I’ve been batch cooking for mum and dad over the last couple of days. Beef ragu, Persian chicken stew & Middle Eastern Lentil & rice (aka mujaddara served tonight with za’atar egg & zesty shredded cabbage 😋). Stocking their fridge with nourishing meals to ensure they’re getting appropriate amounts of protein, fibre, vitamins & minerals in their diet.
As the year draws to an end, I reflect on achievements & growth throughout the year & consider some goals for the following year. Equally important to me is the time spent helping family and friends. It takes me beyond my bubble & trivial troubles and contributes immensely to my sense of well being & happiness.

Time poor? These lunches are an easy way to eat healthy fresh food most days 🙌
I’m a big fan of cooking & chopping up extra veggies when I cook dinner. It’s often the way I manage to make a quick healthy lunch for myself before going to work in the morning. Today I have left over chopped cabbage & radish with some cooked asparagus on a base of quinoa and brown rice + a splash of pre-made dressing I keep in a jar, in the fridge.
What are some of your favourite left over combinations?
Quick and easy pork stir fry. Marinated overnight pieces of pork in a honey soy sauce marinade seasoned with white pepper and toasted sesame seed oil. Chopped up a couple zucchini, half a small kabocha squash, and a handful of wood ear mushroom. As the pan heated up on high heat with some grapeseed oil, I tossed the pork with some cornstarch to keep it tender and add some thickening to the sauce. Cooked the pork first and removed it from the pan. Then wipe pan clean and cook the kabocha, letting it brown a little before adding water and cover with a lid to let it finish cooking. Then remove the cooked kabocha and cook the zucchini in soy sauce. Then add the other cooked ingredients and the wood ear and toss everything together in the pan. Let the flavors combine and cook for another couple minutes. Remove from heat, toss with some scallions and cilantro, and your done! Serve over cooked brown rice for a tasty meal! Enjoy!

Quick and easy pasta with only four ingredients. 早いと簡単四つ食材パスタ。
Sometimes I make my own pasta, sometimes I don’t. I’d been going to put this pack of mustard greens in a saag curry, but that curry ended up in another direction. See my last curry post for details.
So, I’d bought this pesto without much of a plan, but wondered how it’d be if I mixed it all together. Honestly pretty good. All I did was boil water and blanch the beans. Then in the same water cooked the pasta and drained it. I returned that pasta to the pot, mixed in the pesto and “takana” mustard greens and mixed in a few chopped beans. Few more beans on top. Done in less that 10minutes.
Not saying it’s a masterpiece to look at, but it’s beautiful in its simplicity. In talking to my partner, perhaps the beans would been better replaced with asparagus. Maybe just the green sauce with the greens is enough veg, perhaps just a little cheese on top or pangritata for texture.
Anyway, having cooked something so simple, I wanted to make a post highlighting how easy my cooking sometimes is. The ingredients are a little from left-field, but the process is simple.

Salsa on errything
Pizza because of the sauce (duh 🍕)
And spaghetti with meatballs and ALL THE RED SAUCE 🥫🍝
And then I discovered @lasanmarzano_official
tomato sauces and omg life got so much easier and more delicious .
What I did for dinner tonight was legitimately the easiest, most convenient way to do a quick and healthy meal. .
Browned 1.5 lbs of ground beef .
Added one jar of @lasanmarzano_official
marinara sauce .
Served with spaghetti and zucchini noodles for added veggies and holy moly it hit the spot. Even my hubby liked it.🙌🏼
I love this sauce because 1) you can pronounce all of the ingredients; 2) I don’t like sweet tomato sauces and this has NO sugar; 3) all of the ingredients are sourced from Italy and I LOVE ITALY 🇮🇹 .
So needless to say I highly recommend this sauce 🙌🏼👌🏻😋

How was your start into the week? :)
Mine was okay I guess 😅 Little storytime: I went to my hometown yesterday and was unlucky on the way back. I had to use the rail replacement bus service after two trains have been cancelled 🙈 because there were problems with the overhead wires.
But I was lucky to find a stranger to talk to the whole time - this made the situation bearable. I really like these kind of conversations and I even found out that he goes to the same uni which was pretty cool :D Even though you don't talk about super personal stuff most of these conversations turn out to be pretty good 😊 I would highly recommend to do this once in a while ;) [J]
These beetroot chips were made out of yellow ones and are so easy to make!
1⃣ Preheat oven to 190°C.
2⃣ Slice the beets into thin slices.
3⃣ Lightly drizzle with oil and add a pinch of salt. Put in a baking tray and make sure the slices aren't touching.
4⃣ Bake for 15-20 minutes.
