Raw papaya chutney also known as plastic chutney in Bengal. The reason it is known as plastic chutney is because of the transparency of the papaya once it gets cooked. Most interesting part is, it is cooked with only water, sugar and some lemon juice and ofcourse papaya the main ingredient. The end result is just awesome. This chutney is used as a accompaniment with papad or any snack or it is served at the end of your meal just before serving the dessert. Do try and make this chutney. Classic Mac and Cheese from the Bowl Company seemed like an appropriate way to kick off my food blog. When I spend more than 40 minutes of my highly unproductive day trying to decide what to eat, y’all can tell the choice has gotta be special! A lazy afternoon, when all you want to do is sit back and experience some love and comfort-which makes you feel all fuzzy on the inside-that’s what Mac and Cheese is all about. I personally had great expectations from this particular Mac and Cheese. The Bowl Company aces their packaging and delivers their food hot, every single time. The moment the lid was slid off, I was encompassed in the aroma of herbs and the sight of creamy cheese. As I dipped my fork between the layers and layers of all things beautiful , and took my first bite: I was pretty happy . I assume you’ll expected a more enthusiastic reaction after the intense build up. Well that’s exactly how I felt when I ate this Mac and Cheese. Don’t get me wrong. It tasted good and was worth every penny. But did it blow my mind away? No not really. The macaroni was cooked to perfection, but the béchamel sauce was missing the kick that comes from cheddar cheese . It was like a dish which is neither Mac and Cheese- due to lack of cheddar cheese nor Pasta in White Sauce- due to excess cheese in the sauce. They got the body and the consistency right, but sadly it lacked in soul. Cheddar Cheese is the soul of Mac and Cheese, and it ain’t a Mac ’n’ Cheese if the cheese isn’t right. Overall I’d give it a 2/5 , cause even thought it didn’t quite taste like Mac and Cheese , it still tasted pretty good. So if you’re in the mood for some hot creamy pasta, I’d say go for it . CHANGEZI MURGH GRAVY Ingredients: -MARINATION: •chicken- 1kg with bones •1tbsp- gg paste •100gms- thick yoghurt. •1tbsp- red chilli pdr •salt to taste •2 large lemons- juiced -GRAVY PREPARATION: •4 onions- saute golden brown •handful- cashews , add to same pan -Grind into fine paste with few tbsps milk -SPICES: •1tbsp-zeera, dhaniya pdr •1tbsp- white pepper pdr •1& 1/2 tbsp- crushed kasuri methi (imp ingred of the dish) •salt to taste. METHOD: •In a large nonstick skillet add the marinated chicken without adding any oil, cook till it dries up, remove the pieces in a seprate bowl. •Now add some ghee/ oil to the same skillet, add 4 tomatoes pureed,add milk (5 mins later) & cook till it thickens. •Add the onions and cashew paste to the purée, spices and simmer for 3-4 mins, keep adding few tbsbs milk to keep it semi thick •Now add the chicken to the gravy, kasuri methi & a tbsp ghee, dollop of cream, green chillies, add water according to the consistency needed and simmer for another 5 mins. •Serve with parantha or plain basmati rice. Sharing a throwback of when I made my babies first birthday cake 😍🎂🤱. I feel this is a significant photo/time of where the passion started for me. Being a mama motivated me big time to create in the kitchen. I love watching my girls develop tastes and a spark of curiosity for good food. I love being able to do things myself because they deserved all the time and effort I could give. Plus I was fortunately able to stay home and be a full time mama for both of them during the baby and toddler years. Creating something for them to eat has always been my way of actioning my love for them. Whether it be a birthday cake I'd spend hours trying to decorate, homemade baby rusks, a good old titti (5 and a 1/2 consecutive years to be exact) or a pot of something hearty. Pre-mama days were nothing to boast about. My partner and I would live off anything. Often drive thrus and sweet things as you do. KEEMA BIRYANI Ingredients: -Keema Marination: •1kg- keema (minced meat) •3-4- green chillies, handful-mint & corriander(grind all into a paste). •1tbsp-gg