One thing I have learnt about blogging over the past year and a half is the need to plan ahead. I am currently on the train home after a long weekend away with some of my best friends and because of the holiday, I was unable to spend the time cooking and preparing a post. Luckily, as this trip to Wales was planned in advance, I had a chance to cook for this week's post well before I needed to post it.
The recipe this week is my first recipe for roast meat and showcases one of my flavourings.
Garlic is one of those ingredients that I use in almost every (savoury) recipe. This week's blog post is a recipe for chicken with 40 cloves of garlic. It is used in a marinade and also rosted as whole cloves to give this dish an incredible flavour.

Been off here for a while because to tell you the truth I've not cooked a thing all week on holiday and had some brilliant time with my family. I've found myself much happier in the last week, able to get about more (always find it easier when I'm with my wife and the kids) and dare I say it, had a few less sleepless nights and panic attacks, although true to form, had a really big one last night when we'd been home a few hours. So what's made things better? Being alone with the family? Being away? Tablets becoming more settled? Fresh air and exercise? If I'm honest, its probably a bit of all that and more that I'm not realising. The hard work now is maintaining that now I'm home and finding the right formula... so back to cooking, walking the dog and working on a daily routine and then hopefully back to work. Feeling much more positive about things, life and the future lately, long may it continue! • SLOW COOKED LAMB DINNER •
Now, I genuinely think I’m lost for words. This meal, no exaggeration, was ABSOLUTELY AMAZING!
I have a soft spot for lamb, and it’s my first time slow cooking a lamb leg. It most definitely won’t be my last.
The meat just fell straight off the bone, it was tasty juicy and delicious.
