Good health isn’t just about eating healthy. Its about creating healthy thoughts and moving your body. When you begin to think in a more positive way and exercise, you will begin to feel whole. Exercise doesn’t mean doing intense workouts all the time. Go on a walk, do yoga, ride your bike, dance while you’re cooking. If you go into a workout thinking, I’m doing this to lose weight so I can be happy, I’m doing this to look like so and so, I’m doing this because I have to-You are never going to be happy with yourself. I learned this hard way
I used to look at myself in the mirror and was unable to recognize my reflection because I was so disgusted with my appearance. I would spend hours at the gym, hours shaming my body, hours crying because I thought I was fat. Even at my lowest weight I wanted to be skinner. Now my relationship with fitness and myself is so much healthier. It was a very dark time in my life and it felt like it was never going to end. It was a process, but when I learned to accept and love myself, my whole life transformed. I went a long period without working out because I didn’t care. I have finally found balance in my life. Now I workout because I love the feeling, not because I have to.
Workout because it makes you happy. Workout because it makes you feel good. Workout because it makes you stronger. Workout to challenge yourself. Do workouts you like, not because everyone else is doing it. Love who you are at this very moment. If you continue to tell yourself you will love YOU when you weigh a specific weight or look a certain way, you will never love yourself when you reach your “goal”
🌿Dinner is @eatbanza
rigatoni with marinara (underneath the veggies), and minced garlic, mushrooms, red bell pepper, onion, and rosemary! Super quick and sooo delicious 🤤🍝🍄💛
to the #veganpesto
pasta I made as a side for Thanksgiving. I sautéed onions, green peppers and greens in a frying pan seasoned with salt and pepper as I boiled farafelle pasta. After the veggies and pasta were finished cooking, I added the pasta and veggies to a large bowl and mixed in fresh grape tomatoes with @traderjoes
vegan kale pesto. I also sprinkled @goveggiefoods #veganparmesan
cheese on top! Its a quick and easy meal.
Plant based nutrition for office plankton like me. I spend 1.5 hours to get to the office. I spend 8 hours in the office. I spend 2.5 hours to come back office. Cooking time? Fuck. Not in this life. My “cooking” is 15 minutes a day. Otherwise - I cannot sustain it. My advice to others? Stop fucking work. Sell your useless possessions and relocate to India or Thai. Fuck.

This first photo is how I used to portion rice [a poor cup]. The second is how I portion it nowadays [actually I don’t portion it, I just eat it].
I was so excited to try the new @oceanhuggerfoods #ahimi
sushi roll from @bluesushisakegrill
! It was great! Even my non-vegan hubby thought it tasted like maguro tuna. It's crazy that it's made from tomatoes! Don't you love all the advances in vegan food options?? I also got the Shitake to Me Roll and the Crunchy Cabbage Roll. Double tap if you love #vegansushi

Dear Matcha Tea Lattes, YOU ROCK. For realz. Matcha tea is so so good for you. It’s high in antioxidants, boosts your immune system, clears your skin and stimulates metabolism. I’ve been adding ashwaghanda & spirulina to my matcha lattes and it has changed my life. When I’m not sipping on a matcha latte with my breakfast, I am drinking a protein shake with ashwaghanda and spriulina. I’ve been using ashwaghanda for almost two months and it has balanced my hormones (along with Evening Primrose oil). Since I’ve been off of birth control, my hormones/ period have been out of line. One year later and my period is back on track 🙌🏽 My anxiety has reduced and sleep/ arthritis has improved. I can go on and on about this powerful herb, so I highly suggest you look into it. It has endless benefits 🦋💘
1/2 tsp matcha powder
1/2 tsp ashwagandha powder
1/2 tsp spirulina
1 tbs coconut butter
1 tbs agave (you can use any sweetener)
2 cups hot water
1. Put all ingredients inside blender and pulse for 10-20 seconds.
2. Serve in mug & enjoy 🍵
Nothing says good morning like cinnamon rolls with homemade cream cheese frosting 💕 Baking seasons is here and I am so happy. Treat yo self extra this month. I LOVE @annieshomegrown
cinnamon rolls. They’re delicious, crispy on the outside, soft on the inside & obvi vegan. I’m not a huge fan of the frosting that comes with the rolls, so I like to make my own. I’m also super picky when it comes to frosting. But I mean...you seriously cannot beat a good homemade cream cheese frosting 🤤
1/2 cup vegan butter, softened to room temperature
1-8oz container vegan cream cheese ( I like to use toffuti for my cream cheese frosting)
3 cups sifted organic powder sugar
1 tsp vanilla extract
1. In a large bowl, add in butter and whisk together. Then add in cream cheese and mix until smooth.
2. Add sugar in 1 cup increments. You can add in more than 3 cups. You want this frosty to be thick.
I finally made it over to @yardhouse
in Addison (there's multiple locations) and was excited to try the Gardein menu, including Mac n cheeze, an orange chick'n bowl, chick'n fried rice bowl, BBQ chick'n pizza, chick'n tenders/wings, vegan burger, chick'n avocado sandwich and more!! I chose the #veganchicken
wings with Buffalo and BBQ sauces. It was pretty good and I was so grateful to have so many options. I wish I just chose one sauce so I could have it tossed in sauce, but that's a thing to know for next time I visit.
Everyone is getting sick and I’m over here trying not to 🤧 I posted this recipe back in September and it is my favorite! It’s so simple, delicious and healing. I’ve been sipping on the broth solely and it’s bomb.com. Every ingredient in this recipe is going to heal your body whether you’re sick or not. This soup is going to improve your immune system and reduce inflammation. It is filled with antioxidants, antibacterial, antiviral properties ♥️
2C baby carrots
1 medium onion, peeled and finely chopped
1 large leek, peeled and chopped into 1-inch chunks; use white and pale green parts
4 potatoes, unpeeled and chopped
8oz mushrooms, chopped in half
2-3 pieces of fresh ginger, add whole and remove midway through simmering
1-2 tbs olive oil
1 tbs ground turmeric
1 tbs ground black pepper
2-4 tsp pink salt
About 6 quarts of water, or to nearly the top of your pot
1. In a large pot, combine onions, leeks, oil, pepper and turmeric. Mix on high for about 3 minutes
2. Add in all of your veggies and stir for about 2 minutes
3. Pour in water and add salt + ginger
4. Simmer covered over medium heat for about 30 minutes. Taste soup and based on your preference for ginger intensity remove the piece of ginger and discard
5. Simmer soup for another 30-1 hour, or until all veggies are soft. During simmering, if broth level looks low, add in more water
6. When soup is ready, turn off heat and serve in a bowl. Squeeze lemon to bring out flavor
Side note: this soup has a lot of broth, so store some broth in a separate container. I love to sip on the broth to receive all of the soup benefits!
