What does it mean to respect your body? This is a question I often ask clients and something I struggled with personally for years, while I suffered from bulimia. Now, I understand why it is so important to respect your body, respect your mind, and respect yourself as a whole. When I exercise and choose nutritious and whole foods, it is not a form of punishment, it is the way I show my body that I do respect it and love it through its flaws and imperfections. My melons are thriving this year, and it’s getting close to #harvest time! 💃 🌱 💕 I have a few varieties of melons in my garden - pictured here is a #HoneyDewMelon . Did you know that melons have a high content of #carotenoids ? This means that eating them can help ward off #cancercells . They are also high in many #vitamins and #minerals , including B vitamins, which help boost our #energy . 💪 We all know that the water content in melons is quite high - usually around 90-95%, so eating them regularly will help keep you hydrated. 💦 Melons are also rich in #collagen , so if you’re looking for #natural ways to improve the health of your skin, adding fresh, #organic , melons to your diet can make a big difference. Personally, I like to eat melons on an empty stomach, with other fruit, and/or before a meal. I try to practice basic #foodcombining rules on a regular basis in order to support my digestive process. Because melons are digested rapidly, eating them alone, with other fruit, and/or before a meal helps to reduce the likelihood of digestive upset. Melons are mostly eaten fresh and #raw . Its blueberry season😍 There is nothing better than homemade blueberry muffins👌 These are sugar free and made with coconut flour...so yummy😛 2 ripe bananas (mashed) 1/3 cup of coconut milk 6 eggs (beaten) 4 tbsp melted coconut oil 1 tsp vanilla 1/8 tsp sea salt 1/2 cup of coconut flour 1/2 tsp baking powder 1 cup of fresh Ontario blueberries Mix wet ingredients with dry. Fold in blueberries. Top with some toasted shaved coconut slices. Bake @ 400 deg for 20 min or until toothpick comes out clean. Cool completely before removing muffins or they may stick. Yesterday I was serving two middle aged men who took the time to tell me several things they observed about me that they thought were wonderful. I only interacted with them for about an hour. They complimented my character and told me they could sense that I was going to do great things. It made me so happy. . . I then got together with two great girlfriends last night and we talked about the importance of building one another up. Taking the time to tell someone, even a complete stranger, whatever positive words or thoughts you are thinking not only makes them feel recognized, but makes you feel pretty good too. . . I realize this may not be what everyone needs. My love language is “words of affirmation”, so it lights my soul on fire when I know the reasons behind why someone loves me, cares about me, likes my hair or thinks I’m funny or interesting or whatever it is they believe about me. The beauty for me is in the details. It makes me feel seen and heard and shows me that people are seeing me for who I truly am. . . So say it, but only say it if you really feel it because that person will be able to feel it too. I’ve been keeping my meals very simple lately in alignment with the summer months where your body naturally wants to eat lighter and fresher foods. Here’s some tips on how to keep meals quick and healthy: 🌱buy salad greens (mixed, spinach, arugula, baby kale) and add some 🥑, cucumbers and beets with a side of grilled chicken 🌱have a smoothie for lunch or dinner and ensure you’re adding protein in there to keep you full (try the new @manitobaharvest Hemp Yeah! Plant Protein or their hemp seeds - both excellent plant based protein choices); add a source of fat and fiber in there as well to keep you full longer (try coconut oil, avocado, chia seeds, flax seeds, flax or hemp oil) 🌱batch cook some quinoa or brown rice and get creative with toppings - roasted sweet potatoes, peppers, cucumber, avocado, sesame seeds, sunflower sprouts, tahini dressing etc. 🌱use a spiralizer to create fun “pasta” that can be eaten raw salad style or cooked for a more hearty meal 🌱use a slow cooker and batch cook soups/stews and freeze them in mason jars for ready to go meals when in a rush

