Yo. YO. A picture says it all. My 2018 resolution was to be “shameless” and today I’ve realized how much it’s paid off. 😭 . . Up until now I’ve spent my entire life (even as a young lass) fighting what I’m “supposed” to do with my life and what I want to do. I’ve always known that I LOVE working and I want my work to be my life and my life to be my passion. But I’ve always had people nagging me along the way telling me that what I wanted was ‘difficult’ and ‘not REALLY what I wanted.’ Listening to these people has not only made me unhappy but has DELAYED me so much in life. . . I even had someone close to me one time tell me “you can’t have your cake and eat it too.” And to that I say “yes I can if I keep baking.” . . All that struggling is behind me now. The past year I finally learned to say “No. I won’t do that. It’s not for me.” And HOLY MOLY I’ve never felt so liberated. I’ve never felt more like me. . . I’ve had a lot of people kindly trying to direct me in a more uniform direction, and for the first time I’ve said “No. I’ve already considered, it’s not for me.” They’ve told me “Don’t rule things out because you’re scared you won’t like it. And to that I say, “Look where I’ve been and THEN think about where I ought to be.” . . People act like going your own way is rebelling, disrespectful, and a sign of not being able to conform. No, it’s not. Everyone blossoms in their own way. Ive learned to say “No.” because I finally know and accept what I need. I know how I flourish—and let’s be real I am freaking AWESOME when I’m flourishing. GOOD FREAKING BYE TIMID, IMPOSTER SYNDROME STRICKEN STEPHANIE. To say I’ve been THRIVING since accepting my own path is an understatement. . . And HOLY **** I’m emotionally overwhelmed. By support, by acknowledgement, by praise. Thank you for supporting me, for accepting me, for helping me realize who I am and who I need to be. . . When it comes to your own happiness, growth, and success DO NOT LISTEN TO PEOPLE WHO DON’T SUPPORT YOU. If you have to be the only positive voice in your head for awhile SO BE IT. Because in short time, people WILL notice, and so many doors will start to open.
When you splurge for dinner and order the Mac n cheese 👀 Delicious dinner at The Smith after our first day of FNCE! After a seminar and walking around the city we splurged and ordered some fantastic appetizers for dinner 😋 one being this oven baked Mac n cheese. PALEO ENERGY BITES—> I had a crossfit competition today so I needed quick little energy dense snacks that wouldn’t weigh me down/ make me feel bloated! These were the perfect combination of energy dense bites that took the edge off my hunger without making me feel stuffed. . . . Ingredients: -1/4 cup walnuts -1/4 cup pecans -1/4 cup almonds -1/2 tsp vanilla extract -1 table spoon maple syrup -about 1/4 cup hemp seeds . . . Directions: -in a food processor add the vanilla extract, walnuts, pecans and almonds -pulse the ingredients until they are a fine powder -transfer to a bowl and add 1 tablespoon maple syrup -mix and roll into balls (should make around 9) -roll through hemp seeds - place in freezer for 30 minutes -transfer to fridge to keep until enjoyed!

Snatch 70kg (154 lbs) / 73 miss / 73 miss. C+J 88kg (193.6 lbs) / 91 (200lbs) / 94 (206.8lbs) so close but missed! Third meet and PR’d my meet total at 161. Guys, it was 143 back in April!! Although I can lift more than this (particularly Snatch), I’m so happy with today! It’s my third meet, I spent all last year recovering from an Achilles rupture, and I just started solely focusing on weightlifting 9 months ago. I cannot believe I am prepping my case study to conclude my first clinical rotation! These last 7 weeks have been amazing. I couldn’t have asked for better mentors, staff, or patients! Challenges taught me new skills, and triumphs gave me the confidence to test limits and push to do things better. And not to mention, I found the perfect case just last week for my presentation! Oh look, the same Andy Warhol print that was in my last post on here 😂 it's my favorite so this was exciting! Anyway, today, October 20th, is the day my mom got out of the hospital last year! So we had a little celebration and went to a museum. For those of you who don't know me personally, I'm a little bit of a space geek, and the Apollo 11 exhibit was in town, so I was alllll over that. • It was a great day with my family, but that being said, I got a little hypoglycemic and cranky a couple hours into the museum. I didn't take care of myself like I knew I should have because I was rushing this morning, so I didn't get a chance to eat a real lunch. Total real life example of why food freedom is so important. This one event was dampened a little because I was hungry, just like so many events in my life before this. Happy to report that a sandwich and some pizza (and wine) later, I'm doing great 😄 Any #foodfreedom wins to share this week?

deff not the prettiest of dinners but it literally took me less than 15 minutes to make & tasted amazing!!!! so it’d be rude of me not to share, no matter what it looks like😅 bed of @organicgirl romaine tossed in @traderjoes fall harvest salad + organic chicken breast cooked in tj’s onion salt + honey mustard roasted chickpeas (recipe below) + steamed sweet potato + tj’s persian cucumber kraut + heavy sprinkle of crumbled feta🤑🤤 ———————————————— CHICKPEAS!!! 1) preheat oven to 400° F 2) drain & rinse 1 can/carton unsalted chickpeas (garbanzo beans) 3) set chickpeas out on a paper towel to dry (~1 hour or so) 4) when dry dump chickpeas into bowl & add 1/4 cup @stevespaleogoods maple mustard 5) thoroughly mix chickpeas & maple mustard together 6) transfer chickpea mustard mixture to a baking sheet lined with parchment paper & bake at 400° F for until crispy (took me about 45 min but i’d just keep checking on them & roasting them to your desire)

