Perfect Seared Branzino with a Brussels Sprouts salad with Parmesan and Dijon Sauce . This is such an easy dish to have on the holiday as a light and fresh lunch. Easiest quickest tastiest fish you will ever make . ——————————————————— Take 2 fillets of branzino with skin and rinse it with cold water. Pat it dry with bounty and season with salt and pepper . Lay one fillet on top of the other with the skin facing up. Grill the fish on a nonstick pan with olive oil spray and cook until you see the edges get golden and crispy about 3 minutes. Flip and let it get golden add in half tbsp of butter or , coconut oil flavored butter , or earth balance and baste the fish by tilting the pan to cover the fish with butter . Let it get more crispy for another 3 -4 minutes. Remove from the flame and let it sit on a griddle to remove excess oil and to keep the skin crispy and not wet from the excess oil. Salad : Brussels Sprouts shaved Craisins Celery Sunflower seeds Shaved Parmesan Sauce: Dijon Lemon Garlic Maple syrup Salt and pepper Marinate the slaw with the sauce and massage it till it’s soft then add remaining ingredients and toss . The massaging helps with digestion. Enjoy! Make sure to squeeze lemon on the fish before serving and serve on the side toasted pita chips and squeeze with lemon

Whole Wheat & Coconut ladoos!! A very popular North Indian sweet, the one which I have grown up eating and my favorite. These ladoos are made by sauteing whole wheat flour in oodles of ghee till fragrant and nutty. Then goes in powdered coconut, fried & chopped nuts, cardamom powder, littlr dry ginger powder. Off the flame we add sugar and then mix n mix well. Taking little mixture form ladoos while still hot and roll in powdered almond. Hands turn all red but worth all the efforts, patience and love that goes into the making. Store well for few days but these won't last that long. Mine already half gone, these ladoos are that good. this fig & feta salad was styled and shot by @devamadeo who recently did a virtual one-on-one Lightroom editing lesson with me (swipe right to see the before image) . During our pre-lesson consultation, Dev expressed to me that she wanted her photos to have more 'pop' and that she wanted to learn how I use Lightroom to achieve my signature style . During our lesson I taught her all of my Lightroom editing tricks and specifically how to address her challenges with her camera settings and post-processing. We kicked today off with our little Wednesday morning ritual, taking turns to cook each other a big breakfast before work. This morning I was treated to spinach and eggs on crusty bread and I couldn’t think of a better way to start hump day. I didn’t manage to get a picture unfortunately so here’s one of a delicious treat from the weekend that I still haven’t stopped dreaming about; sage waffle with squash, smoked chilli jelly and a peanut butter whip (yes it’s as dreamy as it sounds). Almonds are a great flavour enhancer. They add an earthy and nutty note to almost anything from sweet to sour. I’d roasted these babes for a tart I made. The smell swirling in the kitchen was great. I first used this book as part of my #52cookerybooks challenge on week 36. I was inspired to return to the book after having the pleasure of listening to Rachel talk about it @ludlowfood. Rachel describes the soup as ‘Pure, simple and good. Creamy buttery and spicy corn on the cob makes for perfect side dish...we had Mexican tomato rice with this, you can have anything from tacos to Pastas and it will make an amazing side dish with your main course....hope you guys enjoy making and having them as much we did... . . . Recipe: Ingredients: 2 corn ears Paprika or red chilli powder to taste ( I used MDH degi mirch) Juice of 1/2 lemon 2-3 tbs mayo Cotija cheese (I was out of cotija so used Ricotta cheese instead) 1 tbs butter Method: 1. Grill corn for 15 to 20 minutes, on the stove top until tender, turning a couple of times to char evenly. 2. In a small bowl whisk chili powder into mayonnaise and set aside. 3. Transfer corn to a serving platter. Rub cold butter over the cov. 4. In a bowl whisk together mayonnaise and chilli powder. 5. Then slather each cob evenly with chili mayonnaise mixture. Sprinkle cotija cheese or ricotta cheese). Serve with lime wedges. I like to rub the lemon wedges squeezing some lemon juice over the cob. 4. • œuf cocotte à la truffe et son écrasé de pommes de terre • Commencez par couper une truffe et la mettre en petits morceaux dans un pot de crème fraîche avec sel et poivre. Épluchez et faites cuire des pommes de terre à l’eau. Pendant ce temps là préchauffer le four à 140 degrés. Dans 2 ramequins, mettre un œuf sans casser le jaune. Recouvrir de la crème fraîche avec du sel et poivre. Mettre les 2 ramequins dans un bar rempli d’eau et au four pendant 15 minutes. Les pommes de terre doivent être cuites donc écrasez les avec du beurre et du beurre de truffe si vous avez 😋 #truffe

After seeing deliciously creamy hummus on Violas @thesunshineeatery feed I really craved it. 🤤 I didn’t have chickpeas at home so I made it with kidney beans instead, quite good as well if you ask me 👌🏻 So kidney bean hummus on tortilla with leftover broccoli, corn & sunflower seeds it is for dinner. (Kinda weird but delicious mixture - you gotta eat what’s in the fridge, right? ✌🏻) • For all my fellow students - I hope you had a great start today ✨

