This was my lunch today, I almost always do a big salad. This one had bok choy, tomatoes, avocado and cucumber. Dressing: orange, walnuts, apple cider vinegar, Himalayan salt. Sooo yum!!!

Steamed Sweet Potato with Tahini, Coleslaw tossed in Honey-Mustard Vinaigrette, Tumeric Chickpeas and Rocket Salad.
My fave part of this bowl? The Tahini, which is a sesame seed paste that is used in making hummus.
Tahini is a versatile condiment that not only adds amazing flavour to food, but is also paaacked with nutritional benefits. It has polyunsaturated fats which promote healthy cholesterol levels , support heart health as well as aid cell regeneration. Sesame seeds are also said to be the best plant source of calcium, amongst the many minerals they have. All important for your muscles, nerves and bone health. The list goes on and on, all I'm saying is- if you can, get yourself some tahini😁
The dressing I used is made up of honey, wholegrain mustard, apple cider vinegar, and salt and pepper to taste (simple but delicious). The salad bowl is vegetarian friendly, and can be made vegan by replacing the honey with maple syrup (although this will change the flavour profile slightly). Enjoy and remember to spread love❤
