Last night after both taking and teaching OTF🍊🧡 I spent some time reflecting on my goals for the remainder of the year, and what I’ve already accomplished so far. .
I still can’t believe that I completed a marathon and LOVED it so much that now I’m running in a second marathon, 2 months after Chicago. 😱😱😱
My goal for the Dallas marathon is to beat my time in Chicago, and I am strategizing a bit differently this time since I know what to expect. 💪🏼🔥💯
All that to say, your body can accomplish AMAZING things when you dedicate your mind and focus! There’s nothing special about what I have done to lose weight and reach my fitness goals. No magic pill or crazy yo-yo dieting.... just HARD WORK, dedication, and a wonderful husband for my support system who helps me stay confident (and sometimes he helps me meal prep too 😜🤗🥰). If I can do it, you definitely can too! 💖💖💖
I’ve had to learn how to fight for myself.
After last nights mini meltdown, I set my alarm for 3 am so I could get my therapy session in before my butt sits on a plane all morning!
Speed 45 (day 17/21) is the hardest workout of this program, and it was exactly what I needed to smush last nights words that came yelling through my head “You’re average. You’re going no where. You’re not helping anyone. You can’t do this by yourself. You’re not confident.” Fighting through this workout, taking my post workout selfie and snapping it to my accountability group reaffirmed to me that those words are nothing but lies.
I am empowered. I am confident. And I am going to ARIZONA!

This is one of those dishes that dispel the argument that vegans just eat bland rabbit food. Spices are plants, guys! 🌱
I grew up eating coconut-based Malaysian curries but I love playing with other styles.
This one was so simple. My hot tip is to toast the spices. It's key to developing their flavor. If, like me, you use premixed, ground spice mixes like garam masala, saute off your onion, ginger and garlic and at the very end, add your spices. That ensures you get the toastiness but don't burn anything.

Making food for a family with a new baby is an incredible way to bless them. I had the opportunity to do so this week, but the truth is I get very nervous about cooking for other people..
This time, however, I felt confident making my Asian-inspired chicken and rice dish with the help of @successrice
was a quick and easy addition to my meal without sacrificing any of the quality. Here’s the recipe!:.
1/3 cup Soy Sauce
1 garlic clove, crushed
1⁄4 teaspoon ginger
3⁄4 teaspoon crushed red pepper flakes
1⁄4 cup apple juice
1⁄3 cup light brown sugar
2 tablespoons ketchup
1 tablespoon cider vinegar
1⁄2 cup water
2 lbs Grilled chicken (4 servings).
Grill the chicken until lightly browned and set aside. Mix the remaining ingredients together for the sauce, & combine with the chicken and let simmer for about 20 minutes. Serve over #successrice

Western Sicily: Food edition 🍝
🍘 Arancino, the street food - a rice ball stuffed with ragú or mozzarella or peas, coated in bread crumbs, then deep fried. A great bite on the go. .
🍧 Granita - mine was just straight fresh-squeezed lemon juice and shaved ice, no sugar 🙀 definitely one way to wake up in the morning. Opt for grapefruit or almond instead unless you like sour! .
🍝 Pesto Palermitano - pistachios and eggplant abound!
🍝 Pesto from Trapani - in this provincial variation, it’s toasted almonds, basil, garlic, and tomatoes. The pasta was made without eggs too, so this is a great #veganitalianfood
🍝🍤 We found a Trapanese restaurant our last night and their variation of Pesto Trapanese was more creamy and oh so good. And the shrimp 👌🏼 seafood lovers love Sicily
🍞 Ricotta cheese (from sheep’s milk only!) is quintessential in Sicilian cooking - simply slather some on fresh baked and super fluffy focaccia, sprinkle some parsley, and voilà! How easy was that?
🍰 It wouldn’t be Sicily without a cannolo! More ricotta, sweetened and with pistachios!

