Chicken & Ham Fried Rice. Ziploc bag of frozen rice, diced rotisserie chicken, and leftover ham. All in the pan and done with almost no effort which is right up my alley. And now I have something to snack on since I have an empty fridge 🙄.
Decided to do something super speedy and simple for dinner tonight - a light minted pea soup with a fresh seeded rye bagel that I picked up this afternoon. 😋 On an evening when I didn't feel like spending an hour prepping and cooking in the kitchen, this 15 minute meal was perfect for me and was ridiculously cheap too! ⌚ Plus, it was still really healthy and filling! Winner!
Boil 150g frozen peas in 200ml vegetable stock
Add in 30g chopped onion and 1 chopped garlic clove
When the ingredients are cooking, puree in a blender/using a hand blender
Add chopped fresh mint and blend, or 1tbsp mint sauce (if you want to cheat like I did!)
Toast your favourite bread🍞
Serve up the soup with a dollop of natural yoghurt or light creme fraiche 🍲
Nutrition🍽: Despite this being a really quick and basic meal, it is actually so nutritious! The peas provide an excellent source of iron, protein and fibre, whilst the bagel is great for complex carb, fibre and protein too! So a surprisingly high protein meal, that you can adapt to include more fat by adding the creme fraiche, a spread of your choice to the bagel, or maybe smashing some avocado on it...just be creative!

This took me all of 15 mins to make and is soooo tasty! I'm totally stuffed! Salmon fillets oven baked with some teryaki sauce and then bunged some brocolli and green beans in the oven with it! Easy Friday supper: fry a (rinsed) tin of butter beans in a little butter, add a dash of garlic and chilli flakes and a teaspoon of sumac*. Once they’re browned, remove to a plate. Pour half a cup of frozen peas (just enough to cover the bottom of the pan), add a dash of water (about 2tbsp) into the same pan, top with a couple of hands full of baby spinach**, put lid on and steam for 2 minutes. Slide onto a plate, add warm beans and crumble half a wheel of feta over. Great for them pizza cravings and in my opinion it tastes even better 😋because you can make it how you like!
Here I've used chicken-style pieces, mature cheese and a mixture of fresh vegetables!
SUPER EASY to adjust the macros too!💪 For more/less carbs just change the amount of tortillas used.
To adjust the fat content you can play around with the amount of cheese used EASY! (Also I am a pineapple 🍍on pizza guy but didn't have any to hand💔) Ingredients:
2 wheat and white wraps
15ml reduced sugar ketchup
28g extra mature cheddar
90g meat-free chicken style pieces
1 small tomato
1 spring onion
10g nutritional yeast
A snack doesn't have to do you in. Even a late night snack. I try not to eat late but sometimes I know I'm too hungry to sleep and I'm craving chocolate. In comes a crispy, satisfying apple with peanut/nut butter of choice with some dairy-free chocolate chips.
