bok choy salad 🥒🥗 currently sitting on a plane getting ready to fly 8 hours to Munich and all I want rn is this delicious salad from the other day! ordered the vegan meal for dinner on the flight so crossing my fingers it’s not toooooo terrible🤞also if anyone knows any great veggie food destinations in Munich, Prague, or Salzburg hmu!!! TO MAKE
- steamed bok choy in a covered skillet with about 1/3 cup water in the bottom, seasoned with salt/pepper/garlic to taste
- paired with the AMAZING @wildbrine
kimchi, fresh cucumber, mixed greens, and raw scallion
- dressing was dijon mustard, grated ginger, soy sauce, lemon juice, a little salt all mixed together! (random I know but honestly so yummy) .

Mondays are my long days. I don't even get home from work and yoga teaching until about 9:30pm. By this time I'm beat. On these days I definitely don't have time to cook but I do have time to eat well.

Fair warning: this post is probably just going to be a word vomit so your choice whether to read or not🤷♀️
I haven’t posted gym selfies in a hot second mostly because I haven’t been to the gym in more than a week. I’m still staying active and playing tennis and golf, but the days that I can go to the gym I have not been motivated at all. My diet, even intuitively, has been crap. -
So, other than me just complaining, the point of that vomit was to say that its okay to complain and not be on it. A very good mental trick I use in golf is to be mad/whiny for 5 seconds about whatever shot I just hit, and then let it go. So this is me letting out all my complaints and inhaling the good energy 🧘♀️
My goal is to try to get to the gym today to get back on track, so keep me accountable by waiting for a selfie tomorrow! Hope my long-winded post made sense and helps someone too:) PS hope you all celebrated FRY DAY yesterday🍟
