LET’S CHAT✨ Is a vegan diet expensive? One widespread misconception about vegan diets are that they’re expensive. For me, the bulk of my diet consists of fruit, vegetables, pulses and rice - these are some of the cheapest ingredients on the planet. I also include tofu, tempeh and soy mince to my meals from time to time, which are cheaper than packaged animals you buy from the supermarket, like beef, chicken and fish. . The only area where some vegan products may be more expensive than non-vegan products is when you look at a direct substitute, like chicken nuggets vs soy nuggets; this price difference is due to supply and demand and as the increase in plant based alternatives increase the cost for these alternatives will go down too. . Soy mince (also known as TVP) is cheaper and more protein dense than chicken, it’s far cheaper per gram of protein and it doesn’t contain any fat or cholesterol. In some supermarkets here plant milk is cheaper per litre than cows milk - this decrease in cost for plant based alternatives is a trend we are going to continue to see as more and more people adopt a vegan/plant-centric diet 🌱🍓 . This meal contains carbohydrates, protein, fibre and some healthy fats from a bit of tahini. It honestly costs so little to make and I’d go as far as saying it made enough for 3-4 meals and would have cost roughly the same as a packet of animal flesh to make - especially if you’re spending more for those labelled “organic”, “grass fed” or “free range”. . When you stick to simple, whole food staples (fruits, vegetables, rice, oats, pasta, beans, lentils, spices tofu etc.) it can be seriously inexpensive to eat a vegan diet (especially if you’re buying in bulk). Even if it were on par in cost (or even slightly more expensive), consider your health. Given the health benefits of a vegan diet, I personally believe you’ll save money on health care in the long run as the cost of treating diabetes and cardiovascular disease aren’t cheap. . What happens when there’s a ton of fresh sage and garlic leftover from Thanksgiving prep? CRISPY GARLICKY-SAGE FINGERLINGS, that’s what! Not mad about it at all. These teeny potatoes are extremely simple to prepare and pack so much flavor in each and every bite. Try eating just one... we dare you! - INGREDIENTS: - 24 oz. bag of fingerling potatoes (all yellow flesh is fine!), sliced in halves - 1 tbsp olive oil - 3 tbsp fresh sage, chopped - 4-5 garlic cloves, minced - Salt & pepper to taste INSTRUCTIONS: Preheat the oven to 450F. Toss potatoes in the oil and season with salt & pepper. Place on parchment-lined baking sheet cut side down. Roast for 25 minutes. Pull from oven and flip, then roast for another 10 minutes. Remove from oven, sprinkle garlic and sage over potatoes, and place back into the oven for an additional 3-5 minutes. Voilà! Sorry to keep everyone waiting....I placed third in booth decorations and second in chili! I’m am so proud of myself, for never entering a cooking contest and never actually having made this chili let alone chili not from canned beans etc. This chili wasn’t a recipe I worked on but was a huge success.
