In honor of what I ate Wednesday here is a day of eating meals on the left snacks on the right! I eat every few hours because it’s what works for me! It’s important to figure out what works for YOU! • breakfast: sweet and savory toast - 🥑 and 🥚 and PB&J with granola • lunch: salad with roasted sweet potatoes, peppers, and chicken 🍗🍠 • dinner: roasted salmon with cous cous purple cabbage and green beans 🍽 • snacks: almonds, apple, peppers, hummus, homemade high protein high fiber muffins and of course always sippin on water in my @healthyhumanlife to stay hydrated! 💦 (head to my story to check out my day of eating every Wednesday) HAPPY HUMP DAY 🐫

One final left between me and winter break. I had all morning to study ... so naturally I made a yummy breakfast and did my makeup. Studying was rough but I’m ready to take on these exams thanks to this fueling breakfast . Eggs contain choline which is a nutrient that boosts the brains ability to send commands throughout the body and retains memory ability. They are my secret weapon to focusing and successful tests taking. Now I’m ready to take on this MNT exam and hopefully celebrate success with a drink later ! Hey, hey, it’s Wednesday! Who could use a 4 STEP recipe for tonight’s Hump Day dinner? 🙋‍♀️🐪🍽 . When I’m not in the mood or don’t have the time to clean up too many dishes after cooking, I tend to think of recipes that provide a bowl or serving plate within themselves! Stuffed peppers are a favorite dinner in our house as they can be customized according to theme- do them Spanish, Greek, or Moroccan style- and you easily take care of a vegetable portion this way! . Italian Stuffed Peppers were on the menu for this week as these chilly temps have us craving all things warm and saucy. Here’s a breakdown of my 4-step process: 1️⃣Prep your fillings- cook 1 cup of quinoa on the stovetop, and while that’s going clean out your peppers, roughly chop some kale, rinse a can of chickpeas, and open a jar or can of tomato sauce- I like to add dried basil and chili flake for added flavor. 2️⃣Mix the filling- in the same pot that the quinoa just finished cooking, add in the kale, chickpeas, and tomato sauce. Heat it up until kale starts to wilt. 3️⃣Stuff peppers- pretty self explanatory… 4️⃣Top with some shredded mozzarella and bake for 10 minutes in a covered baking dish that has a small amount of water in the base- this creates some steam and helps the peppers soften up. . Depending on how hungry you both are, I recommend one full pepper per person, or you could split a pepper and serve your half alongside more veggies. . Here are some key nutrition tips: 🏃‍♂️ - Check your iron status Distance runners, altitude training, vegetarian athletes, or regular blood donors, should be screened regularly for an optimal iron intake. Iron deficiency, with or without anemia, can impair muscle function and limit work capacity leading to compromised training adaptation and athletic performance. 🥩 - Vitamin D supplementation If you have a history of stress fractures, bone or joint injury, signs of overtraining, muscle pain or weakness, or a low exposure to ultraviolet B light – talk to your doctor or dietitian to determine whether you need vitamin D supplementation. ☀️ - Getting enough Calcium Calcium is especially important for growth, maintenance, and repair of bone tissue, and regulation of muscle contraction. The risk of low bone-mineral density and stress fractures is increased by low dietary calcium intake. Sources of calcium include dairy, dark leafy green vegetables, sardines, almonds. 🥛
Where do you like to go when you need a little TLC and time for yourself? Share👇🏼 . . . My first choice (and easiest to get to) is my big comfy white chair. My second choice will always be the beach. I don't care where, as long as there is sand between my toes, sun on my skin, the smell of salt in the air and the therapeutic sounds of waves. I am in a total state of bliss. It is even better when shared with my heartbeats because I am getting to share my happiest place with people I love. . . . . In reality, we can really take ourselves to our favorite place whenever we need it by indulging yourself in a few mindful minutes a day. Closing your eyes, going to that place and just doing some deep breathing for 1 minute at least 3 times a day. This will help you increase oxygen in the body, slowing down your heart rate