Pesto Stirfry Heaven!!! My signature dish... according to everyone who's eaten it. 😋❤😋
Delicious healthy food everyday is easy and possible. 🌟
This took me about 15-minutes. A rainbow of colours, plenty of vitamins, minerals, fibre, healthy fats and flavour. Topped with toasted cashew nuts - YUM!!!🌶🥦🍆
RECIPE: especially for @mandalish80
💛Garlic + Shallots (use the amount YOU like - I love lots of garlic and a few shallots)
💛Any vegetables YOU like: here I've used red pepper, black radish, carrot, courgette, broccoli, snap peas and chard.
💛Organic Chicken (150g). If you are vegan or veggie, simply leave this out, it's just as amazing!
💛Optional: Rice Penne or Water Noodles
💛Vegan Pesto (few large spoonfuls)
💛Fresh herbs (basil or coriander)
▶️Toast a handful or two of cashews on low heat in a pan - put to the side once golden brown
▶️Put brown rice penne on to cook (about 100g for 2-serves)
▶️Stirfry garlic and shallots in 1 Tablespoon of coconut oil for a few minutes
▶️Add chicken (if using) and brown (few mins)
▶️Add firmer veggies 1st (carrot, broccoli, radish) and stirfry for 5-mins
▶️Add the rest of the veg (pepper, snap peas, chard, courgette) and stirfry for a few more minutes
▶️Drain pasta and add to the pan with a few heaped spoons of pesto, rock salt and pepper to taste
▶️Stir well and serve with fresh herbs, a squeeze of lime or lemon juice and toasted cashews.
