|RASPBERRY CHICKEN CORDON BLEU| Tried to get the classic taste of chicken cordon bleu in 10min with a fruity twist, it worked but the pan was a ffff to clean!🙄Few tips when making: 1| lay out a sheet of foil to build the chicken on 2| while the pan is still warm, use your spatula to scrape up all the melted cheese + raspberry preserves...if it sits it will harden and become impossible to clean unless you reheat🤗 Other than that this dinner is extremely quick + easy😜
3 spoonfuls raspberry preserves
1Tbsp spicy deli mustard
1/4tsp dried thyme
Pinch red pepper flakes
1lb thinly sliced chicken breasts
6oz shredded Gruyere, if you can’t find this, white cheddar would work too!
10 slices of deli ham (your fave works, I used cooked deli ham)
1| In a small bowl, mix together the raspberry preserves, mustard, thyme + red pepper flakes
2| Lay out a sheet of foil + place chicken breasts on then spread the raspberry preserve mixture on top of each breast
3| Next top each breast with shredded cheese then place 2 pieces of ham on top and wrap around the back
4| Heat a little olive oil in a large skillet over medium-high heat + cook the chicken 4-5min a side (cooking time will be higher if your breasts aren’t thin, just keep checking them) *tip* when you’re flipping them over, use a spatula and a fork to turn
Tonight's one pot meal was Dutch oven lasagna and crusty shepherd's bread (top two photos) served with garlic butter. We dug into the pot before I remembered to capture an unblemished photo (bottom left), but you get the idea with the close up (bottom right). I garnished the top with fresh basil leaves.
So many of you emailed me for yesterday's one pot recipe, that I decided to include from the get-go.
DUTCH OVEN LASAGNA
total time: 55 MINS prep time: 10 MINS cook time: 45 MINS
1 pound Ground Beef (93% lean or leaner)
1 medium zucchini, chopped (about 1-1/2 cups)
2 garlic cloves, minced
1/2 onion, chopped fine
1 red bell pepper, chopped fine
1 green bell pepper, chopped fine
1 jar (24 to 26 ounces) garden-style pasta sauce
2 cups water
6 ounces uncooked mini bow tie pasta (about 2-1/8 cups)
1/2 teaspoon ground black pepper
2/3 Cup ricotta cheese
1-2 cups Mozzarella Cheese, sliced
Thinly sliced or chopped fresh basil
Preheat oven to 375°F.
Heat ovenproof 5 to 6-quart Dutch oven over medium heat until hot.
Add Ground Beef, garlic, onion zucchini, and peppers; cook 8 to 10 minutes, breaking beef into small crumbles and stirring occasionally.
Stir in pasta sauce, water and ground black pepper.
Bring to a boil, stirring occasionally, for about 5 minutes.
Remove from heat. Stir in pasta.
Spoon heaping teaspoons ricotta cheese over top of sauce.
Slightly swirl ricotta into sauce, not mixing in completely.
Cover with foil and bake in 375°F oven 10 minutes.
Uncover. Sprinkle with mozzarella cheese.
Bake 7 to 10 minutes or until pasta is tender.
Let stand 5 minutes.
Sprinkle with minced fresh basil leaves before serving.

2.Черри - 15- 20 шт.
3. Оливки без косточек - 10-15 шт.
4. Паста 300 гр.
5. Соль, перец, зелень, приправы по вкусу.
7. Чеснок - 3 зубчика 🔸🔸🔸🔸🔸🔸🔸🔸🔸🔸
1. Ставим пасту вариться. ( не забываем подсолить воду)
2. Режим Черри, оливки на половинки. Чеснок давим( или мелко нарезаем)
3. Тунец мнем вилкой, чтоб получились мелкие кусочки.
4. В глубокую сковородку наливаем немного оливково масла, добавляем давленный чеснок, немного обжариваем на среднем огне.
5. Добавляем Черри и они томятся 5 мин на среднем огне.
6. Затем, добавляем тунец и оливки. Также обжариваем.
7. Все заправляем перцем чёрным, немного подсалить и зелень.
8. Пасту довариваем, сливаем воду и добавляем к нашей обжарке. Хорошо перемешиваем.

It was a constant roller coaster. I wanted to feel comfortable, but every fall and winter I’d eat like a mad woman and not move a muscle.
That’s exactly what I had been doing in the left picture. The whole trip I kept saying I couldn’t wait to get home and start running and counting calories again because I felt SO uncomfortable in all my clothes. I remember posing in specific ways to look skinnier, and not posting several pictures because I hated the way my arms looked. I could barely give a real smile in the picture because ALL I could think about how “fat my face was”
Fast forward to now, and I feel SO comfortable in my own skin, strong, healthy, and so happy with all my hard work. I can enjoy a treat without thinking of the calories, because I KNOW it won’t ruin my progress and I KNOW it won’t make me go into a downward spiral.
I’m forever thankful I took a leap in this new direction, because I feel so much freedom and joy in this new lifestyle.

