Chilaquiles caseros 🤩🌶️🍳
Qué haces cuando no tienes tiempo de hacer una salsa roja? Usas lo que tienes a la mano 🖐️😊
-50 gramos de queso panela
-2 tortillas de nopal cortadas en triángulos
Para la salsa:
-200 gramos de tomate machacado
-Un diente de ajo
-Media cucharadita de comino
-Chile quebrado al gusto
-Sal y pimienta
-Un puñito de cilantro
-Un cuarto de Pimiento rojo picado
➡️ Sofríe la cebolla en un sartén por uno o dos minutos. Agrega el ajo, el pimiento rojo, el comino, el chile, el cilantro y el tomate. Y deja hervir por unos 5-10 minutos.
➡️Mientras tanto dora las tortillas en un comal sin aceite.
➡️ Finalmente, sirve los totopos dorados en un bowl, cubre con la salsa, el queso, los huevos al gusto y a comer 👩🏻🍳✨😋

Oats are less photogenic than eggs but hey, ya can’t win em all. The weather has been so dreary lately and I’ve been hella stressed this week trying to figure out some big life decisions, so having the time to have a warm breakfast this morning before heading to work was just lovely. Self care isn’t always face masks and meditations or trips away, it can just be taking a few minutes where you don’t have to be productive, or thinking about challenges, but just kind of existing.
This breakfast is 1/2 cup dry oats, 1 1/4 cup unsweetened vanilla almond milk, 3 scoops of @womensbest
vegan protein, 1 sliced up peach, 1/4 cup chopped walnuts, a sprinkle of chia seeds, and just a lil bit of orange blossom honey 💕

•YOU KNOW FRENCH TOAST WITH ALL THE CINNAMON AND A CASHEW BUTTER DRIZZLE IS GOING TO BE AMAZING• I’m on autopilot today, and French toast for me is one of the easiest quickest dishes to make that ticks most boxes. I like to spruce mine up with cinnamon, nuts, hemp seed hearts and berries and instead of full on syrup I’ve made a cashew butter drizzle (cashew butter, a dash of coconut milk and a tiny drizzle of maple syrup). This was sooooo good.

Easiest (camping) breakfast EVER!
Our family made 4 variations of these for our camping trip and they are based off two super simple recipes. I prepped them in individual jars before we left and all I had to do once at camp was add the milk and extras mix-ins.
Recipe 1 Overnight Chia Oats:
Place in mason jar with lid & pack for the trip...
1 Tbsp chia seeds
1/2 c organic gluten free oats
1 Tbsp cocoa powder
On the night before you eat it...
2/3c almond milk or up to the 1 c mark
(Then, close lid and refrigerate or put in camping cooler)
Mix in your add ins!
For our family, this usually includes a little honey or maple syrup, maybe a spoon full of nut butter and usually half of a mashed banana. You could also add greek yogurt, fresh berries, granola, a scoop of vanilla protein powder... so many possibilities 😋
Version 2 (for those avoiding oats):
Premix in 1 mason jar...
1/4 c chia seeds
2 Tbsp unsweetened coconut flakes
1/8 tsp cinnamon
Follow the instructions for the previous recipe for all other steps. That’s it!
As much as I would love a hot camp fire breakfast each morning, it just wasn’t practical for everything we wanted to do. That made this recipe a life saver for those early, quick mornings.

✨turn the kitchen lights off
✨brush your teethies
✨go to bed lol
It’s okay to snack at night! I go ahead and log a snack in My Fitness Pal at the beginning of the day just bc i know I want a snack every night! Plan ahead so you don’t lose control.
❗️Eating too quickly
✨limit distractions while eating
✨chew your bite and swollow it before getting another
✨put your fork down in between bites
❗️Eating junk food too often
✨don’t keep tons of it in your house!
✨put them on a higher shelve or in a separate cabinet so you don’t see them every time you open the pantry.
✨have tasty alternatives available to you.
✨don’t take a bag of chips to the couch. Put some in a bowl. #PortionControl
(unless your intermittent fast)
✨Set yourself for success by having something you can grab and go! (A smoothie you prepare the night before, a banana, yogurt, overnight oats, etc.) to get your metabolism rockin’ for the day!

Trying something else. Steel cut oats, flax meal, amaranth, chia seed, hemp seed. With cardamom, cinnamon, and raspberries. English Breakfast black tea with almond milk. Orange juice and seltzer. All measured in smaller amounts in a rice cooker. (And for those non-vegans playing at home this contains 11.5g of protein and 10% b12 daily recommended amount. With my multivitamin it makes it 323%...) #vegan #quickbreakfast #healthy #control
404 calories over all. 11.5g of fiber too. 14.6g of fat. Trying to be better about mindless eating and portion sizes.
So like most mornings of trying to get myself ready for the day and a kid ready for school, I remember at the last minute that I have not had breakfast and man, am I hungry.
But that's ok, this is what I love to have for breakfast since I'm not a huge eater in the a.m. (though I can really have it anytime).
With time to spare for one last check that we have everything, I'm out the door.
Besides for the way it makes me feel better or that it is packed with superfoods so it's great for me, I definitely give it 👍👍 for convenience.

Not sure if you could change your eating habits? 🤔 I was there too!!👎 I was a picky eater, stuck in my ways and hated eating breakfast because I was never hungry in the morning. But one day I decided make something that would not only be easy but something I'd enjoy....Slowly over time , I started making eggs, oatmeal, granola, fruit bowls, etc. And, I ❤IT!!! Ever since then I've been ENJOYING breakfast and look forward to making new recipes for the family. And guess what, I've found that I'm actually hungry in the morning PLUS I can see the positive changes it has had on my body. 🤘 🌟Don't be afraid to try something different...you'll never know what you'll like until you give it a try! 👍
