RED PEPPER CASHEW ALFREDO This vegan recipe is so 'cheesy' and filled with veggies! It took less than 20 minutes to make which is an added bonus 🙌🏼 Want the #strongboldhealthy recipe?! . INGREDIENTS 🔹2/3 cup raw cashews 🔹1 cup water 🔹4 garlic cloves (chopped) 🔹2 red bell peppers (seeded & chopped) 🔹1 medium sweet onion (chopped) 🔹2 tsp. Extra virgin olive oil 🔹1 1/3 cup original pea milk (@ripplefoods ) 🔹1/3 cup nutritional yeast 🔹1 tsp. Sea salt 🔹1/2 tsp. Black pepper 🔹1 tsp. Lemon juice 🔹2-3 tbsp. Corn starch 🔹3 medium zucchini (ends cut & spiraled) 🔹3 cups fresh spinach 🔹1 cup cherry tomatoes (halved) 🔹Crushed red pepper OR Old Bay 🔹Basil . DIRECTIONS 1. Boil the water in a small pan. Once boiled, remove from stove and add the cashews to soak. Set aside. 2. Add the oil to a sauce pan over medium heat. Saute the peppers and onions until tender and semi-browned. Then add the garlic. Cook until fragrant. Set aside to cool. 3. In a blender, add the milk, yeast, salt, pepper and lemon juice. Then add the cooled peppers, onions and garlic. Blend until smooth and creamy. Add more salt and pepper if desired. Set aside. 4. In the sauce pan over medium heat, add the zucchini noodles. Cook for 3-5 minutes until tender. Then add the blended sauce. As the sauce heats, it will thicken. If you'd like a thicker sauce, add 1 tbsp. of corn starch at a time until you reach a desired consistency. 5. Add in the spinach and cook until wilted. Then add the tomatoes. Continue cooking until warmed. 6. Top the Alfredo with either crushed red pepper OR if you want to Maryland-ize the meal, add old bay. Crushed red pepper will make the dish slightly spicy and old bay will make it slightly salty. 7. CHOC NICE CREAM 🍫💕 . 2 frozen bananas 2 scoops choc protein powder 1 tbs organic cocao 2 tbs 100% peanut butter 1 tbs maple syrup Organic almond milk . So many health conditions are related to and directly effect or your digestive system. If you don’t know about pelvic floor dysfunction, you probably know someone who has it. . What is the pelvic floor? It’s a group of muscles that attach to the pelvic bone. Like a sling, these muscles support the organs in the pelvis. The pelvic floor must relax to allow for urination, bowel movements, and, in women, sexual intercourse. CONSTIPATION is part of a vicious cycle that causes people with this issue A LOT of pain and problems. 💩🚫 . One of my favorite people shared her often debilitating history with pelvic floor dysfunction. “I have chronic pelvic floor pain and when the pain gets really bad, my intestines hold so much tension that I get constipated, which makes the pain even worse. I’ve spent so many days in bed suffering, I don’t even know how much time in total I’ve lost due to this problem. Getting a COLONIC is one of the few things that can relieve the pain once it is at a certain point. I’ve gone in to get a treatment in so much pain it hurt to walk or do anything, and left with NO pain for the rest of the day. The pelvic pain might never be cured or go away completely but I’m so grateful treating the constipation is unbelievably helpful when the pain is unbearable.” . I used to think protein powder was for gym lovers who just couuuuuldn’t live without their ‘pre-workout’. I stand corrected. When you eat a plant-based diet, it can sometimes be challenging to find protein rich options for breakfast. I personally love eating something refreshing, like fruit, in the morning. Oatmeal covered in nut butter is just not my go-to. So I’ve started adding protein powder to my smoothies and it’s made a significant difference in keep me satiated until lunch (shocking, I know). BUT, not all protein powders are created equal. The market is sooo saturated, so you’ve got to do some research. @minimalistbaker has a great blog post that helped me make my decision, and I’d definitely recommend giving it a read if you’re torn like I was. I’ve landed on the @gardenoflife Raw Organic protein. Loving it. Which one(s) do you use or are thinking of trying? Tell me! 🌱☀️

