🇵🇹Duas palavras: pizza vegan! Depois da sugestão de utensílio há uns dias, a receita para os cogumelos cortados: esta pizza deliciosa!
1️⃣ Comece por preparar a massa para a base da pizza. Dissolva uma embalagem de fermento de padeiro numa caneca de água morna. Adicione 500g de farinha, duas colheres de sopa de azeite e sal a gosto (nós usamos uma colher de chá). Amasse bem e, se necessário, adicione mais farinha para a massa desprender. Depois, deixe repousar 5 minutos.
2️⃣ Divida a massa e estique bem com o rolo da massa. As formas de pizza @grilokitchenware
estão disponíveis em dois tamanhos: 30cm e 34cm.
3️⃣ Agora é a parte do molhos: recomendamos o delicioso molho de tomate caseiro que partilhamos há umas semanas (que pode facilmente encontrar no nosso perfil).
4️⃣ Antes do forno, só faltam os toppings! Para manter esta receita vegan, usamos uma alternativa ao queijo mozzarella e deliciosos cogumelos frescos. Temperamos com orégãos por cima.
5️⃣ Coloque no forno pré-aquecido a 220ºC, e deixe cozinhar durante 12 minutos.
6️⃣ O último passo é apenas cortar a pizza e deliciar-se com o seu sabor!

Maple glazed tofu + brussel sprouts ✌️
I’ve seen no less than 3 posts on brussel sprouts today, so obviously I had to 😏
This was so delicious (I’m actually still dreaming about this days later) and insanely easy to make. Slice clean brussel sprouts lengthwise in half, and sauté in ~1 Tbsp olive oil over medium high heat until nice + golden brown (about 10-12 minutes). If using already prepared tofu, add cubed pieces along with maple syrup (2-3 Tbsp) to pan and cook over low- medium heat for about 5 minutes. Add salt + pepper to taste during this time. I also love adding a pinch of chili flakes!
So good, so simple and would make a fun + quirky side dish to your 🦃 day celebrations! Happy Tuesday 😘
I love a G&T but sometimes it’s nice to mix things up - quite literally - so I made a bottle of pear and rosemary juice and it’s great over ice with soda (and gin if it’s been one of those days!). I don’t know about you but in my family Thanksgiving is an all day thing. We cook, play (the boys always have some sort of competition going on, you know boys!) Snack, until the turkey is ready. So I usually build a snack board that’s good enough to hold us till dinner time. Roasted sage Butternut squash in a cheese heaven makes for an incredible snack. It’s a play off spinach and artichoke dip just dressed for thanksgiving. Serve it with crackers, crudités, fruits and nuts and you are ready to party. INGREDIENTS ▪ 3 Tablespoons Butter ▪ 3 Garlic cloves, Minced ▪ 1 medium butternut squash peeled and diced, seeds removed and roasted ▪ Salt And Pepper, to taste
* few sprigs of fresh sage * Few grates of fresh nutmeg * 1/2 tsp sage powder ▪ 3 Tablespoons Flour ▪ 1-1/2 cup Whole Milk (more If Needed) ▪ 1 package (8 Ounce) Room temperature Cream Cheese ▪ 1/2 cup Grated Parmesan ▪ 1 cup Grated Monterey Jack Cheese it pepper jack ▪ 1/2 teaspoon Sriracha (optional) ** roasting butternut squash:
1. Pre-heat oven to 375 degrees.
2. Peel, gut out the seeds and cut the squash into cubes. Place cubes on large baking sheet lined with parchment paper.
3. Drizzle olive oil, add salt and pepper and toss to combine so that all squash cubes are evenly coated.
5. Bake in oven for 35-45 minutes until tender and golden brown.
How to make the dip:
Melt 3 tablespoons of butter and whisk in 3 tablespoons of flour until it makes a paste. Cook over medium-low heat for a minute or two, then pour in milk, whisk so it doesn’t clump. Add the garlic and sage powder and leaves. Stir and cook until slightly thickened; splash in more milk if needed.
Add softened cream cheese, Parmesan, Monterey jack, and Srirach and stir until cheeses are melted and sauce is smooth. Add the roasted butternut squash. Stir to combine. With a potato masher slightly mash the butternut squash into the cream sauce, it will give a beautiful orangy hue.
Pour mixture into a buttered baking dish. Top with extra grated cheese and bake at 375 for 15 min until bubbly
In the afternoon I quite often feel the need to have a sweet snack 😋.

Taking inspiration from the Malay stall near my workplace, I made a Malaysian-style Gulai Ayam. There’s no doubt that Gulai Ayam, a slightly thin coconut milk based curry, is from Indonesia. However, there are varied interpretations of it across the Indonesian archipelago and this version is more commonly found in West Malaysia and perhaps even in Sumatra. Having come into contact with Indian traders earlier, the food of these regions have adapted the curries to include more earthy spices such as cassia (‘cinnamon’) and cardamom. No country owns the exclusive rights to any dish as every cuisine has been influenced by trade and contact with others over centuries. I love all the variations of gulai ayam and this dish is no exception. The freshly ground lemongrass, turmeric, ginger, garlic and rehydrated dried chillies form the backbone of this dish and the coconut milk brings everything together with its naturally creamy and floral notes. This curry pairs so well with roti jala and nasi kuning (turmeric rice) because of its subtle fragrance and earthiness from cassia, cardamom and curry leaves. Today, we scooped a generous portion of the gravy over plain jasmine rice and savoured it with a sweet potato leaf stir-fry. And I cannot wait for tomorrow as the leftovers will be even more delectable! .

Thanksgiving has snuck up on me and I’m shockingly calm despite. I am planning a Friendsgiving after the feast so I’ve been playing with some ideas. In my opinion thanksgiving is about the sides. The bird is the bird. Somehow equals parts complex and stupidly simply but if it’s not accompanied (or saved) by great sides dinner flops. So a freebie sweet potato dish is wildly simple and also a departure from candied yams.
Roast sweet potatoes whole at 350 about 30 minutes, should be partially cooked there should be a pinch of resistance when pierced with a fork, remove and allow to cool to the touch to peel skins and discard. Chop whatever amount of garlic makes you happy, sweat the garlic in a swirl of oil and place at the bottom of a roasting pan and slice and layer the sweet potatoes tightly on top. In the same garlicky pan add 2 tbsp butter and 2 tbsp brown sugar, stir into caramelized heaven and brush over the top of the sweet potatoes, pop back in the oven for another 30 minutes. You can continue to brush with sugar glaze until cooked through.
Voila. Super simple, sweet and savory garlicky goodness. A cousin to candied yams that lets the sweet potatoes shine.

Mediterranean Chickpea Salad⠀
1 can of chickpeas, drained and rinsed⠀
1 cucumber, quartered⠀
1/2 cup cherry tomatoes, cut in half⠀
1/2 cup black olives⠀
1 jar marinated artichoke hearts plus 3T of marinade from jar⠀
1/4 cup chopped parsley⠀
1/4 cup red onion, chopped⠀
Feta cheese (optional)⠀
Simply mix everything together, add a squeeze of fresh lemon, salt and pepper. Enjoy! 😎 ⠀
