2 eggs, 2 tbsp sugar, 3 tbsp milk, 3 tbsp flour, 1 packet vanilla sugar, pinch of salt. Topping: Dust with powdered sugar or serve with strawberries, bananas, honey, ice cream etc. .
Direction: Divide the eggyolks and eggwhites. Beat eggwhites using an electric mixer on high speed. Add in 1 tbsp sugar while it is slowly getting stiff. Mix until you can turn over the bowl and the beaten eggwhites stay in place. Once it is done, whisk the eggyolks this time with 1 tbsp sugar, pinch of salt and 1 packet vanilla sugar. Whisk the mixture for about a minute. Pour in the milk and add the flour. Mix again. Fold in the beaten eggwhites next and do it gradually. Fold it in the same direction. Add 1 coffeespoon of butter in a nonstick pan. Set the stove to medium heat (close to low heat). Add small portions of batter in the pan as shown in the video above. Close the lid of the pan and waut for two minutes. Add some more on top of the batter in the pan and wait for 1-2 minutes more. Do this for a third time but add just a tiny amount of batter. Close the lid again and wait for 1-2 minutes more. Turn over the pancake after that and bake the other side for 3-4 minutes. Bon appetit. .

Two reasons to like squash: it’s in season, and it’s the first complex carbohydrate I’ve been able to eat without a reaction in 7+ weeks. Silly to get excited over pancakes made from squash, but it roots from progress in what has probably been my roughest season of health. So much of life revolves around food from how we socialize to just meeting energy needs. Couple that with studying nutrition and health.. overwhelming when it’s restricted, in short. The protocol, painful skin, die-off symptoms, and frustration of candida overgrowth after surgery made me want to hide from this platform especially.