Yu Choy Sum. One of my favorite cold-weather vegetables! . It's been REALLY cold here for the last couple of days (I'm currently huddled under a fuzzy blanket with my snoring chihuahua and a hot cup of chamomile tea!) and we have snow in the forecast for tomorrow! This will be the earliest snow here in Northeastern Pennsylvania since I moved here in 2012 and I'm really not physically or emotionally prepared to wake up and see snow all over the ground. (I'm also guessing the little furry guy next to me won't be very happy to have wet, freezing paws tomorrow either! So, tonight I'll be spending some time digging out the winter gloves, scarves, parkas, and snow boots from the back of my closet! (*mental note to self* find the dog's boots too!) . But with these blustery and frigid days comes some really wonderful vegetables which just don't thrive during those hot summer months! I LOVE large bowls of sauteed Asian greens with fragrant aromatics like ginger, galangal (that's a fragrant Thai ginger, in case you didn't know), and tons of garlic with maybe a spoonful of my homemade sweet, and spicy gochujang (Korean chili paste). Yu choy sum is similarly sweet like Chinese broccoli, but a little more peppery and almost has the texture of steamed asparagus when cooked. It's perfect for a cold night! . I think I may have to go "full-comfort-food-mode" tonight and serve it over a pile of mashed rutabaga and sweet potato! Sounds like heaven, doesn't it! . Protein Smoothie: . • 10 oz unsweetened plant milk (I used almond milk) . • 1/2 TB of ground flax seeds (or whole) . • Handful of baby kale mix (or baby spinach) . Blend well . • Add a scoop of a good quality vegan protein powder. I have two on hand Vega One and Garden of Life Raw Organic Fit, both are a vanilla flavor. Today I used the @gardenoflife powder. . Blend well . • Add 1 cup of the Antioxidant Blend of frozen berries from Target. It has strawberries, blueberries, pomegranate seeds, cherries and red raspberries in it. (Must of had more blueberries in my scoop, my smoothie is dark today) . • Add half of a frozen banana . Blend well. Enjoy🌱 . I usually add half of a single serve container of dairy free Greek yogurt which makes it even more creamy and delicious. But I was out. Time to run to the store!

I couldn’t post as much as I wanted but today is World Diabetes Day! 🌎 ⠀ As a diabetes health coach and health promoter, my main goal is to teach people how to stay away from disease. 🚫 ⠀ It is my life mission to spread the word about plant-based, whole-food nutrition and the vast amount of benefits it provides. 🍎 ⠀ We need to start thinking of fruits and vegetables as our main ally to reverse type 2 diabetes. 🔙 ⠀ Think about this quote for a minute: “If medicine worked, you wouldn’t need to refill your prescription” ⠀ Diabetes medications are only masking the problem but they are not helping reverse the root cause of the disease. 👏🏼 ⠀ You want to stop taking pills daily? 💊 ⠀ Then, let food be your medicine! ⠀ Who thinks that our pharmacies should look like this?? 🔝

What kind of world would we live in if no one had differing opinions? ⠀ -⠀ Although sometimes it's 'annoying' when people don't agree with us on certain topics and choices in life, it's entirely necessary. ⠀ -⠀ Individuality is what makes us as human beings so special and interesting. Take, for example, social media. Imagine if everyone on instagram had the exact same feed, and talked about the same things. It wouldn’t be diverse or interesting at all, in fact, it wouldn’t exist without individuality. ⠀ -⠀ So don’t be afraid to BE YOURSELF, and express who you are as an individual. And hey, guess what? Some people won’t like you. But that’s ok. You are NEVER going to please everyone, no matter what you do or say. ⠀ -⠀ Life is much better when we are authentic and expressive of our own individuality. Don’t believe me? Try it. #girlboss

💪🏼Do you need expensive protein powders/pre work outs to exercise? Absolutely not! For awhile I was under the impressions that I needed my bag of protein powder or bucket of pre work out to be able to get my work out in or else it wouldn’t go well or I wouldn’t recover well. Yes, you need to eat well when working out and include healthy fats and protein to sustain your body but you don’t NEED to have all these products companies and influencers are telling you you need to have in order to be successful in reaching your fitness goals. 💪🏼After becoming nutritionist and doing further investigation I learned I could make my own pre/post work out drinks at home. Plus they’re healthier bc you don’t have any preservatives/chemicals/unnecessary sugars added in. It’s so sad to see people feel like they can’t work out bc they feel gross after taking their products, can’t afford it or allergic to something in it. Trust me, you don’t need those things, you can work out anyways, make your own at home and be successful! 💪🏼Post coming soon on how to make your own pre/post work out shakes at home with foods you probably already have! But for now: include healthy fats, protein, and some carbs to have a balanced drink to boost you through and recover from your work out! ✨ 💪🏼A word to influencers/coaches who are sharing/promoting products: we want people to have the least amount of barriers toward fitness. Please don’t make people feel like they NEED these products to be successful, but rather the products can be convenient for busy lifestyles and give them a boost if they so choose.
