My favourite place for oysters in Vancouver 🐚🐚🐚
I decided to go for a medley. Counter clockwise, from 6 o'clock: Nanoose Bays, from eastern Vancouver Island, a single oyster whose name I forgot to note, beautiful Pink Pearls from pristine Quadra Island, precious Kushis also from Deep Bay, and a pair of Stellar Bays from Deep Bay in eastern Vancouver Island.
The Nanoose Bays from the east side of Vancouver Island were super creamy and on the briny side for a pacific, and with a seaweed start and shiitake finish; the unknown singley had a very crunchy rim, strong muscles to chew, and a soft creamy belly, with a light sweetness and refreshing cucumber. The Pink Pearl had a super thick shell and was crunchier, like geoduck siphon used for sashimi, and was all creamy, umami, and sweetness. The little kushis disintegrated and tasted a bit cheesey, not much sea, not sweet and not briney, and just a bit bitter. The last pair of Stellar Bays were so good. They had a strong sea start, classic west coast watery chew, creamy in the body, but with a fine zesty finish. Anyway, I think next time I will wait until after summer to pick up the more delicate flavours of these guys and just stick to the specials for now.