and inducing the feelings of calmness and relaxation. Exactly what happens to me when I am at the beach and breathing normally. . . . . Someday, I will own a tiny house, ok small house, on the beach. Until then, I will schedule my bi-annual beach getaways and my mini getaways in my head during the day. . . Do you have a hobby or something that you do just for the simple pleasure that it makes you happy? • Is there something you've always wanted to try but never did because of some reason or another? • This year has been a whirlwind for me, but I've also been able to find the still, small moments that help to slow things down. • One of the ways I choose to slow down is with punch needle embroidery. The piece featured in this picture is a mushroom my sister @bayleymolholt drew and I punch-needled. Punch needle embroidery is enjoyable to me because it's like painting with yarn or thread. We hear from parents a lot asking how to raise body positive children in our size-obsessed culture. Here’s a big first step: accept your child‘s given body and continue to model this acceptance as she grows and develops. Your growing child does not need to be concerned with or hear concerns about her weight or body size, just as she does not need to be concerned with any of her other genetic programming. Treating body size as you treat shoe size will model body diversity for your child. This can be a hard first step. Look to other supportive adults if you do have concerns. They can help you move towards acceptance if you’re not there yet. {NEW} When you’re making food choices according to diet rules, it puts food in the drivers seat of your life. Healthy eating is flexible eating. Without food rules, you’re able to tune in to your body, your brain knowledge, and what food is available to make the healthiest choice for yourself in that moment, whether that means the tastiest, easiest, most nutrient dense, or most energy dense. The book Resilience: Hard Won Wisdom for Living a Better Life tells us, "If we’re open to the possibility that we might be wrong, and we adjust our thinking based on what we learn, then over time our theories become stronger and we can have more justified confidence in our ideas.” Many people are afraid to ask for honest feedback, because it is hard to hear that we are doing something wrong. However, it is extremely important to not only get this feedback, but also to act on it. It is much better to hear constructive feedback from someone as you ask them for a letter of recommendation than it is to have your application contain a less-than-stellar recommendation. In addition, you need to develop an appreciation for feedback, because when you do match to an internship (or Future Education Model program), you will constantly receive feedback.

At the beginning of the month, a client told me his office was doing a “weight loss challenge” leading up to Christmas. Meaning at the end of the month, the individual who lost the most weight (as a % of starting weight) would win $1000 🙈 thankfully, my client was privy enough to decline entering (he was actually the ONLY person in the office to not participate). I don’t think “weight loss” is a dirty word at all, but here is my opinion on why a weight loss scheme that is financially incentivized is not a good idea.... 1. People will do anything to win that 1k prize. This is not a lifestyle change motivated by health. This is a competition to see who can loose the most weight for money. This leads to extreme behaviors, such as starvation and intentional dehydration, to produce the desired number on the scale 2. The changes made during this time are most likely not going to stick at the start of the year. The challenge has an “end date”, meaning at the end of the 31 days, if they did not win the prize, they will most likely revert to their previous eating habits. This might also lead to bingeing after the competition is over 3. December is a month that tends to have a higher number of social gatherings, usually centered around food and booze with friends and family. Someone trying to compete in a weight loss competition may sacrifice their social life to drop the weight. Skipping out on evenings with friends and family due to fear of food/drinks is not healthy. This competition can actually instill food phobias and foster a negative relationship with food 4. Weight is not a measure of health. I have mentioned this many times on my page, but the number on the scale does not dictate whether you are healthy or not. The lifestyle you live indicates health - not a number. . I actually like the idea of a community coming together and focusing on health, encouraging each other and supporting one another. BUT, that is not what this office is doing. Instead, they are putting all the focus on a single variable (weight) and not taking anything else into consideration. And with such a prize as $1K, people will do extreme things to win (cough cough biggest loser 🙈)