Didn’t know what I was going to make for dinner last night, but luckily came up with this! Pan-fried gluten-free gnocchi with roasted tomatoes and fresh corn. It was delicious! 😋🌽🍅🌿 • I made this up as I was going along, so I don’t have an exact recipe, but here’s how I made it: First, I roasted cherry tomatoes and a bulb of garlic - just placed them on a baking dish and drizzled with avocado oil, seasoned with sea salt, black pepper, oregano, and basil; roasted at 400 for about 15-20 minutes. Meanwhile, I boiled some corn-on-the-cob. Next, I sautéed sliced red onion in a pan until they became translucent. Then I added in the roasted tomatoes, two cloves of garlic, the corn niblets (I just cut it off the cob) and fresh basil. Seasoned it with some sea salt, black pepper, oregano, and parsley. Combined it well and then removed it from the pan. I took the cooked gnocchi and added it to the pan with a drizzle of avocado oil. Turned up the heat and let the gnocchi turn golden and crisp. Then added back the veggie mixture and a little pasta water. Mixed it all together and served! If there’s anything I’ve learned in my 25 years on this planet (it’s a lesson that took a while), it’s that FAMILY and FRIENDS are everything. Growing up, I was bullied a lot and, as a result, became a nerdy introvert. I thought that I could create and maintain my own happiness — no strings attached. And for the most part, I kind of succeeded. But, I found something out as I traveled to and lived in Costa Rica, Thailand, Bali, Africa, Cambodia, and other places. That is, that life is incredibly lonely without other people who love you for who you are (read: are willing to sit with you and do nothing, even if you look like a lost, hippie troll). I’m so grateful to my family. It took a while to see why we were in each others’ lives, but our relationships continue to grow stronger and stronger. Is chocolate cake ever a bad idea?! It’s even better when you’ve got veggies hidden inside! I took my Chocolate Zucchini muffin recipe and made it into a loaf. Cooked it for about 50 minutes. Recipe below... 👩🏻‍🍳 Ingredients: 1.5 cup grated zucchini 1.5 cup light spelt flour 1⁄4 cup cacao powder or unsweetened cocoa powder 1 flax egg (2.5 tbsp water + 1 tbsp ground flax) ..you can also use an egg 1 tsp non-alum baking powder 1 tsp non-alum baking soda 1 tsp cinnamon 1⁄2 tsp sea salt 1⁄2 cup pure maple syrup 1⁄2 cup non­-dairy milk 1 tsp pure vanilla extract 1⁄4 cup melted coconut oil 1/3 cup chocolate chips 🍃Steps: Preheat oven to 350F. Line a mini muffin tray. First, in a bowl, whisk all dry ingredients, except chocolate chips, and set aside. In another bowl, whisk together egg, maple syrup, milk, vanilla, and coconut oil first. Then add the zucchini. Next, add wet to dry and combine well. Now, stir in zucchini and chocolate chips. Next, scoop batter evenly into the muffin tray. Place in oven and bake for 14 minutes or until toothpick comes out clean. *If you don’t have two muffin trays, bake the first batch. Then remove muffins, line again and bake the rest of the batter. This was #breakfast today and I talked about it in my stories but let me tell you I could totally eat this ANYTIME! It was so good! Sweet Potato French Toast created by my hubby (I’m doing something right 💪🏼). So basically you just slice the #sweetpotatoes thinly and then prepare them the same way you do regular #FrenchToast . Beat some #organic pastured eggs with a little bit of coconut milk, salt and cinnamon. Then just dip the sliced sweet potatoes in the egg mixture and cook on a griddle or pan with a little coconut oil. It takes a little longer to cook than bread obviously. I’d say about 3-4 minutes on each side and add sprinkle a little more cinnamon on top before serving. Oh and ummm let’s not forget the #peaches which are in season right now and are insanely sweet and juicy and delicious! Eating with the seasons is the ideal way to make sure you’re always getting the nutrients you need through a variety of foods each of which have unique phytonutrients to #heal and #nourish your body. When you are craving something cold & sweet on these hot summer nights, try this... . 4 Frozen Bananas 2 tblsp Almond Butter 2 Ice Cubes purée in food processor until smooth & creamy! . So delicious with just these ingredients but you can add unlimited other flavour options ie cacao, raspberries, cinnamon or even matcha OR even add some protein powder for a hidden protein boost💪!!