paste •1 1/2tbsp- red chilli pdr •1tbsp- zeera,dhaniya pdr •1tsp-haldi pdr, garam masala pdr •2cups- yoghurt •2lemons- juiced •Handful- Fried onions, 4-5tbsps ghee & oil -PREPARATION: •After 30mins of marination, place the vessel on high flame initially (5mins) & simmer for 15mins stirring at intervals & let the oil surface. ( should be cooked 85%) RICE PREPARATION: •750gms- Basmati Rice •Boil 3 litres of water, add 2tbsp salt, whole garam masala,shah zeera, green chillies, mint & corrander •Cook rice until 75% done. •Layer rice on the simmering keema, add saffron milk, fried onion and greens. •Cook on med flame for 2-3 mins and simmer for another 5 mins. SOFIYANI CHICKEN BIRYANI Ingredients: •1.5kg- chicken with bones (large pieces preferably) •1.5kg- Basmati rice -MASALA Paste’s: •4 onions - paste •100gms- cashews, Almonds (paste), dilute with 200gms cream •150gms khoa- dilute with 1/2 cup milk •250gms- thick yoghurt (whisked) •8-10- green chillies- paste. -SPICES: •1tsp- Shah zeera (caraway seeds) •Whole garam masala (2 cinnamon , few cloves, green cardamom, 2 bay leaves( •2tbsp- gg paste •1tbsp- green chilli paste, White pepper pdr,kasuri methi(crushed) •salt to taste •1tsp- nutmeg pdr -CHICKEN PREPERATION: •In a large skillet add, 3-5 tbsp ghee and oil, onion paste, whole garam masala, cook until slightly brown, add chicken, gg paste,cook well till it caramelises. •Add thick yoghurt, green chilli paste, simmer & cook till the oil starts to surface, •Add rest of the spices, other 2 white pastes (nuts, cream & khoa), mix gently, simmer & cook till the gravy is nice and thickk. -RICE PREPARATION: •In a vessel add water, shah zeera, salt. •In a muslin cloth- add whole garam masala, green chillies, chicken cube(maggi) knot it up and add to the boiling water for the stock to prepare. •Add 1 cup milk, 1tbsp-kewra water, lime juice. •Now add the Basmati rice and cook until 75% done ( as the chicken is already tender). -LAYERING: (3 rice layers) •In another large vessel, add 2tbsp oil+ half cup water before rice layering. •Layer 1/3 of the rice and add half of chicken gravy, pour few drops of saffron color ( diluted in milk) •Layer another half of the rice, add rest of the chicken gravy and layer again with the remaining rice, pour saffron drops again, garnish with fried onions mint & corriander, seal the vessel and cook on high for 2-3 mins and simmer for next 10mins. -Serve with mirchiyon ka salan. •Can also layer all of the chicken between rice (2 layers). Tip: After taking of the flame let the Briyani sit for a good 10-15mins to set before you mix and start serving, this is for the rice to not break or chicken get mushy.

Besucht haben wir das Restaurant Noa in Hardt, das mit wunderbarer Balkanküche auftrumpft. So viel schon Vorweg, Fleischfans kommen hier auf ihre Kosten. Auf der Karte lassen sich jedoch auch einige vegetarische und Fischgerichte finden. Wer bodenständige Küche, in gepflegtem Ambiente und mit freundlichem Service schätzt, der sollte als bald als möglich im Restaurant Noa einkehren. Getestet haben wir den Balkanklassiker Cevapcici und einen Pfefferspieß mit Hähnchen, Rind und Schwein. Vorweg gab es einen kleinen Salat, nichts Außergewöhnliches aber sehr frisch. Dazu wird ein Saucentrio (Zaziki, Knoblauch in Öl, Eine Art Steaksauce) und frisch gebackenes Brot gereicht. Beide Hauptgerichte kamen mit knusprigen Pommes und fruchtig-tomatigem Djuvecreis. Die Cevapcici haben uns tatsächlich sehr positiv überrascht. Handgemacht und alles andere als TK- Einheitsbrei (sollte in einem Restaurant selbstverständlich sein, haben wir aber auch schon anders erlebt). Die Portionsgröße ist wirklich für den großen Hunger: vier wunderbar gewürzte und knusprig gebratene, große Cevapcici mit Pommes und Reis - absolut lecker und macht mehr als satt! Auch der getestete Pfefferspieß ist alles andere als ein kleiner Snack. Das am Spieß servierte Fleischtrio wird ergänzt durch Paprika und Zwiebeln. Die Fleischqualität sowie, die Garpunkte waren gut. Auch geschmacklich hat dieses Gericht sehr überzeugt. Alles in allem haben wir für überraschend günstige Preise, wunderbare frische Gerichte erhalten. Die helle und freundliche Einrichtung hat uns gut gefallen und stellt einen Gegensatz zur rustikalen Balkanküche dar.
