Distilled in Ireland but matured in Campbeltown, Scotland... and this is why the name of the distillery can’t be named on the bottle. Though the kind people of Cadenhead’s can’t tell you the name of the distillery it came from, after tasting it I can certainly tell you that this is a “Cooley bomb”. I may be wrong but I suspect there might be an error in the labelling. It’s bottled at cask strength, but only 47.5% alcohol. Seems a very high amount of alcohol to be lost in only 12 years. The cask, a Bourbon Hogshead, yielded 324 bottles. A hogshead is usually 250 litres, so less than 10% evaporation. Somethings not adding up, but what is adding up is that this is a cracking dram.

A Speyside classic. You’ll never catch the name “Glenfarclas” on an independent bottle - so fiercely protective of its reputation for quality is the distillery. And you can see why!
Just had a wonderful meet up with a whisky buddy - enjoying many excellent drams. Importantly, our wives also enjoyed the session. We built bonds through nice snacks, great drams, as well as sharing stories and experiences. This dram was one of the highlights... life is good. 😊🥃
The Glendronach 1990/2018 27 Years Old, Pedro Ximenez Sherry Puncheon Cask 7003, bottle 163 of 617, ABV: 55.3%
Nose : Furniture polish, cherries, sourish sweet plums, then toffee, dates, prunes, and finally sweet caramel when left to breathe. Some cinnamon emerged subsequently. Less acetic with water but sweetness was maintained. Lovely!
Taste: Somewhat woody, sweetness, burnt toffee, loads of prunes, and stewed dark fruits. Tobacco and a tinge of dryness. Moderate mouthfeel but smooth. With water, prunes, dark fruits, and It was smooth with some light pepper.
Finish: Long and sweet. Prunes and dark fruits. A little fizzy on the tongue that turned slightly peppery at the finish. Mmmm... 😋

Tis the season of giving, and since a mate gifted me his unwanted and unopened bottle of Snow Phoenix, I thought I’d share it with you as part of my Advent Calendar here too. Since I’ve shared the story of the Snow Phoenix a few times, I’ll keep this brief
Born from a disastrous snow fall which caved in some Glenfiddich warehouse roofs back in 2010, and not knowing what such cold exposure to the elements might do to the casks, Brian Kinsman made a decision to lift the whisky from its fall and crafted the Snow Phoenix. As this was a one off, it’s sadly no more, unless you have mates that collect but don’t drink.

N- Aromatic mixed summer fruits and vanilla tart, spicy nutmeg and oak fragrant linger in the middle with chocolate underlay. Rich and evolving well to Demarara, dried ginger, dried fruits and various spices. Whiff of unoffensive wood shave, solvent and sulphur with leafy notes that blended well with the overall expression. Upfront, charming, vibrant and joyful, befitted the name brilliance. (89/22)
P- Full, balance of ripe fruit and spice with good abv at spine. Vanilla, maple, wood, liquorice candy comes is harmony. (87/21)
F- Medium, with long lasting toasted nuance rising gently. Creamy fine oak mouth coating that hold on well with frizzy cream soda and popping candy. (87/21)
Body/Balance- 92/23 A remarkable improvement compared to previous batches. Full and upfront, rounded without compromise. Just hard to pick fault at this one.

Tomatin Cù Bocan 1988 - peppery, spicy... OK-ness :/ .
Nose: Pepper, fennel, brine, lime.
Palate: Watery mouthfeel. Very light. Floral, with the pepperiness coming through at the end.
Finish: Spicy, peppery finish. That may sound like a harsh finish, but it’s actually quite a soft finish. All in all an interesting dram, although it starts of strong and goes downhill after the nose. Slainte!
🔥 El whisky de malta Laphroaig PX Cask ha sido envejecido en una fase inicial en barriles de roble americano, después pasó a barriles Quarter Cask y en el último proceso de maduración en barriles de Pedro Ximénez. El resultado es un Laphroaig con un carácter claramente dulce, en el que el ahumado característico sólo pasa a primer plano más tarde.
Nariz: Primeros aromas de Jerez dulce, de pasas de Corinto, regaliz y un poco de humo de turba. Luego aromas de mazapán, almendras y frutos secos cremosos como macadamia y un montón de fruta madura.
Boca: Sabor con una gran cantidad de humo de turba poderosa y tonos de madera enfáticos, bien equilibrado por los tonos de Jerez dulce y algo afrutado. El final es agradablemente seco con un perfecto equilibrio entre la turba y el Jerez.

Another week, another long overdue review. This one was tricky to review because when I first cracked the bottle (sent by the Distillery) I had a friend over and we drank and I neglected to do the review. Happened the next time as well. And so on. All of which is to say, the Woodinville Bourbon (abv 45%, $55) has made quite an impression on my friends.
I’m not sure it made the same on me, even though I liked it quite a bit. It’s a very young tasting bourbon and has a lovely brown sugar/pecan/spice/sawdust nose. The palate was less exciting for me. More brown sugar and pecans, along with a layer of vanilla, but I don’t know that it ever came together for me as a cohesive whole. I did like the oaky caramel finish, which may indicate that a bit more aging might refine this fella. Either way, this is a Distillery to watch and I’m absolutely looking forward to seeing what they do next.