Cookie dough ornaments!! So fun!! * You will need: * 4 cups all purpose flour * 1 cup salt * 1 1/2 cups warm water * Knead the dough until a ball forms and it’s smooth and firm * Role out dough * Using cookie cutters cut out shapes🧸 * Use a straw to make a hole for hanging * Bake at 300F until dry- about 1 hour * Let cool completely * Then paint those babies! 🎨
I got about 2/3 through my dietetic training before I decided that I did not resonate with a lot of what I was told. I did not believe my role as a healthcare provider was to "fix" people. I felt so icky positioning myself as the authority and creating this power dynamic that didn't feel like it was truly serving human beings with needs, emotions, and lived experiences. As a dietitian, my work with my clients is a partnership.. and I'll be the first to say (always in our very first session), that our goal here isn't for you to listen to me and do what I say. It's for me to learn more about you and your body, so that I can help you understand things about yourself that you may have never considered. It's about me doing less of the talking about more of the listening. It’s about putting you in the driver’s seat. Why? Because your body is smarter than my degree. Do I know a lot about nutrition? Yep. Could I write you a tube feeding order and get really specific on the type of formulas you need? Yep. But baring severe medical conditions, your body doesn't need that. It doesn’t need a calculator. Your body has the innate ability to know what foods satisfy it, types of foods that work best in it, how much/if any movement serves it, and what it needs beyond just food and movement. Your body is so, SO incredibly smart! And I could work with you every day for the rest of your life, but I'll never actually know what its like being in your body. Only you and your body know that. So, my role isn't to be an expert and to tell you how to change. It's to be your partner in this, and work together to explore what making changes, or not making changes, would look like for you. Your body is a million times smarter than my degree, and I'll be here praising that with you every day.
It's so easy to pick ourselves apart. I do it all the time. Once I have this, things will be better or if I complete this or lose a little this my life's value will increase. Why do we do this? Why can't we be content with where we are? I believe it's human nature to strive for more and for greatness. There's nothing wrong with it but I also believe that to recognize that your life's worth isn't placed only through accomplishments. Trust me, I live for achievement, but I know that so much more in life gives me purpose. Keep that in your back pocket on this Wednesday. 💙

This December has been an unusually busy month for me and without meal planning and planning out when I can get in some exercise and self care, all of those things would go out the window. So to help that, I made a batch of peanut butter balls to use as a snack on the go. The ingredient list is simple, and its no-bake so no fuss. It also serves as a healthy-ish treat if you need a sweet pick me up that is full of healthy fat/protein to keep you feeling satisfied for longer. Here's the scoop ➡️ 🔹️Mix 10-16 oz peanut butter or other nut butter 🔹️1/3 c. Almond flour and reassess as needed for texture 🔹️1/3 c. Can we take a minute and talk about how the diet industry has become a $70 billion industry? Yep, $70 BILLION. WITH A B. If diets worked we would need just one. But diets don’t work. So we keep chasing them. We return over and over, buying more and more products hoping the next one will work. We end up feeling terrible (emotionally+physically) and they end up rich. This makes me V angry. You can say NO to the next diet. You can choose not to waste anymore time, energy and money on diets.