MARMITE NUTS & SEEDS
I am nuts about nuts, but tend to forget about them seeds....
🥜 This is a really easy recipe for using up any nuts and seeds lurking in cupboards, and makes a great snack. Plus, both nuts and seeds are little powerhouses of essential fats, vitamins, and minerals - particularly vitamin E, selenium, and manganese.
🔬Perhaps the more surprising fact is that good old marmite, the humble yeast spread loved and hated in equal measure, is a cracking source of vitamin B12 - usually only found in animal products and which we need (among other things) for red blood cell formation and nerve cell maintenance.

~Karamelize şerbeti için;
2 su bardağı toz şeker
2 su bardağı soğuk su ~Kreması için;
4 su bardağı süt
5 yemek kaşığı şeker
1 su bardağı artı 1 çay bardağı un
2-3 yemek kaşığı tereyağı
~Portakallı sos için
2 su bardağı portakal suyu
2 yemek kaşığı nişasta
3 yemek kaşığı şeker
Fındık kadar tereyağı
Etimekler genişçe bir tepsiye dizilir.
Şeker, tabanı kalın bir tencereye alınır ve orta ateşte eritilir. (Rengi çok koyultmayın karamel rengi olduğunda suyu ekleyin ki acılık olmasın) Şeker eridiğinde ve rengi koyulaştığında soğuk su eklenir. (Bu aşamada şeker taş gibi olur sorun yok aynen devam edin az sonra eriyecek😌) Şeker içinde tamamen eridiğinde kaynatılıp altı kapatılır. Sıcakken hemen kepçe yardımı ile etimekler kuru yer kalmayacak şekilde ıslatılır.
Un, şeker, süt bir tencereye alınarak pişirilir ve bu sırada sürekli karıştırılır kaynadığında altı kapatılır hemen vanilya ve tereyağı eklenerek karıştırılır (İsterseniz pürüzsüz bir krema için mikserle çırpabilirsiniz😊)
Krema sıcakken borcama alınan etimeklerin üzerine dökülerek yayılır ve soğumaya alınır (Ben yüksek olması için 2 kat yapmayı tercih ettim).
~Portakal sosu için;
Tereyağı hariç tüm malzemeler karıştırılarak sos pişirilir kaynadığında tereyağı eklenip karıştırılır soğutularak pastanın üzerine yayılır. (İçinizden geldiği gibi süsleyebilirsiniz veya sade de bırakabilirsiniz zaten pürüzsüz güzel bir görüntüsü oluyor🧚♀️)

GIVE THANKS & GIVE HEALTH
We all love a great holiday meal, right? A feast made with love and eaten in the company of your loved ones— it’s a beautiful thing! Now, maybe I’m an oddity— as someone who works in health and nutrition, and therefore, is acutely aware of the effects of various kinds of fuel on the body (for better or for worse)— but what I love EVEN MORE is a HEALTHY feast made with love and enjoyed in the company of loved ones. •
It brings me so much joy to hear people say they enjoyed something I made that I know will truly nourish and serve their body well. Why is there so much sickness (cold and flu season), tiredness, lethargy, etc. this time of year? It’s because of the way we typically fuel our bodies at the holidays. Want to keep yourself and your loved ones in a state of HEALTH this season? Then my challenge to you is: make/buy/serve/choose healthier options this year. •
That’s not to say you have to give Grandma’s signature dish the boot or completely overhaul your entire Thanksgiving menu (although that’s a fantastic idea, if you’re up for it 😉), but to just be more mindful, because how we fuel our bodies has everything to do with every aspect of our health and daily performance. •
And to be clear, almost every traditional holiday dish does have a healthier version... tweaks CAN be made without losing the taste! Or maybe look at this challenge as a fun opportunity to shake things up a bit and try new things for your holiday menu!

Gluten free lunch idea when you're on the run.🏃♀️🏃♂️🏃♀️🏃♂️
Arame broth with zucchini - it's packed full of flavour and nutrient rich.
- 1-2 cups water or bone broth (warm)
- Arame (a sea vegetable that works well as a noodle replacement)
- Zucchini (diced) or any vegetables
- Chilli flakes
- Organic miso paste (1 teaspoon)
Combine all the ingredients in a pot and gently warm on the stove.
Take it to work in a thermos or make in about 5-10 minutes on the stove top.

