Hot mushrooms on toast. Large flat open varieties of mushrooms like Field, Meadow or Portobello can make a simple but satisfying light supper, brunch or solitary snack. A fungoid version of steak sandwich oozing with garlicky buttery juices. Pre heat oven to 190C/ 370F & butter an oven proof dish large enough to contain the mushrooms tops down flat. Mix softened butter with crushed garlic, salt & chopped parsley, dot/smear over the mushrooms. Bake for 15 minutes until the mushrooms are tender. Cut a chunk of crusty bread, a roll, ciabatta & wipe the cut side of bread in the dish to soak up all the buttery juices. Top with the cooked mushrooms, squeeze a little lemon juice over & salt if needed & tuck in. This can be a hearty sandwich filling, perhaps a smear of dijon mustard or a soft blue cheese added, picked up & devoured. For sharing serve on slices of sour dough toast, sprinkle with a few crumbs of blue cheese &/or some crushed walnuts or hazelnuts, green leaves on the side. Apart from all the vitamins flat mushrooms are a rich source of vitamin B-2 (riboflavin), which can help reduce the severity & length of chronic headaches & migraines. Its a lovely # esto and # asta dinner, but we've added a few extra bits that make it extra yummy! We cooked for 2 people and did enough food for 2 decent plate fulls of food and then also 2 good portions for lunch as well. We started with 3 #chickenbreasts which we cut up nice and small pieces and fried then on a low heat until they were cooked through. While the chicken was being cooked we cut up all the #peppers and the avocado. With the #chicken close to being cooked through throw the peppers into the pan and let them cook while you put the pasta on. Just before the pasta is done stir in a good amount of green pesto into the cooked chicken and peppers. You can also add the #avocado now cut into small chunks and just stir it in with the pesto until its nicely mixed together. Fried rice with peas, carrots and shrimps 🥕🦐🍚 better than the original from your Thai restaurant 🍛🍱🍤🍘🥟 For the fried rice you need: Leftover rice (about 250gr) Peas and carrots 250gr shrimps 1 egg 4 tbsp coconut oil Chili powder 1 clove garlic 1-2 tbsp soy sauce 1/4 tsp garam masala 1/4 tsp tumeric Heat 2 tbsp oil in a large pan. Add shrimps and cook till they get rosa. Set aside. Add the rest of the oil add the vegetables, the garlic and let cook for a few minutes. Add the rice and fry it for about five minutes. Than add the spices and the soy sauce. Mix well and add the cooked shrimps. Sweet chilli salmon skewers (cook without skewers for little ones!) make the marinade, two teaspoons of sweet chilli sauce, two teaspoons of mirin (it’s available in most supermarkets) and a teaspoon of soy sauce. Cut your salmon into bite size chunks and dip into the sauce then thread onto skewers and pop in the oven for 12-15 mins until soft . Serve with mashed potato and seasonal veg. Happy Saturday! We made it to the weekend 🙌🏼😂 Spending time with my family today and recovering from my first playoff baseball game (Go Brewers!) . Before I left town yesterday I made a “clean out the fridge pizza” and it turned out pretty darn good! . Layered leftover tomato sauce, ham, and Swiss cheese on a tortilla and microwaved it for a minute. Then I threw it on a stovetop with sautéed peppers, onion, and kale and cooked it until the bottom of the tortilla crisped up. {RECIPE} I don’t know about you, but my life mandates convenience. As in, if it’s not convenient, I most likely won’t do it.🙅🏻‍♀️🤷🏻‍♀️ You feel me? . Example: I love to cook (and eat!), but don’t have hours to spend in the kitchen, unforch. It’s gotta be quick and easy, without compromising deliciousness. And if I can prep it in bulk for leftovers or freezer meals, even better.👌🏻💯 . Threw a bone-in (key to way more flavor) pork butt 🐖 in the crockpot this morning with the following: balsamic vinegar, garlic powder, sea salt, dried thyme, cinnamon, turmeric and a little bit of unsulphured molasses. I’ll cook it on low 12-14 hours (adjust according to size) for a burnt end-like finish.😋 . I’ll eat half for meals this week and freeze the other half in individual servings for DIY convenience when life gets cray, I’m low on groceries or tired and just don’t wanna cook. . I had some left over puff pastry so decided to make some mini quiches for lunch👩‍🍳 This is such an easy recipe: just mix all the ingredients in one bowl. Cut ready made pastry into squares and transfer to a muffin tin. Use ready roll puff pastry lay it on a work surface pop down the ham slices and grate cheese and lay on top the ham next roll the pastry up tightly and cut off chunks lay flat on a baking tray cook in the oven for 10-15 mins until golden. Happy Weekend everybody 🤗 If you need a quick and easy raw apple pie recipe:👇 . 👉Crust Ingredients: (for a little cake) 1 cup nuts (I took sesam seats and almonds 50/50) 2 tablespoon coconut oil 1/2 cup hackled dates 1/4 teaspoon sea salt . . 👉Filling Ingredients: 3/4 cup cashews soaked for 6 hours 1 mealy/peeled medium apple 5-6 dates(soaked ) 1 tablespoons lemon juice 1/2 teaspoon cinnamon 1 pinch of sea salt . . 👉The Top 1 apple Soaked aronia berries Shredded coconut flakes cinnamon 👉 Directions: 👉Grind first the nuts and then add the other crust ingredients in the blender. Process until the mixture sticks together and the dates are well processed.Press the crust in your (baking) dish.. . 👉Blend the filling ingredients until it's a creamy mixture. Place the filling on the crust. Smooth out with a spoon. . 👉Slice  the 2. apple into thin slices.