Some nights just call for macaroni and cheese. This scratch made pumpkin Mac and cheese was perfect for a day after a zero sleep night and zero energy.... #momlife Full of beta carotene and smoked Gouda goodness this sage and thyme infused sauce is going to be making an appearance again, very soon. . . . Pumpkin Mac and cheese: 1 package of your fave macaroni, cooked Sauce: 2 tbsp unsalted butter 1/3 cup white whole wheat flour 3 cups nonfat milk 2.5 cups shredded cheese (I used a smoked Gouda, sharp cheddar, and smoked applewood cheddar) 3/4 tsp salt 1 can pumpkin purée 1 tsp garlic powder ½ tsp onion powder ½ tsp mustard powder 1 tsp sage 1 tsp thyme 1 tsp red pepper flakes Adjust spices to taste . . . Preheat oven to 350F. In a large saucepan, melt butter over medium heat. Add flour and cook, stirring constantly, for 1 minute. Add about 1 cup of the milk and whisk to to combine. Add remaining milk and mix until free of lumps. Mix in salt and seasoning whisking regularly, for 5 - 8 minutes until thickened, creamy consistency. Add pumpkin and whisk well to combine. Then add cheese and whisk until melted, cook an additional 5 minutes. Pour sauce into large baking dish and add pasta, stirring to combine. Optional: Sprinkle with breadcrumb topping. Bake at 350 for 25 minutes, top will be golden. Enjoy!
I present to you... the beyond burger 😭❤️🙏🏼💞💖💓 so incredibly delicious and meaty! It basically melts in your mouth the flavor and texture are so on point in my opinion. I topped mine with some @miyokos_kitchen garlic herb cheese and had a salad on the side. And YES that is a hot dog bun I bought them by accident 😂😂 I seriously think this is a 15/10! Side note: the non veg bf also liked it!!!! what’s better than home grown sweet potatoes straight from the garden ?? roasted sweeties with brussels and chicken. duH. dinners like this are my jam. truly thriving on nights with potatoes and veggies, but everyday and every night can’t be like this 🤷🏼‍♀️. i’ve never realized how important food flexibility is until life has thrown me through some loops lately. eating out, doing new things that aren’t brussels and broccoli. out of my comfort zone, but it had helped my g r o w. being able to have fun with my fam or friends around food was such an impossible idea to me, but the more ya girl did it and dealt with the thoughts it got hella easier. recovery is worth it y’all. it gets better :) •••••••••••••••••••••••••••••••••••••••••••• dinner eats -> roasted brussel sprouts and sweet potato coins cooked in coconut oil and salt and pepper and grilled chicken thighs + ketchup bc #yum

Some days, recipes just don’t work out...but that’s the fun of baking to me. It gives me the freedom to change and switch up recipes however I want. It doesn’t mean the recipe is completely “bad” - it just means switching up a few ingredients to make it exactly what you’re looking for 👏🏼 This pumpkin bread is currently under construction in the kitchen this weekend...and yep, you guessed it. It’s made with Kodiak Cake’s pumpkin flax mix! Once I get it perfected, I’ll be sharing it with you guys! 🤗😘

Michigan v MSU Rivalry game today! We got up at the crack of dawn and headed up to East Lansing. The day you tell friends or family that you’re eating a plant based diet one of the first things that will come out of their mouth is, “but what about protein”. Well, two things... first you really don’t need as much protein as many think you need and second there are plenty of plant based protein sources. HOT POT | Dinner tonight was an incredible veggie & beef stew topped with potato slices which I believe makes it a hot pot!! 🤓Made by my partner for us tonight as it’s getting a bit chilly and we’ve been a bit under the weather 🤧 he crammed so much veg into it - carrots, onion, mushrooms, courgette & celery!! && cooked for like 3 hours so it was incredible!! Good things about these articles: Uhhhh...not a lot. 🤷‍♀️ Areas that need improvement: 1. These women aren’t registered dietitians, the advice they give is not evidence based. 2. There is SO MUCH unspoken privilege. All these women are white, able bodied and have some assumed wealth if they can afford these types of food. Not to mention thin privilege. 3. The biggest issue is all the assumptions that are made. There are sooo many other factors other than their diet that makes them incredible elite runners- yet the focus is on what they eat. There is no look at the other factors that impact performance, like genetics, mental health, and mindset just to name a few. 4. This information only further confuses the average runner(most RW readers) about what the correct nutrition is for them. RW it’s time you talk more about the relevant side of running, like the eating disorders that occur in a lot of “average” runners. And use registered dietitians like @heatherdcrd who is a sports dietitian. In fact she has a course made specifically for active women to help them understand what nutrition can look like for them. #rd2be #intuitiveeating #dobetter

Motto this morning...embrace the SUCK!! Running is not my fave and it’s not easy for me. I feel I look like a cross between new born giraffe🦒 and ostrich when I run. It’s just awkward🙈. —————————————————— And the second part of our workout today included LOTS of running. Ugh 😑. But instead of becoming discouraged and dwelling on the track segment of the workout, you just embrace the SUCK and go. Let it drive you. And let me tell you my team mates kept me going and ran with me so many times. —————————————————— Focus on the fact you can move. Movement is a gift. And your body is a gift. Take care of you and make time for you. Give yourself time and patience. And a lot of grace. Keep moving. Keep going. When you fall down, get back up.
