still paying attention to nutrition. Healthy carbs, protein, veggies and healthy fat 🥑 . This ensures that I'm not wasting time or energy worrying about getting results and 💪☺️ from my workouts during the week. . Ground turkey (did a big batch, salt pepper and broth in a pan, good for the week), roasted plantains (put about 10 on a sheet pan, poked holes in the skin and roasted at 375 for 1/2 hr, let cool removed skin and froze them) steamed kale, and sliced avocado. . This was breakfast, because I ♥️ real food, and most "breakfast" food doesn't fall into that category.

Fried Ginger Chicken 🍗 (Ayam Goreng Halia) So easy to prepare and yummy crunchy delicious ginger bits to bite into! Marinate chicken with the blend of old ginger, galangal, lemongrass and tumeric (ran out so used powder), salt, sugar, cornflour. Submerge totally when deep frying for crisp exterior and juicy moist meat. Do not leave out the remaining ginger mix marinate, fry that all too for more ginger floss to go round. Its the best!
