I know it’s not a healthy lunch but it was delicious. So I went to Parkway Plaza in El Cajon for lunch. What caught my eye was the White Pie. It is the one with spinach and ricotta cheese, it has garlic sauce and Parmesan cheese. Either way it was delicious and it went well together highly recommend it. [ pie for Di ] ... my love @paddythesnake had our first guest (read: guinea pig) over to try our 3rd batch of homemade wood-fired neapolitan pizzas made in our @uunihq Uuni (now “Ooni”) Pro wood fire 🔥 oven ... the amazing Diana Chao @dizzodin , a @wearefamilyfdtn Global Teen Leader (GTL) doing incredible work in the realm of mental health awareness and support, graced us with her presence, humor and expanded our musical horizons (K-Indie, whaaa?! lol) ... happy I got to feed her right before she heads out on a paleontology expedition to a dinosaur dig in Utah (is there anything this human doesn’t do??) ... in addition to the classic margherita pizza, tried a couple new things ... one with sausage (made by our fave local mom n pop Italian deli/market @romamarket ), peppers and red onion ... and our first pizza bianca (white pizza) - no sauce, only some mozzarella, fresh ricotta, touch of fresh garlic, fresh basil 🌿, olive oil and bedazzled with red chili flakes ... Et voilà...la colazione è un atto dovuto ed io, con profondo senso del dovere, non sgarro mai! 😍oggi sono in vena e scriverò di seguito la ricetta del mio serpentone: 2 uova 130g di ricotta vaccina 125g zucchero 90g olio 320g farina (circa) 1 bicchierino di anisetta Meletti Scorza grattugiata di almeno mezzo 🍋 limone Mezza bustina di lievito vanigliato 1 pizzico di sale. Passare al setaccio la ricotta e aggiungere zucchero,uova,olio,anisetta, zeste, lievito. Mescolare bene tutto e unire sale e farina qb. L’impasto deve avere la consistenza della pasta frolla. Strappare un foglio di carta da forno e infarinarlo. Stendervi l’impasto,formando un rettangolo. Al centro del rettangolo versare una striscia di farcia (confettura di frutta con cioccolata o altro a piacere). Chiudere a portafoglio e trasferire su una teglia rettangolare. Dare la forma a “S”, spennellare con latte e cospargere di zucchero, cedette e zucchero a granella. Infornare a 200^ circa fino a doratura.
