We are going to be making this grain-free granola from @epicurious
this weekend. With seeds and nuts as a base, it looks like it has some serious crunch. 👊🏼 Plus, we love anything with cardamom in it. 💜
-3 cups unsweetened coconut flakes
-1 1/2cups sliced almonds
-1 cup raw pepitas
-1/2 cup sesame seeds
-1/2 cup sunflowers seeds
-2 tbsp chia seeds
-3/4 tsp kosher salt
-1/2 tsp cinnamon
- 1/8 tsp cardamom
-1/2 cup honey
-2 tbsp olive oil
-1 tsp vanilla extract
Preheat oven to 300 degrees. Line a rimmed baking sheet with parchment paper.
Toss coconut, almonds, pepitas, sesame seeds, chia and sunflower seeds in a bowl with salt, cinnamon and cardamom.
Cool honey, oil and vanilla in a small pot over medium heat, stirring occasionally, until hot and easily pourable. Pour over coconut mixture and stir to combine.
Spread in baking sheet and bake, stirring once halfway through, until golden brown and crisp, about 25 minutes.
Keeps for one week in a covered container at room temp. 😊😊😊
