When I first started cooking I was doing an apprenticeship at a restaurant called Silks in the Planters Inn in Charleston SC. It was 1984 and Chef Paul Prudhomme had become famous for his Louisiana cooking. So my chef had put Blackened Redfish and Prudhommes Shrimp Diane on his opening menu. I will never forget the smell of that spice laden fish hitting the dry cast iron. I had never eaten anything like that before and was fascinated with the rich taste as well as the process of cooking in a dry pan. So 34 years (omg) later I will be starting a special southern tasting menu tonight and will get to relive some of my earliest cooking memories. Much respect for Chef Paul - he really made his mark on our world .

Blackening some fresh redfish for dinner tonight. Most people think that when they look for menu options, “blackened” means healthier. This isn’t truly the case as real Cajun blackened dishes are usually done so in butter. Of course—they don’t HAVE to be done that way. I lighten it up by using nonstick spray and a drizzle of olive oil which removes a ton of saturated fat, and of course thusly points. The real key are these elements: 💜Lots of seasoning (#paulprudhomme is my fave) 💜Smoking Hot skillet (us Cajun folk swear by black cast iron 😆) 💜A little fat (olive oil for me) 💜Sear without flipping too many times 💜Don’t overcrowd pan with too many filets And...enjoy. High-Profile British Restaurant Group Makes Its Way to New York #FACTS AUG. 27, 2018 Since it launched in 2006, D&D London has emerged as one of the most prominent dining companies in its namesake city, with more than 30 restaurants.
