I ran across a recipe in my daily nutrition newspaper that inspired this creation!
🌱It’s super simple, just combine 2 cups mixed greens, 1/2 cup wild rice (cooked in water, no salt added), 1/2 chopped honey crisp apple, 2 heaping tablespoons of toasted pecans (toasted in @miyokos_kitchen
butter in 300 degrees for 15-20 min flipping halfway through and checking for fineness along the way) and 2-3 T apple cider vinegar dressing
🌱For the dressing: combine 1 minced garlic clove, 1/2 T Dijon, 3 T apple cider vinegar, 1 T maple syrup, 3 T avocado oil, 1/8 t black pepper - this makes about 1/4 c (4 T) dressing so adjust as needed! 🌱For meal prep purposes: cook the rice, toast the almonds and whisk the dressing at the beginning of the week. Create your salad the night before or morning of. Boost nutrition by adding your favorite protein like 1/2 cup chickpeas or tempeh.
