Nobody likes Mondays but 30 minute meals make the day so much better! I'm slowly mastering the art of quick meals when I forget to meal prep.
My new kitchen favorite is a pesto tossed linguini with sundried tomatoes, spinach, fresh garlic and shrimp. The only thing missing was a dash of fresh parm! *drools in after thought* It's not only tasty but healthy and kid friendly (the little person tore it up y'all).
