Sesame Coconut Rice
Preparation Time: 25 minutes
Servings Per Recipe: 6
1 Tablespoon Dynasty Toasted Sesame Oil
1 ½ cups Dynasty Jasmine Rice
1 ¾ cups water
½ cup Dynasty coconut milk
1 pinch kosher salt
1 Tablespoon Dynasty Black Sesame Seeds
1 Tablespoon Dynasty Toasted Sesame Seeds
1 Tablespoon sliced chives or scallions, for garnish
Fried egg, optional
In a medium saucepan with a tight fitting lid, warm the sesame oil and add the rice toasting until lightly fragrant, about one minute.
Add water, coconut milk and pinch of salt. Bring to a boil and then reduce to a simmer. Add lid to the pan and cook for 15 minutes, or until the liquids are absorbed. Fluff with a fork and replace lid. Let the rice sit for five minutes, then add the sesame seeds and fluff again. Serve and garnish. Add a fried or poached egg if desired.
