This year we are not cooking a big Thanksgiving meal. As a family we decided to keep things low key, focus on what's really important. We will be having friends over later in the week just because it is a long weekend and we need to catch up. But no turkey here and no big meals.
However, I can't pass up an opportunity to make something special during a Holiday weekend. So here we are with a white wine poached pear, served with coconut cream! Clean, easy, super fun.

Italian chicken sausage & arugula. 10 minutes to heaven on a plate. I don’t make every meal at home from scratch & I don’t believe you have to in order to nourish your body well. Cooking at home at least a little bit undoubtedly improves health so I always encourage my health coaching clients to get comfy in an apron, but do the best you can with the time & resources you have. Focus on whole, real foods made with ingredients you recognize & can pronounce, in your kitchen, at the grocery store, on restaurant menus & your brain & body will thank you in a million ways. 🤗 I went with a little sweet and a little savory this morning for breakfast. I mixed up some batter to make this paleo waffle and while that was cooking I softly scrambled some eggs in coconut oil and cut up half an avocado 🥑 I also grabbed a handful of raspberries 😋 last day of work today before the long holiday weekend! So excited for thanksgiving tomorrow and equally as excited to bake all the pies and appetizers tonight with my mom 🍎🥧 hope you all have the best Thanksgiving Eve!

Cornbread Turkey Pot Pie (Thanksgiving leftovers)
Prep Time 15 minutes
Cook Time 50 minutes
Total Time 1:05
Serves 6 -
2 tablespoons of ghee
1 yellow onion, minced
2 stalks of celery, diced
2 carrots, diced
3 garlic cloves, minced
1 cup peas
1 cup sliced button mushrooms, diced (plus 6 for topping)
3 cups cooked, diced turkey
1 cup mashed potatoes
28 ounces bone broth
1 teaspoon dried rosemary
1 teaspoon dried thyme
1/2 teaspoon dried sage
salt and pepper, to taste
For the cornbread crust
2 cups Nuts.com Paleo Baking Flour
1 teaspoon baking soda
pinch of salt
2 medium eggs
1/3 cup melted ghee
1/4 cup honey
3/4 cup unsweetened almond milk
1 jalapeño, minced
fresh parsley, for garnish
Preheat oven to 350 degrees F.
Place a dutch oven over medium heat. Add ghee along with onion, celery, and carrots and sauté for about 5 minutes, until onion becomes fragrant and translucent. Then add garlic, peas, mushrooms, and turkey. Cook for another 5 minutes, until mushrooms have reduced in size. -
Add mashed potatoes, broth, rosemary, thyme, sage, and salt & pepper. Mix until potatoes break down. Cook for 15 minutes until slightly reduced. Use a ladle to fill 6 ramekins. Place ramekins on baking sheet. -
In a large bowl, whisk together baking flour, salt and baking soda. In a medium bowl, whisk together eggs, ghee, honey, and almond milk. Pour wet ingredients into dry mixture and use a spatula to combined completely. Then add the minced jalapeños and fold into the mixture. Use an ice cream scoop to scoop 1-2 scoops on top of each ramekin. Then press a mushroom slice into the middle. Place in the oven to bake for 35 minutes or until the middle of the cornbread stuffing is cooked through.
Garnish with fresh parsley before serving!
Healthy Coconut Chicken with Asian Slaw. I’d gladly take seconds of this one!
The Chicken: Cover thinly sliced Chicken Breasts in Coconut Flour with some Salt and Pepper added into the Flour Mixture, then Coat them in a bowl of Egg Whites, and then Coat them in Unsweetened Coconut Flakes. Cook them over Medium-Low Heat in a pan in Coconut Oil. Try to only flip them once so the crust doesn’t fall off. After flipping them, I place a lid on the pan to trap the heat in to cook them through the middle better. It’s really important that the Chicken Breasts are thinly sliced so you don’t burn the outside of them while trying to get them cooked through. After about 4-5 mins on each side, I carefully cut into them to check on their doneness. .
Asian Slaw: You can buy pre cut slaw or make your own. You want very thinly sliced Red Cabbage, Green Cabbage, Carrots and chopped Cilantro all mixed together. In a small bowl combine 2 TBS Nut Butter (I used Crunchy Sunflower Seed Butter), 1/2 Cup Coco Aminos (You can find this near the Soy Sauce at the grocery store), 1 Clove of Minced Fresh Garlic, and 1/2 TBS Minced Fresh Ginger. Pour the mixture over the slaw and stir well. Serve with the Coconut Chicken and garnish with fresh Lime Slices, Chives and Cilantro.

savory blend and some nutritional yeast for a cheesy flavor and fry texture! I cooked them on a wire rack to crisp them up a bit. They were the perfect pairing with my crispy coconut chicken tenders!

• Animal fats: ghee & butter, extra-virgin cod liver oil (best brands - Rosita, Dropi, Armorica)
FATS TO AVOID • Vegetable oils such as sunflower oil and corn oil. These oils are heavily processed • Any form of trans fat