Pan Seared Garlic Butter Scallops with Parmesan Lemon Asparagus and Seasoned Redskin Roasted Potatoes 🔥
This was so yum!
1: half and season some small redskin potatoes and place them in a bowl, drizzle olive oil, paprika, garlic powder, salt, pepper and parsley over it and mix until covered
2: place those on a cookie sheet in your oven at about 370 for around 20-30 mins. You want a nice crisp to them!
3: cover your asparagus in lemon pepper, salt, drizzle in olive oil and place in at the same temp for about half time of the potatoes, then take them out and cover them in Parmesan cheese and put them back in for about 5-8 minutes until they’re crisp on the outside
4: place a stick of butter and some olive oil on high with some salt pepper and minced garlic until it starts smoking and browning
5: season jumbo scallops with salt and pepper and garlic, then place in the browned butter for 2 minutes on each side (they don’t take long) then squeeze a lemon over them and flip once more after a minute and they should be ready
6: take them out and place them on a paper towel and pair them all together - sooo yummy. Season with some more paprika and you can add a salad in like us. We loved it!

pesto chicken with Parmesan zucchini for dinner tonight! I baked the chicken breast for 30 minutes, added pesto and Parmesan on top, then continued to bake it for 10 more minutes 👌as a side I sliced and sautéed zucchini then added Parmesan for flavor. Great pair together! happy to be back cooking after a weekend away 😄

Hice dos. Una la dejé lista para comer y la otra la saqué un poco antes, la dejé reposar y enfriar y luego la congelé. Así en otro viaje la descongelo y se termina de hacer en el horno. .
En el mismo horno hice el matambrito de 🐷🐖 que subí ayer. .

Me acuerdo que de chico era de la unica forma que mi vieja tenía para que comamos coliflor y hoy en día es una de las verduras que más me gusta 🤤🤤. Pero no está de más recordar esta receta que nunca falla
-50gr de Manteca
-50gr de Harina
-500ml de Leche -100gr Queso Cremoso
-c/n Queso Rallado
👉precalentamos el horno a fuego fuerte. Cortamos el coliflor en flores y a partir de agua hirviendo lo cocinamos por 3min(esto se llama blanquear) reservamos el coliflor mientras preparamos la salsa blanca. En una olla a fuego medio derretimos la manteca, agregamos la harina y cocinamos esto durante 1min, una vez formado el roux comenzamos a agregar la leche de apoco revolviendo constantemente hasta lograr la consistencia deseada. Ponemos las flores de coliflor en una fuente previamente enmantecada, le tiramos toda la salsa blanca por encima, agregamos en trozos el queso fresco por arriba y cerramos con un poco de queso rallado. Horneamos por 30min o hasta que esté bien grantinado.

Combine 2/3 cup rolled oats, 1 tsp baking soda, 1/2 tsp sea salt, and 1 tsp cinnamon in a bowl. Mix well.
With a mixer, beat together 1 cup almond butter, 2/3 cup dark brown sugar, 2 eggs, and 2 tsp vanilla. Slowly add in the oat mix. Stir in 2/3 cup dark chocolate chips..
Scoop about 1 tbsp round of dough onto cookie sheets with parchment paper. The dough will be VERY sticky!! Bake at 350 for about 9-10 minutes. Enjoy!!!

1 cup heavy cream
1/2 cup Sherry Wine
1 cup mozzarella cheese, finely shredded
Salt & pepper, to taste
With the pasta cooked and set aside, add 2 tablespoons butter to skillet pan over medium-high heat. Once the butter starts to melts add flour while constantly stiring let flour cook through about 1 min. Slowly add cream *do not stop stirring * add cherry, Parmesan cheese, carrots, spinach, and left over chicken marsala. Add pasta mix thoroughly and heat for 5 minutes. Add salt and pepper to taste. WAKE UP EARLY AS HELL
Meet Bonnie. Bonnie loves the mornings. All the bums are asleep and she is not, therefore, she is not a bum!
We have to define our baseline though. If you are currently waking up whenever you want, this is a critical area to address. If you are waking up 30 minutes before you have to work, also critical. When I say early, I don't entirely mean earlier. I mean ... like ... questionably early. Like early enough where people will think you're a freak, early. We want to hit that level of early. I would say aim for 4:00 AM. Start at 6:00 AM on day one if you have to, then continually move toward 4:00 AM each day. Get to the Early As Hell level!
I believe cold showers to be the Clyde to my wake up early Bonnie. I think they both compliment each other so well that one without the other just isn't the same. When I wake up at 4:00 AM, I am borderline a zombie. 4:00AM mornings are pretty awful. But once I take a 0.5 minute to 1.5 minute cold shower, the game changes. I challenge anyone to take a cold shower that early in the morning and not be fully awake when you come out of it. I should also define the cold terms. This isn't the 60% cold 40% warm shower. This isn't the 80% cold 20% warm shower. This is the 100% cold shower. Go just as far as it takes for enough pressure to come out of the shower head, that's how I decide what level to go to.