~ FRITTERS ~
I went through a phase of making fritters for lunch once a week, but haven’t made them in months. Today, they were back on the menu - Sweet Potato and Corn Fritters with a poached egg.
As usual, the kids loves them and they are a great lunch for Elise. We have leftovers, so Mark wants some for kinder lunch tomorrow, which makes my morning a little less hectic tomorrow 🙌

Alright so as promised here is the recipe for the Mexican lettuce wraps 👌
You can use this in normal tortillas if that is more your thing ... I’ve just recently cut out gluten from my diet so I used lettuce for the wrap ... the lettuce made it just so nice and refreshing 👌
Salt and pepper
Stock liquid (I cooked the beans in a veg stock with carrot celery onion garlic so I used the liquid left over but you can use any kind of liquid stock, youll need about 1-2 cups)
1. Cook your black beans if using dried beans and set aside keeping liquid
2. Chop onion and garlic finely , and slice tomatoes ,grate carrot , chop kale and remove corn from cob
3. Add olive oil to pan and heat on medium , add tomatoes onion and garlic when oil heats up , cook this till the tomatoes start to break down then add the grated carrot and cook a little more , using the liquid stock as required if the mix starts to dry up
3. Add your spices , oregano powder and salt and pepper and more liquid
4. Now add the corn and chopped kale and cook till the kale starts to wilt
5. Add rice and mix it all together well, also add spring onion and fresh parsley and coriander and mix it all together adding more liquid stock again if required , allow to cook for a few mins then it’s ready
6. Serve with lettuce wraps or tortillas , your choice , you can top it with avocado and more tomatoes or whatever you like :)
Earlier today we took out our paintbrushes, filled our palettes, turned on some Christmas tunes and crafted our hearts out! Today was a perfect day! It reminded us of all those times as kids sitting around Nana's table pretending to be the hosts of our own craft show and recreating the projects she recorded for us on VHS for our visits. The only thing missing today was her...

It’s a Simple Loaded Spaghetti Squash kind of night! I think everything is better loaded up - nachos, spaghetti squash, avocado toast, you name it.

The temperature is SLOWLY dropping in LA, so I am taking full advantage by making spaghetti squash a go to veggie for dinner. There’s just something so comforting about warm squash on a crisp night in November! I loaded my squash up with sautéed brussel sprouts, onions, + chicken. The only thing missing is a drizzle of hot sauce or aioli on top 🤤 The beauty of spaghetti squash is it makes a lot of extras - cook extra chicken + veggies with your squash to prep easy grab + go meals the following days. Talk about making your life SIMPLE!

How to make 👩🏻🍳 Sautéed brussel sprouts *Heat a pan over med heat + add olive oil
*Chop up half a sweet onion + add to pan first *My go to seasonings are Salt, Pepper, Garlic, Basil, or @traderjoes
Everything Bagel Seasoning *Chop brussel sprouts in half or fourths depending on the size *Let onions sauté until they start to turn golden then add Brussels
*Cook over med-low heat until browned
*I love my veggies nice + crispy so turn down the heat to crisp them without burning

I've been trying to figure out some different ways to incorporate more vinegar into my diet because I was reading something last week that said it can reduce your body's insulin response by up to 30% - I used to be a really bad type 2 diabetic as a kid/teen, was able to go off meds after I lost about 40 pounds, but I did need a tiny bit of metformin to get pregnant. So anything natural that can help me stay medicine free is worth a shot! Also, there's never enough green food in my diet (I really want to get back into green smoothies but it's expensive and I'm not working right now so... yeah). I came up with this cucumber salad a few days ago thinking I could have a little bit before meals, but it was so damn good I ate it as my diner last night and lunch today and now I need to go buy more cucumbers.😅 If you have any awesome vinegar recipes please drop them below so I can try them out!
