Well..... it’s WRONG!

They are great source of vitamin C and B. People tent to be afraid of starch in potatoes, once you cook and cool them, potatoes become loaded with resistant starch. Like fiber, you can’t digest or absorb resistant starch, so your body ferments it when it reaches the large intestine, which triggers your body to burn fat instead of carbohydrates. Resistant starch may improve blood sugar control, digestive health, nutrient absorption and satiety.
