January is off to a flying start food-wise and the lunch this week at @olacocinadelmar
with chefs Virgilio Martinez and Pia Leon is a massive highlight. Few visiting chefs seem to be able to stitch a seamless experience between their food and the hosting restaurant, where the ingredients look like they’re meant to sit on that plate and in that particular space.
That’s no small feat given that these ingredients are sourced from across Peru’s incredibly diverse topography. My favourite that day? A dish named Coastal Foothills where oca, an Andean staple has been dug out one side of the planet, catapulted to Singapore and put through the technical paces into this masterpiece. There it sat on my plate to shatter as a cracker, along with tumbo which tasted very much like passion fruit and a cheese-like emulsion of lupinus.
Peruvian chefs who use native ingredients have played a massive role in rehabilitating what was once a war-torn nation. A while back, I interviewed chef Virgilio on the impact of what they do, and it wasn’t just about providing jobs in restaurants. It’s about working with farmers and producers and everyone else along the supply chain. As Peru’s gastronomic greats rose on the world stage, so too did the ordinary folk. In fact, The Financial Times reported that some 5.5 million Peruvians benefit directly or indirectly from the industry. Therein lies the magic of food; a bite is often a microcosm of the country’s economic health. And on that note, here’s hoping 2019 will be as enlightening and soulful as this meal.

One does not have dim sum without having egg tarts. At Kai Garden their Mini Egg Tarts came in threes and took the longest to be served.
For $4.80, they were adimittedly pretty costly. But boy would I pay another $4.80 to have them again. For these egg tarts were simply succulent.
One does not usually associate the adjective 'succulent' with egg tarts but the core of these egg tarts, the egg yolk, was extremely soft and silky smooth. It had a custard-like texture which resembled that of Lao Ban beancurd; it was so wobbly and watery that I could slurp it like I was drinking tea from a cup.
The crust complemented the egg yolk nicely. It did not overpower the yolk, which is important to me, and had a flaky, puffy and aerated texture. Save the best for last they did.

which hails from Hokkaido! We can’t BEAR to drink this 🐼🐼, all thanks to the awesome award winning barista!
This is also the brand’s first overseas outlet, at Tras Street in Tanjong Pagar. Expect a cosy space with natural light and bits of lushness, while the food menu leans towards a mix of savoury and sweet treats. We will be back!

This elusive Dum Biryani is unlike any of the usual varieties normally seen at your local prata/Northern Indian establishments.
With the fluffiest rice cooked fragrantly in the most aromatic of spices, you know you’ve found home - And today, the chicken derivative is tenderly flavored over its accompanying masala paste to perfection.
The local variety permits the excessive dousing of curry over its rice, but true to the origins of actual dum biryani, and for this version, there is no curry gravy thrown in the mix. Instead, a dum biryani must focus around the core key elements that makes it great - its fluffy rice, and its subtle (or non) hints of flavour surrounding its meat which takes precedence in flavouring each spoonful of rice - GlobalMatSoul Chef Zahid gets this right.
A pro tip would be to reheat this biryani the day after via steaming — where extra absorption of the meat’s juices are thrown into every morsel of rice.
