You know the thing about old houses, especially in the Midwest, is that they typically come with littler kitchens, something I have always found endearing and makes for better organization skills 😉 when we moved into our 1929 Tudor, we gave the whole (tiny) kitchen a refresh by painting the cabinets, Pottery Barn Naval for the bottom and Snowbound for the top, took off the upper doors to have the appearance of openness and adding a fun rug! Best $75 we ever spent and a kitchen that became more functional and cuter! And Jack loves his permanent spot on the countertop taste testing mama’s chocolate chip cookies 🍪

👩🏼🍳Eggs are a very good source of inexpensive, high quality protein. More than half the protein of an egg is found in the egg white along with vitamin B2 and lower amounts of fat and cholesterol than the yolk. The whites are rich sources of selenium, vitamin D, B6, B12 and minerals such as zinc, iron and copper. 👩🏼🍳Egg yolks (but not whites) contain vitamins A, D, E and K along with omega-3 fats. Compared to the whites, egg yolks also contain more beneficial folate and vitamin B12. The yolks also contain far more of the nutrient choline than the whites, and all of the antioxidants lutein and zeaxanthin. Bottom line is - have a whole egg please!! It's good for you🍷

Citrus Shrimp & Avocado Salad
For the Shrimp:
-1 lb of Shrimp, shelled and deveined
-Juice of 1/2 Lemon
-1/2 tsp Chili Powder
-1 tsp Ground Cumin
-2 Tbsp Olive Olive Oil
-Pinch of Salt
For the Salad:
-1 Ripe Avocado, cut into small cubes
-1 lb of Tomatoes, chopped
-1 cup Quinoa
-1/2 cup of Cilantro
-Juice of 1 Lemon
-1 Small Clove of Garlic
-3 Tbsp Olive Oil
-Salt to taste
—In a bowl, toss together the shrimp, lemon juice, chili powder, cumin powder, olive oil and salt, set aside while you preheat a pan on high heat.
—Cook the shrimp on the hot pan for just a couple of minutes until fully cooked through, remove the seafood and place them in a bowl, set aside.
—In a small mini chopper, add the cilantro, olive oil, lemon and garlic and pulse until just about smooth.
—Add the remaining salad ingredients along with the vinaigrette to the bowl with the shrimp, toss all together to mix then cover and pop it in the fridge for about half an hour before serving.
