Boiled egg with anchovy butter for brekkie ☀️ 🐟
• Butter • Anchovies • A couple slices of your favourite bread • 1 egg
• Fresh flat leaf parsley
Put you egg into boiling water then turn down to simmer for 5 minutes. Depending how much bread do you want make enough anchovy butter that is suitable. The butter is half normal butter to half chopped anchovies and made into a paste. Use the oil from the anchovy tin or jar and splash some into a frying pan and fry your bread until nice and crispy. When your egg and bread are done chop up your bread into soldiers and spread with the anchovy butter then scatter with parsley 🍀. Today! My kids requested for dinner kofta. It’s a simple dish to make and quick. Check my story for the steps. While I was cooking had a unexpected friend visit me. I quickly made kofta in pita bread with add of tzatziki yoghurt and fried ball kofta sautéed in pomegranate molasses.

#meatlessmonday - “trying to use up all the herbs” tomato soup with Parmesan crisp. Fresh homegrown basil, parsley and thyme and whole canned tomatoes blended together using an immersion blender. Thickened with non-fat Greek yogurt for equal creaminess, more protein and waaaaayyy less fat than if using heavy cream!
Believe it or not, that's a marinara sauce. I adjusted the colors slightly wrong, but the sauce was indeed very light in colour. I used cherry tomatoes and roma tomatoes, garlic, basil, shallots, salt, extra virgin olive oil, parmesan reggiano, kerrygold butter, sugar, and half of a lemon. I wanted to turn up the acidity but also keep it a little sweet.
It might be the best marinara I've ever made.
