Healthy Black Bean Brownies 😋 Have you ever used beans in dessert recipes? Well this is a great place to start. I was craving something chocolatey today and decided to make these Black Bean Brownies by @chocolatecoveredkatie 🙏 I love that they are so healthy, vegan/vegetarian, gluten-free and still delicious-no one can tell they’re made with beans 😉 If my lovely husband @rooftechindustries hadn’t come into the kitchen he wouldn’t have noticed, and even still he said they were “really good”... success! 👍 I changed the recipe up a little (see below for my version) using half the maple syrup and chocolate chips in original recipe and adding unsweetened shredded coconut instead, as well as a 1/4 cup water to balance out the liquid requirement. I also used whole oats instead of quick oat. They turned out so yummy 😋 Next time I think I’ll add a few dates for extra sweetness and extra cocoa powder to make it even more chocolatey. 😃 Ingredients: (Use organic if possible) * 1 1/2 cups black beans (1 15-oz can, drained and rinsed very well) (250g after draining) * 2 tbsp pure cocoa powder (10g) * 1/2 cup uncontaminated whole oats (40g) * 1/4 tsp salt * 1/4 cup pure maple syrup * 1/4 cup filtered water * 1/4 cup liquid coconut oil (40g) * 2 tsp pure vanilla extract * 1/2 tsp baking powder * 1/4 cup semi-sweet chocolate chips * 1/4 cup unsweetened shredded coconut * Extra shredded coconut for topping Instructions: Preheat oven to 350 F. Grease an 8x8 inch pan with with coconut oil. Combine all ingredients except chocolate chips in a good food processor, and blend until completely smooth. Stir in the chips and coconut flakes, then pour into pan. Sprinkle extra shredded coconut flakes over the top. Cook for 18 minutes, then let cool at least 10 minutes before trying to cut. Normally, nothing makes me happier than waking up on Saturday morning and getting a fresh Sourdough loaf from the bakery. But too much gluten can definitely start wreaking havoc on my digestive system. And unfortunately, I find that eating eggs on their own just doesn’t do it for me - I still need some sort of carb to balance my meal a bit. Introducing zucchini nests! Just spiralize some zucchini noodles and sauté on a pan with some olive/avocado oil; make a nest and crack an egg in. This meal won’t spike your blood sugar and is keto friendly. A favourite among low-carb eaters, zucchini’s are high in water, low on the glycemic index and contain significant amount of fibre and antioxidants. Oh, and I just discovered Kimchi sriracha (by @wildbrine - it’s double fermented!) and will most definitely be putting that sh!t on everything 🔥 #holisticnutrition #RHN

DUTCH BABY Pancake! Guys, these pictures kinda suck but this pancake is AMAZING!!! It was easy and delicious and perfect for a cold winter morning. Plus it's only 4 ingredients!!! 🤤🤤 . . Preheat a cast iron pan in the oven at 450. My pan was 10". . . In a blender, mix 3 large eggs, 2/3 cup of milk (I used almond), 2/3 cup flour (I used whole wheat, unbleached all purpose) and 1 tsp of vanilla. . . Once the pan is heated, remove it from oven and melt 4 tbsp of butter. Yes that's a lot of butter but it coats the pan so nothing sticks and makes the pancake puff. Swirl around the butter and then add the batter mix. Put the pan back in the oven and bake for 15-18 mins. . . It will puff up into a glorious pancake that you can fill with whatever toppings you like! I warmed up blackberries and Goji berries from my freezer. Would be great with roasted apples, or any fresh fruit! I wouldn't walk away from it if it had chocolate chips either. 😏 This makes a light breakfast for 2 people or a heavy meal for 1.

The dish below combines both 🙌🏼 ••••••••••••• Comforting Lentil Bolognese with Zucchini Noodles from their latest issue! We love simple ingredient swaps to refresh and boost the nutrient value of classic favourite dishes! Check out the newest issue for all the details of this recipe! ••••••••••••• Comforting Lentil Bolognese with Zucchini Noodles Serves: 4 Ingredients: 1 cup red lentils, strained and washed 2 cups water 1 tsp extra-virgin olive oil ½ onion, chopped 2 cloves garlic, minced 1 cup mushrooms, sliced 1 tsp pink salt 700 mL jar salt-free marinara sauce ¼ cup organic vegetable broth 8 organic zucchinis, spiralized Nutritional yeast (1 tsp per serving) 2 tbsp parsley, chopped Directions: 1. Bring red lentils and water to a boil, then reduce to a simmer for 5 minutes. Strain lentils to remove excess water and set aside. 2. In a large pot, add olive oil, garlic and onion. Stir until fragrant, about 5 minutes. Then add mushrooms and salt. After 2 minutes, add marinara and vegetable broth. Bring to a simmer for 15 minutes. Fold in lentils for about 2 minutes and remove from heat. 3. Add zucchini noodles to bowls and place lentil Bolognese over top. Handsome ROOSTER ALERT! Meet Junior. He's a Barred Plymouth Rock and is approx 3 years old.😍 Junior is the head rooster of my flock and the hen's own hero. He has alerted and saved them from numerous Hawk and Eagle attacks and various other flying objects (dog frisbees, not UFO's people!). He is attentive to his harem of hens but not aggressive towards people, so he's a delight to have. Good roosters are invaluable to a free range flock! They're always on alert for predators and will defend their ladies to the death. A lot of people get rid of boys but I do my best to re-home any I've hatched. They're more colourful than hens and have big personalities so they are beautiful, strong and hilarious to watch. Hustle in my RMT program, and take time for self care. . . Say no to the things I don’t want to do - and stop feeling as if I have to explain myself. . . Stop apologizing! Replace things like “I’m sorry I’m late” with “thank you for waiting for me”. . . On my hardest days, I’d remember that this too shall pass. . . I love that a simple recipe can spark conversations & the sharing of memories about Grandmothers making the same snack (with far greater amounts of sugar). Food can be powerful in the way that the sight or smell of a dish can transport us through time. But that should be the extent of foods power. It alone should not create joy, nor shame, as food is simply fuel. However, watching your child make his Great-Grandma's recipe* sure is something to be happy & proud of! *modified to swap out refined sugar for real maple syrup & added copious amounts of cinnamon... which she most definitely would have said is wrong haha😉

