SMOKED SALMON SALAD
2 x 240g smoked salmon fillets
120g bistro salad
2 tbsp fresh mint leaves, roughly chopped
3 spring onions, sliced, to serve
FOR THE DRESSING:
100g low-fat Greek yogurt
½ lemon, juiced
2 tbsp fresh dill
1. Preheat the oven to 200°C/fan 180°C/gas mark 6. Put the salmon fillets on a baking tray and cook according to the instructions on the packet.
2. Meanwhile, peel the cucumber into long thin strips using a vegetable peeler, and discard the watery core. Slice the radishes into rounds.
3. Combine the yogurt, lemon juice and dill with a little seasoning. Toss together the salad leaves, cucumber, radishes and mint leaves with almost all the dressing. Transfer to a large serving platter. Flake the salmon on top and add the remaining dressing and spring onions.

Where did the time go today?! It’s already 5:30 and I’m just now eating lunch....😅 Probably has to do with all the homework I’ve been buried in for the past week, but my hard work is finally going to pay off in about two weeks🙌🏽🙌🏽🙌🏽 I’m making sure to get my greens in today, with a simple salad from the dining hall, along with an egg white sandwich and some grapes! Also completely forgot it was Earth Day and I’m using a paper plate 😓 I’m working on being more green, and I especially plan on being more conscious once I leave my college dorm and move back home then into my own apartment! If anyone has any tips, please share😊🌎 Happy Earth Day and happy Sunday 🌻

Here's the recipe:
2 cups cooked Quinoa
1/2 cup shredded Chinese Cabbage
1 cup shredded Carrots
1/2 cup shredded Red Cabbage
1/2 cup sliced Baby Corn
1 large Mango, cubed
1/2 cup diced Pineapple
1/2 cup packed Basil leaves, torn roughly
1/2 cup packed Mint leaves, torn roughly
1/2 cup roasted Peanuts
For the dressing
1 teaspoon Sambal Oelek
2 tablespoons Soy Sauce
3 tablespoons Honey
1/2 teaspoon minced Ginger
2 tablespoons Rice Vinegar
1/4 cup Olive Oil
Salt to taste
Whisk together all the ingredients for the dressing and set aside. Alternatively you can add the ingredients to a jar and shake till combined.
Place all the ingredients for the salad in a large bowl, pour over the dressing and mix to combine. The salad can be stored along with the dressing for up to four hours in the fridge. Or you can add the dressing just before serving if you like your salad extra crunchy.
