AVOCADO KALE SPINACH & WALNUT “CHEESY” VEGAN PESTO 🥑🍃
HOLY MOTHER OF PESTO!!!!!! That’s all I have to say!
Not only is this pesto super clean & healthy, but it’s SO beyond creamy that it can double as a pasta sauce! You can use it with your fave plant-based pasta or quinoa, zoodles, slathered on your morning toast, as a dip for veggies or as a spread for rice cakes topped with some nutritional yeast, tomatoes, microgreens or chia seeds!
The trick with this baby is to swap the generic olive oil in pesto for avocado as the healthy fat source (& a tbsp. of walnuts!). This creates a super creamy texture, makes blending easy & still gives you your dose of healthy fats!
Oh & I also swapped the generic Parmesan for nutritional yeast & boy does this babe taste cheesy! (plus you get an added dose of protein & B12!)
•1/2 heaping handful of fresh spinach
•1/2 heaping handful of fresh kale
•1 medium ripe avocado
•2-3 cloves of fresh garlic
•The juice of one lemon
•1/4 cup of filtered water (& more, as necessary, to make blending easier)
•2 heaping tbsp. Nutritional yeast
•Sea salt & black pepper to taste
•Add all ingredients to your blender / food processor & blend until fully combined, incorporated & creamy! If you’re having trouble blending, add more water, lemon or olive oil (if you prefer). Start with 1 tbsp. at a time (so that you don’t water it down).
Parmesan showers 🧀❄️
We had a later start today, and the weather started to deteriorate at lunch with heavy snowfall and poor visibility. The snowfall today has been insane and I bloody love it!!! 😍🙌🏼 So, as usual with my pasta meals, I gave a generous showering of Parmesan (...several times *only a fraction pictured* 🙈) aaaand you can bet your bottom dolla' I had a big bowl of hazelnut ice cream for dessert 🍨🎊