It’s my official first day of school today. I am actually more nervous for today than I was for orientation last Friday. Maybe because today feels more real. More the start of something new, something I have been chasing for years and years and never really thought I would ever be able to do... 🙏🏻 I’m terrified, I’m excited, I’m nervous, I’m proud, but most of all I’m grateful. I’m grateful to myself for having the courage to step into a dream, to push through my insecurities and challenge myself. It’s going to be a long hard two years, as much as I tell myself I know, I’m sure I have no idea what all I will have to give up to make this dream come true. But in the grand scheme of things it’s only two years and I have so much more to gain than lose... 💫 Most of all though I am grateful to Paul, he is my rock and my biggest supporter. Not only will I be sacrificing over the two years but he inevitably will be as well. I brought up me going back to school kinda on a “imagine I did, how crazy would that be, I totally can’t though, what do you want for dinner”. His no hesitation response was a complete serious “you know, you probably should go back, it’s something you would be really good at”. I think I was a bit dumbfounded, but the next day I went down to the school to see if there was even room and talk about the program, within 24 hours I had put in my application! Imagine a red-nosed, swollen eyed me wrapped up in D’s unicorn and rainbow blanket, reading A thousand splendid suns and sipping on this delightful lil thing here. A Moroccan spiced roasted pumpkin soup to make me feel slightly less like death warmed up. That would be ideal, wouldn’t it!? Reality : Drinking this for lunch & dinner coz no energy to cook, I have 🤧 over 200 times today thanks to horrid allergies, have a head that’s been spinning since I got up, down with fever and sore throat since yesterday, a splitting migraine from the incessant sneezing and apparently meds have just stopped working for me. And as if that wasn’t gift enough from the universe, I gotta do the single mom thing again for a week and that too during exam week. Turns out adulting is tough AF on certain days. matcha will forever be our favorite way to start the day... not just for it's flavor but for it's incredible health benefits...matcha has truly become a way of life for us . Each morning we fill our mugs with organic @myencha matcha combined with lightly sweetened non-dairy milk (vanilla soy milk is our current fav) and it is so good, we literally wake up with anticipation for our morning matcha 💚 . Seeing all the wild mushrooms that @beatricegarvey is foraging over in Sweden right now has got these little chanterelles we found when we visited in June looking rather inferior! ⠀ However, I will not forget our excitement when we discovered these down the road from Bea and Jake’s house and how delicious they were for dinner with pasta that night. 💛
Happy Monday folks ✨ Für viele von uns hat heute das Studium wieder begonnen und damit auch bald wieder eine ganze Menge Stress. Ich probiere auch in diesen Zeiten möglichst immer selbst zu kochen und am Mittag etwas mitzunehmen. Nach einer Nachtschicht kommt das aber meistens etwas zu kurz und es ist super angenehm einfach etwas bestellen zu können. Bevorzugter weise natürlich etwas Leckeres wie die Bowls von @happybowls.ch . Ich durfte letzte Woche einen Teil ihres Menüs probieren (ich hatte die Mexican Rice Bowl, den Vegan Bagel und die Kichererbsensuppe). Speziell die Bowl fand ich richtig gut - eine leckere Mischung aus frischem und gekochtem Gemüse mit Reis. 👌🏻 Und keine Angst, das alles reicht prima um gleich den Hunger von zwei Personen zu stillen (SO viel esse ich dann doch nicht ;) ) 🍜🍛🥙 (Werbung / Produktsponsoring)

I'm finally starting to crawl out of my creative hole. I didn't fall off the planet, but it certainly felt like it over the past few months. I took a much needed break from the social platforms a bit to just focus on some things, and to just sit still for a while. Sitting still has never really been a strong suit of mine, but I've been practicing and really enjoying it. It's definitely something I've had to learn, but I'm finally understanding how much I need it now and then, more often that not. • Our lives move so quickly most times, we end up putting off or outright forgetting to do things like taking care of ourselves. The last few months I've been doing just that - I've lost some annoying weight that wouldn't seem to budge no matter how hard I tried (altho - was I really trying if it wasn't budging?? Prob not, but we'll leave that topic for another day...), and I started putting my foot down to no longer letting superfluous things distract me and eat up my precious time, especially time that I deserve to use to take care of me. That means sticking to a relatively strict schedule with the day job, and making sure I shake off that stress in the healthiest ways, like sweating it out at the gym. I have also grown to truly looooooove yoga 🧘🏻‍♀️ . For years, I knew a few friends who swore by it as really truly helping to reset your body AND mind. Now, I seek out a yoga class or two each week to help me deal with the constant noise in life. I'm officially addicted. • I am sad that the summer is passed already, and I'm still trying to hold on tight to it for the last few official days. These #heirloom tomatoes 🍅 are proof. I can't ever get enough of summer tomatoes, especially the lovely heirlooms - so much so, that my fridge was overflowing with them. Determined to eat every single one of them, I decided to zhush them up a bit with this tart, going a bit extra with the burrata because WHY NOT, amirite?
