This week I purchased Turtle Creek Gardens organic root vegetables grown in Delavan, Wisconsin - 5lbs. for $6.99 - @good_harvest_market.
I mixed peeled and chopped carrots, potatoes, beets, turnips and celeriac with olive oil and Penzey's fox point spice; roasting them for 20 minutes. I served them over rice for a vegetarian dinner. Now if only I could find a local source for Wisconsin wild rice.

Isn’t super pretty but it tastes damn good for having no time to cook today! Lemon and herb marinated pork, roasted beets with orange and thyme, and roasted mini potatoes.
2 week cleanse before christmas
A busy weekend didn’t keep me from my Sunday salad prep! I had so much fun playing with different textures and colors: roasted beets and sweet potatoes, blanched snow peas, sauerkraut, jewel-colored watermelon radishes, peppery arugula, crunchy pistachios, and seared chicken breast topped with an especially dilly homemade buttermilk ranch dressing. The perfect antidote to heavy holiday foods!
Roasted Beets with Cashew Horseradish Ricotta
Beets are great for the kidneys and the liver, they calm the spirit (we can all use a little #namaste
and they nourish the blood, there is a reason for their red color-aha!). Horseradish is also good for the kidneys. Both are roots and grow underground, which means they are yin (downward/inward energy) which is good for the winter season and kidney/bladder health. We go inward, we need more rest. The kidneys are our root/foundation organ.
SICK ROASTED BEETS
1 bunch of beets (3 or 4), large dice. (Save greens to saute later...unless you're prone to kidney stones, they're high in oxalate. We'll talk more about that later)
Olive oil, salt, pepper
CASHEW HORSERADISH RICOTTA
1 1/2 cups cashews, soaked 6-8 hours
1/4 cup grated horseradish (fresh or jarred, you choose!)
1 clove garlic
1 tbsp nutritional yeast
Juice of half lemon
1/4 cup water
Preheat oven to 400 degrees F
Line large baking sheet with parchment paper
Combine beets with olive oil, salt, pepper and coat thouroughly
Spread out on the baking sheet
Roast for 25 minutes or until fork tender
While the funky beets are roasting, place all ingredients for the cashew ricotta into a blender (#vitamix
all day). Combine until smooth and blended.
