Today I came up with this lunch idea and it was really delicious! 😋
All you need to do is cut a red pepper in half, spread a little bit of olive oil on it and put it in the oven to roast.
Meanwhile, get our favorite veggies ready to stir-fry. I used carrots, zucchini and portobello mushrooms seasoned with garlic powder, garam massala, turmeric and salt. Stir-fry for some time and add cooked white beans, letting everything cook for about 5 minutes more. After this time, I poured a mixture of cassava flour, nutritional yeast and soy cream over everything to get that "cheese effect". I took it off the heat immediately, added some black pepper and just stirred everything together.
Then, just fill your red pepper with it, add some pineapple chunks, oregano and serve with some hummus.

All the goods:
1 tablespoon butter
1/2 cup finely chopped onion
1 garlic clove, minced
4 cups chicken stock
2 ripe avocados, peeled and mashed
1 teaspoon lime juice
2 cups heavy cream
1/4 teaspoon ground cumin
Salt and pepper
1/4 cup fresh cilantro, chopped

Vegan Macaroni Cheese *Did you know, that leafy greens are the most assimilable sources of protein for our bodies? Remember muscley pop-eye with his Spinach?
To receive maximum ion from leafy greens- eat with Vitamin C foods such as tomatoes or capsicums
First of all… I just have to say; YUM!!! The classic comforting cheesy macaroni from childhood has never been so delicious ☺ I’ve wanted to make Vegan cheesy mac for ages and it turned out better than I’d imagined!
Boil some water for the pasta, and cook according to packet instructions.
To make the creamy sauce; Dice 2 cloves garlic, gently fry in about 2 tbsp. olive oil, then add about 2 tbsp flour. While whisking, add a little of your choice of dairy free milk – I used soy for the neutral flavor- Continue adding more milk, to get all the lumps out. Add as much liquid as you would like to make sauce - about 2 to 3 cups. Add 4 tbsp nutritional yeast, 1 tsp paprika, 1 tsp turmeric, 2 tsp dijon mustard, 1.5 tsp salt. You could leave it here and it’s great just like that. But I added the rest of the cashew sauce from the creamy zucchini noodle dish (the cashew sauce recipe is in my previous post). If it tastes like it’s missing something, add salt! Stir sauce through elbow pasta and enjoy!

Last night, I made a batch of quinoa because my cupboard is getting crazy town + needed a clean out. I ended up not using it + decided to try it out for brekkie.
