Quick dinner if zoodles, tahini sauce, nutritional yeast, mushrooms, spinach and capers. 🥗
Cashew milk porridge with cashew butter, jam, and blueberries. Is there anything better??
Teriyaki sauce with buckwheat and sweet potatoe soba noodles 🌱 easy to make and super delicious.
For the teriyaki sauce:
soy sauce (i would use tamari or reduced sodium)
coconut flower sugar or any other sweetner (you can also use agave or brown sugar)
garlic chopped finely
Chili finely chopped
2 tdp of corn/potato starch mixed with a little cold water
Juice of 1 orange (optional)
Heat the soy sauce, sugar and rice vinegar in a pan. Add garlic, ginger and chili. Bring to a boil, then reduce heat. Let simmer for 3-4 mins. Then add starch, bring to a boil. It will thicken pretty quickly.. When nice and thick remove from heat and add orange juice.
I served mine with sautéed mushrooms, steamed veggies, raw bell pepper and soba noodles ❤️ throw on some roasted sesame seeds and fresh spring onion!
Love being back in Cardiff because when it comes to eating out there are so many vegan options like Cafe Atma! I used to come here every other week but it’s been so long, their Dahl is to live for 💚
Toast from @avobarlondon
🍞🥑. My fav was the avocado on sourdough toast with coconut labneh, but the beetroot avocado on sweet potato was amazing too 😋
This is a huge step in the right direction 🌱❤️💪🙌
BEST BRILLIANT BIRTHDAY BREAKFAST - in all caps because it was just so delicious 🕺🏻🥞🥑🍽🍵
What better way to celebrate turning 25 than with huevos rancheros, pancakes and minty matcha smoothies @serenitynowcafe
With the cold weather closing in I decided to make a spin on my usually veggie falafel wrap. Cooked sweet potato waffle, grilled Mediterranean veg, and a handful of lightly boiled kale for an extra nutrient punch 🤛🥗 went down a treat for both vegan and omnivore alike 🐰🦁 #vegan #winterfood #poweredbyplants #falafel #veganfood
It was Soren’s first marathon and he’s already asking about which one we’re running next year. 😂

Am I enough? Is being a food blogger really the best way to spend my time on earth?
When innocent men are shot in their homes, children kept from the people they know, the political climate everywhere toxic, sharing cute photos on social seems a bit daft 🙈. I struggle with this issue SO much all the time. .
But I keep thinking of @sethgodin
’s words: ‘’The best way to complain is to make something that matters.’’ It’s helped me see my purpose here on this loud online platform with a tiny bit more clarity🙏🏼.
My aim - always - is to create a space for community and connection and to use the common language of (#plantbased
) food to enable that. It’s why I do the challenges, to get people across the globe, from different religious backgrounds, political convictions and with various approaches to cooking to share what they love with strangers💓.
It’s also why I share what I know the best way I can: So that YOU can create something that matters and let beautiful things spread.
Just wanted to say that🙏🏼. Thank you @perezeats
for capturing me so candidly 💓💓💓. And thank YOU for reading this caption and following along quietly, by pressing the heart button, through your comments or your amazing #eatcaptureshare

After some more time away, I’m back on social media. It’s been nice to distance myself from it, even if only for a week or so and I intend to do this a lot more. As for now, I’m starting my new job and touring the UK so I’ll be super busy but living my best life 💫

- Nettle seeds are one of my favourite wild edibles and medicines.
There are plump green seeds everywhere right now and I’m really enjoying gathering these gifts.
Nettle seeds are a beautiful adaptogen helping with the stress response in the body, strengthen the adrenals and support the kidneys. These tiny beauties are also full of minerals and are great for the skin and hair.
The seeds will also boost energy levels, just having a teaspoon a day and working up to more if needed.
I love to have a jar of nettle seeds on the table and sprinkle them onto all of my meals.
The seeds also have a little sting, so if having them raw it’s best to press them firmly between thumb and finger before eating to break the hairs and remove the sting. Some people find the effect of the fresh nettle seed a little too zippy and then they would do better having it dry when the energising effects are a little softer.
The leaf of the nettle when in flower or seed is to be avoided as it can be an irritant to the body.
As anyone who knows me knows, I absolutely love and adore nettle. 🍃

Good morning guys 🕊✨
Maybe some of you realized that it was getting more and more silen over here. The past few months, I was quiiite unsatisfied with my feed and what I was posting to say at least.
And worst – in the first place I didn’t even know. But it ended up with me not posting anymore.. Or let’s say feeling forced to post.
A long the way
I got “comfortable” with not posting and therefore less creative. I compared every single pic of mine with others, valued myself depending on likes cause I wanted a reward due to that I was showing what people “requested” even if they didn’t (if that makes any sense?) and started feeling not good enough. Well, we can never feel good enough when we are not showing our self but copy what we might think that is a “winning system”.
The thing is we will always feel unconfident and act unnatural while we embody and mime a different form of what our real self is.
The pics I showed you on here was not what I WANTED to show, it was only my perception of what is instagrammable
And what the vast majority would be interested in, which is completely wrong cause you never will be satisfied with portraying a copy of what you think people would value more than that what you are capable of… Ending up with not knowing what I was even doing, I stopped doing and lost passion. I didn’t shoot pics as often as I used to do… but slightly all this “freetime” led coincidently to with working on my inner self, and my self-care journey started. Now I know that all came the way it should, cause with working on myself I started challenging myself, I played a little bit with setups and daylight and some props without any pressure and just let the flow thrive, doing whatever comes to my mind. On the foot note, photography was always a tool to express myself, to calm myself and to feel stillness. And its been a looooong time that it has been a releasing tool, that’s why I am really happy to tell you that I genuinely felt this again. I dipped into nature and get lost on the trip shooting for hours and hours and well let’s say me and photography are getting friends again 😋
Sorry for spam, but I felt like telling and also for saying thank you ♥️
Now THAT'S how you break a fast! (which was 14.5 hours btw - bit longer than usual. I always make sure I go 12 hours at least). These toasts this morning were LEGIT amazing 😳 -------------------------------------------------------
Two pieces of German rye bread - one topped with almond butter, fresh fig and cinnamon, and the other topped with mashed banana, coconut peanut butter and chia seeds. AMAZING. -------------------------------------------------------
And as usual, no phone or TV as I ate it. Breakfast is the one meal of the day I just sit and focus on my food. Better for digestion and a much nicer way to start the day - my own thoughts instead of Bruce Willis'. (Currently watching Moonlighting. Super old but thoroughly enjoyable).
