I don’t make every meal at home from scratch & I don’t believe you have to in order to nourish your body well. Cooking at home at least a little bit undoubtedly improves health so I always encourage my health coaching clients to get comfy in an apron, but do the best you can with the time & resources you have. Focus on whole, real foods made with ingredients you recognize & can pronounce, in your kitchen, at the grocery store, on restaurant menus & your brain & body will thank you in a million ways. Back in my pre-gluten free days, I was never a huge fan of McDonalds. Except when it came to their breakfast sandwiches because HELLO MCGRIDDLE. I remember it being the best combo of savory and sweet and you’d be surprised how much I still think about them 🤫 ENTER THE BLUEBERRY SAUSAGE SCONE. I saw this recipe from @fedandfit the other day and have been dreaming of it ever since. And it did not disappoint! And bonus, it’s gluten free, dairy free, paleo...all the things. This fulfills all my lazy, morning in bed watching tv with the perfect breakfast and a cup of coffee dreams. 🥰
‘Tis the season for all things pumpkin 🧡🎃🍁. Recipe for Pumpkin Pie Chia Seed Pudding below 👇🏼 🧡 Ingredients: •1/2 cup Native Forest full-fat coconut milk (guar gum free) •1/2 cup water •3/4 organic unsweetened pumpkin purée •1 scoop @gardenoflife Sport chocolate protein powder (I tried making this with the vanilla flavor and didn’t like it as much) •1/2 teaspoon pumpkin pie spice •1/4 cup + 1 tsp chia seeds •Pinch of sea salt •Pinch of stevia •Additional toppings for serving 🧡 Directions: Whisk together all ingredients and portion out into 3 bowls. Cover and chill pudding in fridge for 3 hrs or overnight. It’s crab season and if you’re splurging for the holiday this is a super simple side or appetizer so you won’t show up empty handed! • BAKED ARTICHOKE | 2 large artichokes, olive oil, garlic, lemon, s+p... Preheat oven to 400°. Wash and trim. Slightly separate the leaves and open the artichoke a bit. Cut in half lengthwise. Drizzle with olive oil and fresh squeezed lemon. Place a cracked garlic clove in the center and season with salt n pep. Flip and place artichoke cut side down on lined baking sheet. Bake for 35-45 min. depending on the size. My artichokes were huge and needed a little bit longer so adjust accordingly. Place a dutch oven over medium heat. Add ghee along with onion, celery, and carrots and sauté for about 5 minutes, until onion becomes fragrant and translucent. Then add garlic, peas, mushrooms, and turkey. Cook for another 5 minutes, until mushrooms have reduced in size. - Add mashed potatoes, broth, rosemary, thyme, sage, and salt & pepper. Mix until potatoes break down. Cook for 15 minutes until slightly reduced. Use a ladle to fill 6 ramekins. Place ramekins on baking sheet. - In a large bowl, whisk together baking flour, salt and baking soda. In a medium bowl, whisk together eggs, ghee, honey, and almond milk. Pour wet ingredients into dry mixture and use a spatula to combined completely. Then add the minced jalapeños and fold into the mixture. Use an ice cream scoop to scoop 1-2 scoops on top of each ramekin. Then press a mushroom slice into the middle. Place in the oven to bake for 35 minutes or until the middle of the cornbread stuffing is cooked through. - Garnish with fresh parsley before serving!

Healthy Coconut Chicken with Asian Slaw. I’d gladly take seconds of this one! . . . The Chicken: Cover thinly sliced Chicken Breasts in Coconut Flour with some Salt and Pepper added into the Flour Mixture, then Coat them in a bowl of Egg Whites, and then Coat them in Unsweetened Coconut Flakes. Cook them over Medium-Low Heat in a pan in Coconut Oil. Try to only flip them once so the crust doesn’t fall off. After flipping them, I place a lid on the pan to trap the heat in to cook them through the middle better. It’s really important that the Chicken Breasts are thinly sliced so you don’t burn the outside of them while trying to get them cooked through. After about 4-5 mins on each side, I carefully cut into them to check on their doneness. . . . Asian Slaw: You can buy pre cut slaw or make your own. You want very thinly sliced Red Cabbage, Green Cabbage, Carrots and chopped Cilantro all mixed together. In a small bowl combine 2 TBS Nut Butter (I used Crunchy Sunflower Seed Butter), 1/2 Cup Coco Aminos (You can find this near the Soy Sauce at the grocery store), 1 Clove of Minced Fresh Garlic, and 1/2 TBS Minced Fresh Ginger. Pour the mixture over the slaw and stir well. Our”French Fries” from last night’s dinner. 🍟 We totally tricked Cal into thinking these were the real deal. These are butternut squash zig-zags from @traderjoes tossed in @kasandrinos olive oil, @balancedbites savory blend and some nutritional yeast for a cheesy flavor and fry texture! I cooked them on a wire rack to crisp them up a bit. They were the perfect pairing with my crispy coconut chicken tenders!

I vegazzled them up anyway, making them sweet and spicy, then got all Nigella (minus the coke habit and porn voice) and gave them a drizzle of this and a sprinkle of that. Voila! You have a side dish that’s as pretty as a picture.
