Not so healthy non-dairy and eggless chocolate chip cookies 🤤🍪🍪🍪 took less than 30 minutes to make! 😬
Minestrone soup with purée from 1/2 of a baked pumpkin added in, kale apple salad, and pumpkin pie. I used a store bought vegan whole wheat pie crust and made the filling from the forks over knives pumpkin tart and doubled the amount. So easy. 😊 The recipe calls for canned pumpkin and there’s nothing wrong with that, but I actually baked a pumpkin and scooped out the amount called for, just because it’s fall and it makes me happy. 🍂🙃🍂🙃
Sometimes my bowls look pretty and other times they look kinda shitty🤷🏼♀️. Simplicity is sometimes perfect though and I forgot how much I love these oatmeal squares cereal and it was the perfect brain fuel to have before my geography midterm which I got a 94! (This was eaten last week lol)

✧ Is your blood sugar effected by fruit?
When I first started eating fruit I would get instantly sleepy, tired or feel very jittery.
It took time for my body to change gears from using primarily fats as fuel, to using carbs as fuel.
To help this adjustment I had to learn to introduce fruits slowly. Denser fruits that take longer to digest like bananas, are helpful to support this transition (thank you for teaching me that @simplywiseandwell
!) It also changed everything when I began pairing my fruits with mineral-rich sources like leafy greens, celery and coconut water. Adrenal Snacks from Medical Medium are truly everything!
I love sprinkling cinnamon on my fruit too, it not only tastes good but it helps to balance blood sugar by helping glucose move into the cells with greater ease.
But all in all the best help with feeling more balanced eating lots of fruit was time and taking it slow, allowing my body to naturally adjust.

to grow indoors. It’s very low-maintenance, loves partial sunlight, and you can use parts of it at a time, leaving the rest in the soil to continue growing. Besides, it’s delicious! Really, what’s not to love about year round vegetable gardening, especially when it comes to growing ginger inside?
Ginger takes 10 months to mature and it doesn’t tolerate frost. If you live in a place where it gets chilly in the winter, you’d be better off growing ginger in a pot indoors and bringing it outside in the summertime.
Little bits of the ginger root can be removed while it continues to grow. A little bit of ginger goes a long way, so these pieces can be used for cooking, brewing tea or for herbal remedies.
The best ginger to plant is purchased from a garden center or seed catalog. Ginger purchased from the produce department of your local grocery store can be used to grow a plant, but with spotty results. Grocery store ginger is often sprayed with a growth inhibitor to keep it from sprouting before it’s purchased.
The root that you choose to plant should be plump with tight skin, not shriveled and old. It should have several eye buds on it (bumps that look like potato eyes) and if they’re already a little green, all the better.
If your root has several eye buds, it can be cut and each bud can be placed in a separate pot to produce several plants.
Ginger loves shallow, wide pots!
1. Soak the ginger root overnight in warm water to get it ready for planting.
2.Fill your pot with very rich but well draining potting soil.
3. Stick the ginger root with the eye bud pointing up in the soil and cover it with 1-2 inches of soil. Water it well.
4. Place the ginger in a spot that stays reasonably warm and doesn’t get too much bright sunlight.
5. Keep the soil moist, using a spray bottle to mist it, or water it lightly.
6. Ginger is a slow grower, after a few weeks you should see some shoots popping up out of the soil. Continue to water the plant regularly by misting it with a spray bottle and keep it warm.

💫 Throwback October 22nd 💫
Have you noticed how you get the impression there are lots of pregnant women in the streets when you are yourself pregnant? And you are trying to guess how far along they are? I remember seeing women that seemed to be to the point of giving birth and telling to myself that I am happy not to be at their place.. Although it doesn't make much sense as I was slowly but surely getting there as well!
Anxiety gets a lot of pregnant women regarding their babies health, the birthing phase, the "after" and so on. Seems to be quite common and can be hard to handle. For me it was the fear of giving birth. It's a fear I had since I was a kid and I had the impression that if I go through this and come out alive, I would be able to overcome anything. A superwoman kinda... Well I got lots of reassurance thanks to my great midwife but sadly I met her quite late in pregnancy. The first one I had, we didn't really connect and she was making me more anxious then anything, repeating all the time how hard labor is, all the risks around it and just making you doubt about your own strengths and capabilities.
Especially for a homebirth I wished for a better relationship almost friendship and was not really happy about this midwife but had not much choice to change as there are very few midwifes doing homebirths. Anyways, like if it was meant to be, I met the second midwife during an hypnobirthing session that she was holding. From the minute we saw her with my partner we liked her. She was gentle, calming voice, smiling.. That's when we learned she was a midwife doing homebirths! What a coincidence. From then on we tried everything to get her on board and managed to have her be there for us. She was more than I expected and I just wish I met her earlier in pregnancy.
Anyways, mindset plays a lot for pregnancy and birthing I think and that's why you should be surrounded by people that are able to help you overcome it so you regain confidence in yourself. Reading a lot of birthing stories helps as well as reading books like Ina May or other natural birthing advocates books.
