chain has opened in Singapore!
Mazesoba what? For the uninitiated, mazesoba, meaning 'mixed noodles', is a dry #ramen
that comes with a variety of toppings and sauces. When given a good mix with the noodles, the ingredients combine to lend a complex but lip-smacking flavour.
The Tokyo Maze-Soba ($10.80 for regular, $12.80 for large) is the original way to experience this.
According to Danielfooddiary.com, the noodles here are made with "fibrous whole-wheat flour and purified water", resulting in a softer texture. But they are also pretty thick and filling (leaner than udon, but fatter than ramen), requiring precisely "8 mins 40 secs" of cooking time.
Among the ingredients: savoury Japanese slow-cooked minced pork, seaweed, chopped vegetables and a beautiful poached egg. They are spicy enough on their own, but you can add chilli powder for more punch as well.

Sichuan-European fusion dishes at Paragon. // When the service is better than the food, it makes me really sheepish to give a less-than-perfect review. I pointed out to their manager that online reviews by prominent food bloggers did not state that their big breakfast was only available till 11.30am, with a good intention of preventing more disappointed patrons who travelled down. I ended up ordering their Sichuan-inspired pancakes with pork ragout filling and sautéed potatoes which were part of the original big breakfast - which comes with Sichuan sausages, bacon, sunny-side up , sautéed mushrooms and salad and was more substantial. He was really apologetic and offered to make me a big breakfast for free even though they don’t serve it for lunch. I turned it down because it wasn’t their fault since the bloggers were not hosted by them. I was also full and didn’t want to over-eat. Very commendable good service though! 👍🏻 Thank you, Vincent.
