sweet & savory breakfast this morning :) one slice of @daveskillerbread topped with raspberry jam and scrambled eggs. i made the scrambled eggs by whisking together 1 egg, 3 tbsp liquid egg whites, small spoonful of vegan pesto & pico, s&p, and EBTB seasoning with a fork in a small bowl. i then added sliced mushrooms and tomatoes, mixing everything together. i made them in a small frying pan with a little olive oil over medium-high heat but when the eggs were halfway done, i also added some greens to the pan since they don’t take as long to cook! finally, i topped everything with fresh microgreens🍳
We've had a bumper crop of vegetables and fruits from the garden this year, but tomato season is just about done. We're still getting tomatoes, but they're mostly for canning and soup at this point. We try to eat seasonally around here, and while we don't eat 100% seasonally (I'm thrilled if I can hit 80%), it's easy to do with such a large garden. That means we eat a lot of tomato salads and tomato sandwiches during the summer, and lots of chili, soups, stews, and sauces throughout the winter. Feeling bloated after you eat? 🤨 . . This savoury waffle is a BIG treat for me as I try my best to stay away from deli meat. Even though it’s low in calories and provides protein, it is high in sodium, fat and is classified as a carcinogenic (according to WHO). . . The daily intake for sodium levels is between 1500-1800mg and one serving of deli meat is half your intake 😳. Sodium controls fluid balance in our bodies and maintains blood volume and blood pressure. Eating too much sodium may raise blood pressure and cause fluid retention leading to swelling. That said, feeling bloated after you eat? Track your daily intake for a day as the average person consumes 3500mg per day 😉. . . Okay so next question is deli meat safe for us and why am I eating it today. In general, consuming the occasional slice of low-fat, low-sodium lunch meat shouldn't harm your health, but eating it frequently may bring about health problems according to the “American Heart Association”. If you do choose to eat lunch meat, choose a healthier option such as lean, low-sodium turkey breast instead of salami, bologna or pastrami. I try my best to eat 20 grams or less a few times a year. I stay away from “smoked” meats and buy natural and nitrate free. I believe in moderation and convenience and sometimes it’s quicker to have a slice of deli meat to get my protein intake. . Do not feel guilty eating high sodium foods but also be aware what you put in your body ♥️. . . Salad number 268 of 365. This is probably a salad with the most number of ingredients I have ever used! It's got kale, parsely, lollo rosso, cheese, eggs, boiled potato, bacon, cranberries, cherry tomatoes, dried apricots, pipped quinoa, starfruit and roasted almonds with a dressing of olive oil, home brewed kombucha, mustard, garlic, red chilli flakes and salt. It's an explosion to the senses. Every bite has a different taste, depending on the ingredient you bite into. Mmm mmmm mmm. Not much compares to the smell of a hot fresh loaf of bread. It takes 4 ingredients (I use for this general purpose sandwich loaf, Organic unbleached all purpose flour, Himalayan pink salt, active dry yeast and filtered water), about 5 minutes of actual hands on prepping. Something so interesting that has come up more than once with my health coaching clients is when someone enjoys an upgraded meal or snack (for example cauliflower pizza, a raw cacao cup, or banana “nice cream”) they still feel as if they are eating something “bad” and the guilt still lingers. This is so fascinating to me! That objectively, these foods are not only upgraded but actually provide nutrition. But because our mind has been conditioned to perceive similar foods one way, that association can be just as strong. The real trick is to release all judgement. Food isn’t “good” vs “bad,” it is either nutritious or not nutritious; it either benefits your physical body or it doesn’t. This isn’t to say we are going to be eating clean 100% of the time (we won’t! And I have a philosophy on that too), but the more you can release the judgement, the less likely it will lead to negative emotion. Just some food for thought! • Speaking on upgraded treat, these chocolate hazelnut sticky buns will be in my holiday e-book!!

La tortilla está frita en muuuucho aceite para que sea crujiente (tostada), los frijoles los guisan en aceite o manteca para darles buen sabor, el huevo lo hacen frito para que esté rápido y no se vaya a pegar al sartén y para terminar, hasta la salsa la terminan friendo para calentarla 😢 . . Así que es un desayuno que prefiero hacerlo en casa porque limito mucho el uso de aceite y así me quedan!!! . . Manos a la obra 👐 . . 🍃Tortilla de maíz dorada en comal sin aceite 🍃Frijoles machucados sin aceite 🍃Huevo estrellado con un pelin de aceite (no uso ni la cdita) 🍃Salsa roja tatemada y hervida . . Super fácil, rico y sin necesidad de usar los litros de aceite!!! . . No estoy en contra del aceite, el problema viene cuando lo utilizan en exceso!! For dinner I made roasted cauliflower and roasted garlic puree, blanched and sautéed romanesco, lamb shoulder that the butcher cubed for me, sliced radishes and dollops of @biritesf ready made romesco sauce. The kids received a deconstructed version of this. It was so good and everything always tastes better to me in a bowl!⠀ ⠀ All inspired by @cookingclaudine , a local natural chef. I had the chance to taste her magic last year and she is always so great at making simple and healthy food taste so good. (Check out her page, her presentation of this dish is gorgeous.) I used 1 part 🥥 sugar/ 1 part 🍎 sauce . And I subbed the cc’s for (chopped)organic 85% cacao bar

“Shrimply the best.” 🍤 • Holy moly, these Bang Bang shrimp by @40aprons are the best things I have ever tasted. I can’t take credit for making these beauties though; my father-in-law whipped them up, and I’m forever grateful. Not only are they delicious, but they’re Whole30 and Paleo friendly! • I was lucky to grab a picture before they disappeared. I felt like a thief as I stole these away from people eating them and was then chased by said people as I snapped. They are addicting! • The shrimp coating is made of egg, coconut flour, arrowroot powder, and s&p. Then they are fried in coconut oil and lastly tossed in the Bang Bang sauce: mayo, sriracha/hot sauce of your choice, ketchup, coco aminos, garlic, & salt. How easy!