As we keep inching closer to Christmas, holiday parties and travel start to cut into our weekly plans. Don't forget to still have some tasty options for meals at home, though. Even if you won't be following you normal eating pattern the next few weeks, don't neglect the nights when you can enjoy your own cooking. . One of my favorite quick and easy recipes is tacos! Not only do they come together quickly, but you can make a lot of a little at once depending on what you need. They also freeze really well, so make a big batch and then keep some in the freezer for quick meals. . Here's my favorite recipe: - 1 lb ground meat - 1 onion, diced - 1 bell pepper, diced - 1 can beans - 1/2 cup salsa - 1-2 tbsp chili powder - 1 tbsp cumin . Add meat and veggies to a pan on medium heat. Once the meat is cooked through, add in beans, salsa and spices. Eat with rice, tortillas, chips, avocado, or anything else you have! You can also throw in any type of vegetable to use it up. If you don't have vegetables, no worries either. . But a lot of my clients come to me frustrated that their doctor didn’t advise them to do _____ to help with ____ . . Doctors are trained in medicine 💊. They get less than 25 hours of nutrition education in medical 🏫 school. Dietitians are trained in nutrition 🍎. We need a minimum of a bachelor’s degree + A period of supervised practice (9-12 months usually) + National certification as a registered dietician (RD)/registered dietician/nutritionist (RDN) by passing the CDR exam + Licensure as a dietician (in most states) + Masters degree 📜 for advancement . . Seriously love this from @rachaelhartleyrd 🙌🏼 {accidentally just deleted this post so I'm putting it back up 🤦🙃} . This is a really good way to check in with yourself as you're making food choices - is your decision coming from a place of nourishment and self care? Or is there a bit of diet culture creeping in? 🤔 . There's no such thing as perfection, and intuitive eating is no exception (see @hannahrdn for a post on this! {And also.... Exhibit A with my imprecise clicking that resulted in me deleting this post after it was up the whole day 🤷🏼‍♀️}), but we definitely can love on our bodies better by challenging diet culture thoughts that might be influencing our food choices.
Is there one dinner that if you made it unannounced would be welcomed by your partner, no questions asked? . Our “no questions asked” meal that needs no discussion or approval is Acorn Squash Quesadillas! If you caught my stories last night, you can see how EASY they are to throw together- that’s one reason why I love ‘em as the chef- but what’s better is that even if I don’t tell Danny that’s what we’re having for dinner he will HAPPILY go along with these. . Besides being easy and picky-eater (formerly, in my husband’s case) pleasing, some other recommendations I have for what makes a great “no questions asked dinner” are: . 👉 no overly fancy ingredients. You’ll want to be able to make this meal in a pinch, and if you have to take a trip to a specialty shop for that one condiment you ran out of, then that takes the ease out 🤷‍♀️ 👉 it’s not something seen too often in your dinner rotation. When this meal comes to the table, it should still be exciting and fun. No chef wants to hear, “ I know I love this dish, but do we really need to have it again?” 🤦‍♀️ 👉 there’s no questions about nutrition. It’s a dish that contains carbs, protein, veggies, and healthy fats in an easy to accomplish package 💁‍♀️ . I get asked all the time how much protein you should be eating as well as how to get said protein in your diet. It doesn't need to be complicated to be sustainable & delicious.⠀ ...⠀ How much protein do you need? Well, if you google “how much protein do I need?” You’ll run the gamete of finding out that you eat⠀ ⠀ 1. too much protein ⠀ 2. not enough protein ⠀ 3. the wrong kind of protein and⠀ the list goes on. ⠀ ...⠀ There are so many people who fear monger protein and caution you against eating enough. Here’s the honest truth. If you eat REAL WHOLE FOOD sources of protein, it’s REALLY hard to overdo it. Have you ever been at dinner and thought “I could really eat another pound of meat.” My guess is for the majority of you the answer is no. Double tap if you share my love of pasta! ⠀ I am a huge fan of pasta and pizza crust. Yes, they are generally refined white carbs. But that doesn't make them off limits. ⠀ As a dietitian, I sometimes feel conflicted about all of the "healthier" substitutes out there, like zoodles and cauliflower pizza crust. Yes, I am totally on board with these alternatives a a way for people to eat more vegetables (which is definitely a good thing!), but I don't think people should ever get the message that regular pasta and pizza are "bad" foods. ⠀ Sometimes I like spaghetti squash for dinner, but other days I want a bowl of spaghetti, swimming in a tomatoey sauce, and sprinkled with Parmesan cheese. Sometimes it's the whole wheat kind, and sometimes it's not.