The Keto Chicken Cacciatore from #ketoquickstart is 🔥🙌🏻🔥 !! Who knew that onions, tomatoes, balsamic vinegar, oregano and pesto could be so freaking good! This recipe will be making it's way into the monthly rotation for sure. . I'm tugging through day 11 of this keto experiment...not breezing with flying colors but not dying either. This is usually the time in the 21DSD when things get hard (for any number of reasons) and I know that everything will get easier moving forward. . This is the first time EVER that I have counted anything in terms of food - it's never been my style or something I thought was necessary for me personally. Diane has made it really easy to track macros with the Daily Tracker Sheets, it's like playing bingo or tetris. I'm still working to find a balance with it. Some days I eat "too many" carbs, other days I'm over zulus with fat, but almost every day I'm way off the mark on protein (like not enough!). So, I'm giving myself grace, learning, & enjoying the process. . . Made another batch of sushi tonight, this time using sprouted brown rice (check out 📽 to right for how I made it). The sprouting process makes the grain easier to digest and makes nutrients more easily available to the body. ⠀ ⠀ Brown rice is a great “whole grain” and contains protein, fiber, B vitamins to support the nervous system, magnesium and many other nutrients. ⠀ ⠀ Did you know that many grains are refined meaning they’ve milled removing the hull, bran and germ which are nutrition super-houses. Here are 9 LOADED facts that you probably don’t know about me: (1) I had two back-to-back pregnancies on purpose, had my first—my son—when I was still in school and I was back in class the following week after giving birth. (2) when I started driving I a.didn’t have my license yet and b.paid 56 cents/Ltr for gas!! I used to switch the plates from my sister’s car to mine....so really, no insurance either! (3) i grew up with encyclopedias. no internet and the attachable message tape machines were the closest thing to cell phones until I was a teenager. I LOVE that!! What a blessing!! (4) Last year I became the CAHN-PRO Board Director for British Columbia (Canadian Association of Holistic Nutrition Professionals). (5) I am careful to separate work from mom life. I put all my daycare and school district work experience to use and we cook daily, make toys, do sensory play etc. (6) I lose my shit at times. Legit. I get overworked, overwhelmed, and just have to clean & declutter or chill in front of the tv...with goodies! Guilty but not sorry! (7) I was “bullied” (said the staff) in nutrition school—short term. It occurred in class, online, as well as through many unprompted personal texts to my phone and the school waved their fees, transferred my courses, continuously checked in on me, and I didn’t go to my graduation because of it. To this day,although I’ve been asked, I haven’t named her and I’ve personally experienced herd mentality in this case. (8) you might’ve seen me —the Nutritionist—in McDonald’s but only because I’m a sucker for that dang play place on a rainy day! If I have the vehicle I no-doubt choose the circus play cafe to go hangout with some fellow mamas and kids! (9) I am old-fashioned kind of loyal. Suffering from arthritis or chronic joint pain? Nightshade vegetables are part of the Solanaceae plant family and include potatoes, tomatoes, eggplant, peppers, okra, cayenne, paprika, goji berries. Lets talk vitamin B12 💃🏻 B12 is an important vitamin for energy production, iron utilization, Red blood cell formation (anemia prevention) and studies suggest it may even improve mood and lessen depression symptoms. Vitamin B12 is mainly found in animal products, yeast products (brewers yeast and nutritional yeast) and can be created by the bacteria in our gut. I think whenever you set a goal or intention and it comes to fruition it should always be celebrated. My oldest son asked me to teach him to read over a year ago. We worked on a pre reading course and yesterday he just completed his level one reading. As a very new to homeschooling mom, I worried if I would be able to teach someone else to read but this kid was determined to learn and I loved sharing his joy when he completed an intention he set for himself. The idea that food doesn't affect our health blows my mind...what happens to plants if we neglect them from sunlight ☀, clean water 💧, and oxygen 🌬? Without these essential elementals that plant will likely not survive. 💀🌻 The same concept should be practiced with humans and food. Well, I mean it's common sense...if you eat crap food your cells will turn to crap...so why isn't this concept of "you are what you eat" taken more seriously? We are very similar to plants. (Well not really but go with my analogy for a minute). 😋🌿 We need sunlight ☀(positive energy/thoughts) Clean water 💧(hydration) Oxygen 🌬 (stress reduction/breathing) to function and to maintain health. 🔸🔸🔸Unresolved inflammation stresses the immune system and lowers the body's ability to reduce allergic reactions and autoimmune diseases. This inflammation can be anything...that's why it's so important to address stress, remove toxic energy from your life, toxic food, toxic thoughts, toxic physical energy (overdoing it at the gym). Our immune system is so overwhelmed today with a surplus of chemicals, it's impossible to maintain ones health, let alone chronic health conditions. 😷 So next time you are stuck choosing between fresh and natural food or a fast and easy food substitute, just remember how much your body, mind, and spirit will be affected. 🌱 Choose happy and healthy food.
