In Japan, fish have different names depending on the stage of their life. These fish are known as Shusse-Uo or ‘successive fish’. The most common Shusse-Uo is the yellowtail. When the yellowtail is a juvenile it's called Wakashi, a very young yellowtail is Inada, a teenager yellowtail is Warasa, and at maturity it's called Buri. The stages are signified by the different fat contents and flavors. A mature yellowtail has more aged flavor and fat content, which many prefer in sushi!

The historic Tsukiji Fish Market in Tokyo has closed and moved to a new location in Toyosu. For over 80 years the Tsukiji Fish Market in Japan served as a tourist destination and international marketplace for many, including Shiro’s. Originally opening in 1935, the famed fish market has housed more than 900 vendors who have sold over 3,100 tons of fruit, veggies and fish.
We have a long history of buying from the fish market and we’re saddened to see the historic market close but are excitied to buy fish from the new Toyosu Fish Market!

Only managed to get a table at 8pm on a Sunday night but the food was definitely worth the wait! Chestnut and butter scotch creek brûlée is a surprise! Wishing I order chirashi instead of wagyu beef skirt konabe though.

Neah Bay black cod bellies plus anago (saltwater eel), both more sustainable alternatives to fresh water eel. Both part of an incredible dinner at Sushi Kappo Tamura where we found sustainable seafood as well as a number of non-mainstream species (my inner seafood geek was very happy). I’ve never tried these before and... mind blown.
