So I am right back on it now, my weight has gone up over the last couple of weeks with the ride etc, but I knew that was likely as I was taking on a lot more calories and way more carbs than usual, plus the protein bars are a killer for syns!!. Had a celebration dinner Saturday that was extremely off plan, and my journey home and curry buffet on Sunday didn't help either, but the last of the cakes and ice cream are gone so it's back to 100% food optimizing!
Lunch today was these stuffed pepper halves and mackerel fillets. The peppers were stuffed with a mix of bacon, tinned mackerel pieces, courgette, tomato, mushrooms, coriander, garlic and chilli. Trust me it may sound odd but it tasted amazing! The other halves will be with my steak for dinner when I get home later tonight!
I'm going to try and SP a bit this week, and hopefully get back in target before the end of June (yes, I'm quite a bit out!!). The great thing about Slimming World is it's so easy to get back on it again, and to be honest, I'm glad to be eating my own food again!!
