Timbale of shucked corn, watercress, and roasted bell peppers. The first time I made this it was for a 7 course vegetarian "we're not celebrating Christmas" dinner for my Hindu-vegetarian father. By the time we got to this course, after the salad, soup, and homemade gnocchi, he was too stuffed to enjoy this. I just love how festive it looks, on top of being delicious with a smooth custard texture. Each layer is processed with heavy cream, egg yolks, parmasan cheese, and a touch of unripened goats cheese, and baked in the oven at low heat, in a water bath. Very simple, uncomplicated flavours, but unless you're a nutcase like me, I would recommend trying this with one vegetable only. You need to wash and reuse the magic bullet or food processor several times to prep this dish. My puny kitchen, the size of a toy poodle who thinks it's a Great Dane, was a mega mess. The original recipe was okay, but being ever the tinkerer, I've adjusted the recipe to my own taste by adding the cheeses and increasing the amount of yolk. I served this up with awesome Ace Bakery olive ciabata bread, and bib lettuce salad with a balsamic, black current maple dressing . . . Timbale is the mold that this dish is made in. I got mine in Paris, many years ago, along with a boat load of other serious cookware. Making this dish took me back to a wonderful moment in my life. I felt like the brown sugar version of Ina Garten, sans Jeffrey. The salesperson at #edehillerinparis was vivacious, not at all pushy and practical. If it wasn't for him I would have come back to Toronto with a maxed out credit card. 9. Savory Custard (Quiche) - Quiches are always really daunting, but I find that you make the dough and line your pan the day before, it's a lot easier. Harold McGee calls for a 2 eggs per cup of milk/cream/both ratio for the savory custard. Thomas Keller says to aerate it via blender or hand blender. I did both and my quiche turned out pretty nice. Bake the crust prior to the custard, let it cool, add any goodies your want in layers alternating custard with goodies and bake at 325F.
